Preparation

    First of all, I peeled and cut the potatoes into small cubes. I washed it a couple of times to remove excess starch. I filled it with 2 liters of cold water and set it to cook. If you are preparing vegetable soup (that is, without cereals), then take 3 large potatoes, and if you plan to thicken, then, on the contrary, reduce the number to 2 tubers.

    While the potatoes are cooking, I peeled and cut the onions into small cubes, the carrots into quarters (you can grind them on a coarse grater). She heated vegetable oil in a frying pan and fried vegetables until soft and light brown, stirring occasionally. Pour oil quite a bit, because there is already enough fat in canned food. As soon as the potatoes boiled, I sent the vegetable fry to the pan. At this stage, you can slightly change the recipe and add additional ingredients to the soup - cereals, which will thicken it and make it more satisfying. Rice, millet or pearl barley will do (do not forget to soak the latter beforehand, otherwise it will cook for a long time).

    After about 15-20 minutes, when the vegetables are completely cooked, it's time to add canned fish to the soup. I put the contents of the jar with saury on a plate and mash it with a fork - not too hard, even if there are large pieces of fillet, the main thing here is to grind the ridges, which in general will not be very pleasant to feel in the soup.

    I sent the fish to the pot. If you don't want to knead the saury, you can add it whole to the soup, removing the ridges. I left a couple of slices intact for serving, so that later I would beautifully arrange them on the plates. Be sure to add oil from the jar, it is very fragrant. If you do not like too fatty, then you can pour in not all the oil, but only half.

    Only now can you add salt and pepper to taste, bay leaves for flavor. Let the saury soup simmer for 4-5 minutes over low heat.

    At the very end, I added fresh herbs, finely chopped with a knife. Dill, parsley and green onions are suitable, they all go well with fish, making the dish more aromatic and richer in taste. As soon as the broth boils again, you can remove the pan from the heat.

    Before serving saury soup, it is advisable to insist covered for 10-15 minutes. After him, you can call everyone to the table. Best served hot on the first day of cooking. May be served with croutons, onion crackers and fresh herbs. Bon Appetit!

In the summer heat, and not only, admirers of fish soups, as well as consumers of temporarily thrifty ones 🙂 will undoubtedly be interested in the recipe for an inexpensive, yet nourishing and healthy lean borscht with canned fish, the most popular of which are sprat or gobies fried in tomato sauce. We ourselves, at the time of our students at the culinary university, gulped a lot of such borscht, bison for the offset, all sorts of recipes there and, and it was delicious, I confess 🙂

Of course, borscht can be made from other canned fish in tomato sauce, but they are more expensive.

For an even better taste and satiety, borscht is often prepared with beans, but this is not necessary.

In addition, the dish sounds very good in cabbage soup format, i.e. without beets, although - who likes what. We often cook cabbage soup, with which we will start today, and then, for those who wish, we can easily transform them into borscht by simply adding beets 🙂

Ingredients

potatoes - 2-3 pieces

cabbage - 1/4 medium head of cabbage

carrots - 1 piece small

onion - the same

beans - 1/4 cup, optional

beets - small for borscht

fresh tomato or tomato juice - 1/2 cup, for borscht

How do we

2 If we use it as standard, do not forget and do not be too lazy to soak the beans in cold water the day before, so that they cook quickly later and look beautiful in borscht. Pour the prepared beans with fresh water and cook until half cooked, while we peel the potatoes, cut the cabbage and vegetables. Test one bean for softness - if it bites easily, then you can lay potatoes.

3 Beans that have not been soaked in advance are cooked for a long time and boiled down to the point of being unsightly, so if you didn't take care of it in advance, cook better without beans 🙂

4 Peel the potatoes, rinse, cut into cubes and put in boiling water.

5 Chop the cabbage into strips and send it there.

6 Cut carrots and onions into strips and sauté with a little vegetable oil.


7 As soon as the potatoes are boiled until soft, put the sautéed carrots and onions in a saucepan.


8 Boil everything together and add the whole jar of sprat along with tomato sauce to the cooking. If you do not like the fact that specific sprats float in the plates, you should also rinse them with a fork in the jar until they are unrecognizable 🙂


9 Immediately after the kilka (bulls), add salt, pepper, lavrushka to taste, mix and cook. Congratulations, this is cabbage soup with sprat, as in the photo above 🙂

10 If you prefer borscht with canned food, just stew the grated beetroot with sour tomato juice or chopped fresh tomato in a separate frying pan so that the beetroot softens and retains its appetizing color, and add the stewed beetroot to the cooking along with the browned vegetables. It's even easier - boil the beets in the peel until tender, peel, grate or chop and add to the borscht 5-7 minutes before it's ready, along with the spices.


Not difficult, right? And surprisingly delicious 🙂 Such borscht (cabbage soup) is usually cooled and eaten cold, like, but if you don't have enough patience, they will not disappoint you even when hot.

When serving, sprinkle the borscht in plates with chopped herbs, if you like, add garlic as well. We do not put sour cream (fish, nevertheless), but there is a practice of this kind of serving.

It so happens that you need to quickly cook the first course, but there is no time at all. For such a case, I propose a recipe for fish soup from fresh cabbage and canned mackerel. Yes, yes, exactly cabbage soup with canned fish, exactly. For some, this dish may seem unusual, but in our family, such cabbage soup is prepared regularly. This recipe (with a photo) was once shown to me by my mother, calling it cabbage soup with canned fish.

I always keep a couple of cans of canned fish, mackerel, herring, pink salmon at home. Such stocks periodically help me out when you don't know what to cook or when you need to do something quickly. So today I will tell you how to cook fish soup using such stocks. I take mackerel in oil or in my own juice, my pets do not eat in tomato, but this is just a matter of taste.
