Ingredients:

  • fresh squid, fillet (500 g);
  • frozen shrimp (300 g);
  • red caviar (100-200 g);
  • potatoes (4 pcs.);
  • chicken egg (4 pcs.);
  • hard cheese (200 g);
  • lemon (1 pc.);
  • parsley (1 bunch);

Preparation:

  1. Boil the potatoes until tender (20-30 minutes after boiling), drain the water and cool.
  2. We boil the eggs hard-boiled (put them in cold water, add a pinch of salt or soda, so that the shell is easier to separate later, and cook after boiling for 8-10 minutes). Cool in cold water.
  3. Thoroughly rinse the squid fillet under running water and separate from the film. Meanwhile, put a pot of water on the fire and bring to a boil. Dip the fillet into boiling salted water. As soon as the boil resumes (after 1-1.5 minutes) and the meat turns white, take it out and cool it. It is important not to overexpose the shellfish in boiling water, otherwise the meat will turn out to be "rubbery".
  4. We take out the frozen shrimp from the package and put it in boiling salted water. Cook until tender (3-5 minutes after boiling again). You can add spices to your taste (dill, peppercorns, bay leaves, cloves, a part of lemon) to the water. Cool it down.
  5. Peel the cooled potatoes and three on a coarse grater.
  6. We clean the eggs and three on a grater.
  7. Cut the squid fillet into thin strips and sprinkle with lemon juice.
  8. Peel the shrimps and sprinkle lightly with lemon.
  9. Three cheese on a coarse grater.
  10. Wash the parsley, blot it with a napkin and divide it into twigs.
  11. Cut the remaining lemon into thin slices.
  12. In a deep bowl, mix potatoes, eggs, squid, shrimp and cheese. Add salt, pepper and other seasonings to taste. Season the salad with mayonnaise and mix.
  13. We spread the salad on portioned plates and sprinkle with red caviar. Decorate the dish with lemon slices and parsley sprigs.

  • mayonnaise (100 g);
  • drinking water, table vinegar, 9%, sugar (for marinade, 300 ml, 3 tbsp. l., 1 tbsp. l.);
  • salt, pepper and other spices (to taste).

Preparation:

  1. Peel and cut the red onion into rings. Prepare the marinade (mix water, vinegar and sugar) and pour over the onion. Leave on for 15-20 minutes.
  2. Cut the squid fillet into small cubes.
  3. Cut the salmon into small cubes.
  4. Remove the crab sticks from the packaging and cut into cubes.
  5. Set aside a few boiled shrimp to garnish. Peel the rest and cut into small pieces.
  6. Wash cucumbers and chop finely.
  7. Wash the dill and parsley, blot with a napkin and chop very finely. Divide into 2 parts.
  8. Peel the garlic and pass through a press. Mix in a separate container with sour cream, mayonnaise and half chopped herbs. Season to taste and mix thoroughly. The sauce is ready.
  9. Shake the cream cheese with a fork.
  10. Squeeze the onion from the marinade and finely chop (remove excess juice).
  11. Open a can of caviar.

  6. Wash the apples and peel them. Rub on a coarse grater, squeeze the juice. Sprinkle with lemon juice on top so that the apples do not darken.
  7. Wash the cucumber and rub it on a coarse grater.
  8. Wash the tomatoes and cut them into circles about 5 mm thick.
  9. We open the cans of caviar.
  10. In a deep bowl, combine squid, crab sticks, Chinese cabbage, eggs, potatoes, apples and cucumbers. Add salt, pepper and other seasonings to taste. Season with mayonnaise and mix gently with tongs so that the salad does not turn into porridge.
  11. On flat portioned plates we make a pattern from the Thousand Islands sauce (see photo). Lay out several circles of tomatoes on top - they will serve as a pillow for the salad.
  12. Put the salad on top of the tomatoes. Sprinkle the top of the salad with red caviar.

Preparation:

  1. Peel the onion, cut into cubes and fry in vegetable oil until transparent.
  2. Wash the champignons, dry them with a napkin and cut into slices. Add to the onion. Season to taste, stir and cook until the liquid evaporates completely. Fry mushrooms and onions until golden brown for another 5-10 minutes, stirring constantly. Cool it down.
  3. Cut the potatoes into slices.
  4. We clean the eggs, separate the whites from the yolks and grate them into different bowls.
  5. Set aside 2 crab sticks to decorate the dish (cut into large plates), cut the rest into small cubes.
  6. Drain the brine from the squid and cut them into small pieces.
  7. Drain the pineapple syrup and cut into small cubes.
  8. Wash dill and basil, dry with a napkin. Separate several large branches to decorate the dish. Everything else is finely chopped.
  9. Take a deep shape and start shaping the salad in layers. The first layer is mushrooms and onions. We make a mayonnaise mesh.
  10. The second layer is potato wedges. Season to taste and cover with mayonnaise.
  11. The third is crab sticks and grated protein. Lubricate with mayonnaise.
  12. The fourth layer is squid. Cover with mayonnaise.
  13. The fifth is pineapples. Sprinkle with chopped herbs. We make a mayonnaise mesh.
  14. The sixth layer is grated yolks.

  • tomato (2-3 pcs.);

  • basil / dill / parsley (1 bunch);

Preparation:

  1. Cut the squid fillet into small cubes.
  2. Cut the salmon fillet into small cubes.
  3. Drain the marinade from the olives and cut them into half rings.
  4. We clean the eggs and finely chop them.
  5. Wash the tomatoes, scald with boiling water and remove the peel. Cut them into small cubes with a sharp thin knife.
  6. In a deep plate, combine squid, salmon, olives, eggs and tomatoes. Pepper and salt to taste. Season the salad with mayonnaise and mix thoroughly until smooth.
  7. Chill the salad in the refrigerator for 30-40 minutes. Then we spread the mass into tartlets.
  8. Wash the basil, dry it with a napkin and divide it into leaves. Cover the salad tartlets with red caviar and decorate with basil leaves.
To prepare tartlets, we need: flour (300 g), chilled butter (150 g), yolks (2 pcs.), Water (2 tbsp. L), a pinch of salt, sugar (1 tbsp. L.), Vegetable oil ( 50 ml). Rub the butter on a coarse grater, add to the sifted flour and mix thoroughly. Whisk the yolks, salt and sugar until foam appears. Pour the mixture into flour and stir until a homogeneous dough is formed. Cover the dough with cling film and refrigerate for 30 minutes. Roll out the cooled dough thinly. Grease the baking dishes with butter, spread the dough and bake the tartlets in the oven for about 15-20 minutes at 180 ℃.

To prepare the salad, we need to cut all the products into strips. We start with an onion. Cut the onion into very thin strips and pickle it. To do this, add sugar to a bowl with onions, lightly add some salt, pour in about 3 tablespoons of 9% vinegar, add water so that the onion is completely covered and knead it well with your hand. While the onion is marinating, prepare the rest of the products.
Cut the squid into strips. Squids are boiled in advance and cooled.
