I sometimes pamper my family with delicious sweet dishes and cook curd balls, fried in oil, a recipe with a photo of which I have prepared for you today. Curd balls that just melt in your mouth. Of course, for their preparation, you need to make an effort and spend a little time, I will not argue that this is a five-minute dish. But, and I do not want to frighten you with complex processes, especially since they do not exist.
In fact, the dough for balls is quite simple, if you know how to do it, then you will be able to cope with this dish quite well, but if there are some difficulties, I am sure that they will be quite solvable. Although, as it seems to me, it is enough to cook the balls once, and only then you will do everything automatically, without even thinking. It is clear that, even adhering to the recipe, each time you will get a dough of different consistency, because eggs are of different sizes and cottage cheese of different fat content. That is why you should always be guided by the fact that a good dough for such balls usually has a moderate consistency: not liquid and not thick, but soft and viscous, so that balls can be easily glued out of it.
To taste, you can add vanilla essence or coffee extract to such a dough, or you can rub the zest from lemon or orange, or add dried fruits, for example, raisins, pitted prunes or dried apricots.
We cook balls in a large amount of fat, of course a deep fryer is ideal for this. But, for example, I do not have it, but I still cook such a dessert, because for these purposes it is quite possible to use a saucepan into which refined oil is poured.

Ingredients:
- cottage cheese (fat content not less than 15%) - 250 g,
- granulated sugar - 2 tablespoons,
- table chicken egg - 1 pc.,
- vanilla sugar - 2 tablespoons,
- baking soda - ½ tsp,
- table vinegar (lemon juice) - 1 tsp,
- wheat flour (premium grade) - 2 tbsp.,
- fine-crystalline sea salt or table salt - pinch,
- oil (deodorized) - 400 ml.

Recipe with photo step by step:

Separately, break the chicken egg into a small bowl and add salt, granulated sugar and flavoring (vanillin, zest or coffee extract). Mix the mixture thoroughly with a whisk until smooth.

Then add the cottage cheese (in order for the balls to be more tender, the cottage cheese must be grated through a sieve or interrupted with a blender).

Then add soda, quenched with vinegar.

Gradually knead a soft, tender dough.

Pinch off small pieces from the dough, and roll up balls the size of a nut. To make it easier to do, we moisten our hands with sunflower oil.

Put curd balls in the heated butter and cook them over low heat so that they are well fried inside.

We put the balls in portions, as they increase in size during cooking.
It is important to warm up the oil well at this stage!

Use a slotted spoon to remove the balls on a paper towel to remove the remaining oil.

Then we transfer them to a dish and sprinkle with powder if desired. They turn out to be elegant and very tasty, which are easy to prepare according to our recipe.

Bon Appetit!

The curd balls cook very quickly and are eaten even faster. They turn out to be incredibly tender on the inside, crispy on the outside and very, very tasty. Dessert is also good because any housewife usually has products for it. So, we read the recipe and go to prepare curd balls.

Products for curd balls

You will need these simple products:

  • eggs - 2 pcs.;
  • cottage cheese of any fat content - 200 g. Cottage cheese is suitable even from the freezer, but it must be completely defrosted and squeezed out of the liquid, if it appears.
  • granulated sugar - 3 tablespoons;
  • salt - 1 pinch;
  • baking powder (baking powder for dough) - 1 tsp;
  • premium flour - 1.5 cups;
  • odorless vegetable oil - 0.5 l;
  • icing sugar - 50 g.

This amount of food is enough for you to prepare a small portion of balls. They are enough only for evening tea drinking for a family of 3-4 people. If you are expecting guests or want the dessert to remain the next day, then prepare balls from a double portion of food.

How to make a dough for curd balls?

The dough is made elementary:

  • Sift flour through a sieve and mix with baking powder.
  • Pass the cottage cheese through a meat grinder or rub through a small metal strainer. This is necessary so that there are no extra lumps in the dairy product.
  • Beat eggs into cottage cheese and add sugar and salt. Stir the mixture until smooth.
  • Pour flour into the curd base and knead the dough with a spoon. It should turn out to be very soft, but so that you can mold balls from it with your hands. If the dough turns out to be liquid, then add a couple more tablespoons of flour to it.

How to fry curd balls?

The frying technology is as follows

  • Sprinkle some flour on a large flat plate and spread it evenly.
  • Using a coffee spoon, scoop up some of the curd dough and place it over the flour. Using your hands, roll the dough into a ball. Place the balls on a flour-dusted cutting board until frying. Keep the balls small because they will approximately double in size when fried. You can make stuffed balls if you like. To do this, put a piece of chocolate or any nut inside each portion of the dough.
  • Heat the oil in a deep, tall saucepan. As soon as a slight smoke appears over the oil, reduce the power of the stove to medium. If this is not done, then the balls in very hot oil will burn on the outside, and inside may not bake. Determine the readiness of the oil by dropping a small piece of dough into it - it should quickly float up and, when frying on one side, turn over to the other side on its own.
  • Place only 3-4 balls in hot oil at a time. If you put more of them, then when the balls swell, they will prevent each other from turning over. Also, from a large number of balls, the oil cools faster and the balls may not bake.
  • Use a slotted spoon to remove the blush balls from the oil and place them immediately on paper towels. The paper will absorb excess grease from the baked goods.
  • Put the balls dried from butter in an even layer on a dish and rub with powdered sugar.

How to serve curd balls?

In addition to powdered sugar, and this is the classic way of serving dessert, the balls can be decorated in another way:

  • Drizzle over melted dark chocolate and sprinkle with coconut.
  • Dip the balls in the jam syrup and roll in the white chocolate chips.
  • Serve condensed milk to the balls, in which everyone at the table can dip them.
