The key components of puff pastry are layers of fat and flour that alternate many times. Despite the certain duration of the process of its preparation, puff pastry buns are easy to make with your own hands - sweet for tea or hearty for breakfast. All recipes are given for 10 - 15 products.

This is an easy option for sweet baked goods and inexpensive as well.

Prepare the following components:

  • water - 300 ml;
  • premium flour - 500 g;
  • margarine - 280 g;
  • egg - 1 unit;
  • salt - 1/2 tsp;
  • white sugar - 100 g;
  • vinegar - 1 tsp.

We prepare buns with sugar like this:

  1. Pour vinegar into the water, beat in an egg and add salt. Then add flour and start kneading. The correct consistency is elastic, springy and not too tight.
  2. Divide the mass into two parts and roll them out. Cover generously with butter and sugar, lay on top of each other, roll into a roll, then spiral.
  3. Wrap the resulting "snail" in a bag and refrigerate for 2 hours.
  4. Roll out the cooled mass and divide into pieces. Form a "sausage" from each and make curls.
  5. Spread the blanks on a baking sheet covered with parchment, preheat the oven to 200 ° C and bake for 15 minutes.

Please note that it is better to knead the dough with your hands. In a food processor, you can only do this with a special attachment, otherwise the mass will turn out to be too tight and heavy.

For the filling, almost any food that is stored in the refrigerator is suitable. For example, cheese, ham, sausage, pickles. Sweet pastries are prepared with fruits, raisins, cottage cheese, berries, jam. For the simplest recipes, you just need puff pastry, sugar and butter.

The five most commonly used ingredients in recipes are:

Vanilla, cinnamon, lemon juice and nuts give a pleasant taste to sweet buns. To make the baked goods ruddy, grease it with beaten eggs or butter.

How to make puff pastry buns

Lush homemade buns can be shaped like an envelope, triangle, diamond, flower or roll.

The five fastest recipes:

  • Defrost the dough on the bottom shelf of the refrigerator.
  • The layer is sprinkled with wheat flour and rolled out to a thickness of 3-4 cm.
  • Fresh apples, pears, apricots and berries are used for the filling. Dried fruits are pre-soaked in boiling water for 10-15 minutes.
  • The apple filling goes well with cinnamon, and the curd filling goes well with vanilla and orange peel.
  • To prevent the jam from spilling out onto a baking sheet, mix it with starch or corn flour.
  • The dough layer is cut into squares or rectangles, then the filling is spread on them. The edges of the blanks are connected, giving the desired shape to the treat.
  • The buns are sprinkled with poppy seeds, sesame seeds or flax seeds.
  • To prevent the baked goods from burning, cover the baking sheet with baking parchment or grease with oil.
  • The buns are laid out at a distance of 5-7 cm from each other: during heat treatment, the blanks will rise and increase in size.
  • Puff pastries are baked in an oven preheated to 180 ° C for 15-20 minutes.

The treat is served with tea, milk, coffee or lemonade.

Sweet pastries are garnished with powdered sugar, cocoa, fresh berries and mint. Meat and cheese buns can be served to guests with tomato or cream sauce.

    French pastries have been famous for their excellent taste for decades. Puff pastry buns with custard are no exception. Puff pastry was invented back in 1645 by one French apprentice of a pastry chef. He wanted to make baked goods for his sick father, who was on a diet. He mixed water and flour and rolled it out. Then I remembered that I could add more oil. He simply wrapped the butter in dough and rolled it until it dissolved. From the resulting composition, he baked bread. To his surprise, it turned out to be of an unusual shape and huge size. Later, while working in a well-known pastry shop, this student slightly improved his recipe. He brought fame and money to Claudius Gela. He kept the recipe secret for a long time. But fortunately for our generation, this recipe has come down to us.

    Cooking it at home takes a very long time. Therefore, ready-made puff pastry, which can be bought in the store, is very popular. It tastes great, and the baked goods are of excellent quality, the main thing is to adhere to some rules.

    Ingredients:

  • Yeast puff pastry - 1 pack (500g)
  • Raisins (pre-soaked in cognac) - 200g
  • Yolk - 1 pc.

For the custard:

  • Milk - 1 tbsp.
  • Sugar - 1/2 tbsp.
  • Flour - 1 tablespoon
  • Egg - 1 pc.
  • Vanillin on the tip of a knife

  • In a separate container, mix egg, sugar and flour
  • Stir until smooth

  • When the milk boils, stirring continuously, pour the resulting mass into it in a thin stream

  • Then, also stirring, cook the cream for 5-7 minutes. Put the finished cream to cool

  • Defrost the dough first, then roll it into a layer about 0.5 cm thick.

  • Grease the dough with cooled cream

  • Sprinkle generously with raisins

  • Then roll up the roll, pinching the seam

  • Cut the roll with a sharp (!) Knife into pieces about 1.5 cm thick.

  • Place the blanks on a baking sheet greased with vegetable oil.

  • Each of them - grease with egg yolk

  • After the buns are slightly tender (10-15 minutes), bake them for 20-25 minutes at a temperature of 200-220 ° С

  • Grease ready-made French buns with raisins and custard while still hot with syrup (water - sugar - honey in a 1: 1: 1 ratio) for shine
  • Bon Appetit!

    Baking Secrets:

    1. Frozen dough must be thawed at room temperature.
    2. You need to roll in one direction.
    3. Cut only with a sharp knife so that the edges do not stick together.
    4. The edges of the baked product must not be greased with an egg, otherwise it cannot delaminate.
    5. Before baking, the dough with the wrapped filling must be pierced with a fork in several places.
    6. The baked product must be placed on a cold baking sheet, you can moisten it with water.
    7. Preheat the oven before setting it to bake.
    8. Do not open the oven during baking.

    The custard is suitable for the preparation of many pastries. The main ingredients for cooking are milk, eggs and sugar. There are many recipes in which vanilla, chocolate and other products are added to give a special taste.

    In order for the cream to turn out especially tasty, you need to choose high quality products and adhere to the following tips:

    1. Use a double bottom dish and a wooden spoon for cooking.
    2. When stirring, make movements in the form of infinity, so it will evenly warm up.
    3. The cream is best done in a water bath
    4. The finished cream must be cooled in cold water with ice.
    5. The less milk, the thicker the cream.
    6. Use only yolks, do not add whites.
    7. To add tenderness, rub through a sieve.

    Anti Lepik

    Chef of AS Tallink Grupp
    Among the products of Eesti Pagar, Anti prefers yeast puff pastry with butter, shortcrust pastry and puff pastry.

    I am the chef of AS Tallink Grupp, I have been working in Tallink for 16 years, of which 9 years as a chef on a ship. Cooking is both a job and a hobby for me. It's like a lifestyle for me, I love cooking and I totally enjoy it. I also like to teach how to cook in a simple way without breaking the gastronomic rules.
    I have known Eesti Pagar for a long time, used their cakes, dough and buns. The longest experience and source of satisfaction for our customers are the breakfast biscuits, which we have been using for years. Also cakes. We can say that reliable quality is already a proven sign.
    Personally, I really like the new Eesti Pagar yeast puff pastry made with butter. The easiest thing to do with it is cinnamon rolls. And the hardest part is where to use Tart Taten, or Apple Pie inside out. Frozen dough can be used to quickly and easily prepare a variety of pastries. There is not always time to make the dough yourself, and Eesti Pagar dough is a very good alternative.

    Of the frozen products of Eesti Pagar, Silje likes yeast puff pastry the most:

    I bake a lot and have tried almost every type of yeast puff pastry that is on sale in the store. My favorite was the Eesti Pagar yeast-puff pastry. This is what I used to compose the recipes for my latest book, Simple Temptations. It is easy to roll out and the baked goods are delicious. I especially like that the dough contains butter.

    Silya shared with us a recipe from her latest book, Simple Temptations:

    Parmesan sticks

    The pleasantly crispy cheese sticks go well with beer and wine, not to mention a variety of pureed soups. The promised hit among kids.

    500 g yeast puff pastry
    1-2 cl soft mustard
    100 g parmesan
    Dried thyme or oregano
    1 egg (for brushing)

    Grate thinly Parmesan cheese. Roll out the dough and spread a thin layer of mustard over it. Spread the grated Parmesan evenly over the dough (leave a small amount to sprinkle on top), sprinkle the dried thyme or oregano, cover one half over the other and roll out the dough again. Cut into strips 1.5-2 cm and twist starting from the tip. Place the chopsticks on a baking sheet covered with baking paper, brush with a beaten egg that has been mixed with 1 tbsp. l of water, milk or cream. Sprinkle the remaining grated Parmesan on top. Bake in the oven at 200 degrees for 15-20 minutes, until the sticks are golden brown. Place on the wire rack to cool and enjoy while the sticks are warm.

    Johanna is an active student and describes her favorite foods as follows:

    Eesti Pagar helped me out many times when it was possible to quickly and easily prepare delicious buns from puff pastry and other tasty ingredients for the unexpected arrival of guests. Also, the Eesti Pagar multi-grain bun is commendable, as the taste and smell are reminiscent of homemade baked goods.

    Erkki Mäeveli

    The father of the family, Erkki Mäeväli, has found many Eesti Pagar products for his family's table:

    I have been using frozen Eesti Pagar products for about 5-6 years. At first I bought a yeast-puff pastry to make pies with sausages and meat, but then, however, I discovered ready-made products that are easy to prepare. My favorites are a long loaf with spicy herbs and garlic oil, because when I cook a roast, I put them in the oven too, they are very tasty to eat with the main course instead of regular bread or rolls.
    We also make apple buns, meat pies and bacon and egg pies with children, because it's so easy to put a couple of packets in the oven on Sunday nights and gobble up buns while watching the evening shows. Meat pies like salty, and apple pies instead of dessert. And if something remains, then these pies are good to take to work or fishing.

    Sille Madeleine

    Sille Madeleine, 25, lives with her life partner and 9 month old twins in Tallinn.
    Sille is now at home and works as a nurse.

    Eesti Pagar frozen buns were first discovered when there were so many worries with children that there was not enough time to prepare something tasty and good. One Sunday we walked in the store and thought about what to cook for the evening. In the frozen section, I came across discounted cinnamon and smoked chicken buns with chives. I thought, why not try it. In the evening, when we finally put the children to bed, we made tea and made pies. The room was filled with a pleasant scent of cinnamon, a real idyll quickly and easily. After that, we arranged for ourselves such pleasant Sunday evenings, we also tried apple-caramel pies with meat filling and sausages. Not saved on the filling, the pies are crispy. Why are these flavors my favorites? Since my grandmother often made buns with meat, sausages and cinnamon as a child, it's great to bring those memories back to life. Unfortunately, I must admit that I myself do not bake anything, there is simply no time. And the skills need to be polished. My grandmother, who makes amazing baked goods, loves frozen puff pastry the most. It's easy to get out of the freezer when you're hungry.

    Hello everyone, my name is Irma. I'm a fan of Granny Emma. I really love her style - calmly, mentally, languidly, but with a hitch. All the material is presented in an understandable, very literate language, everything is clear to me as a foreigner. All the recipes with the photo, I just did not understand, on 13 photos why the custard from the bag, you can use a spoon. But it is not important. It is important that the puff pastry buns are beautiful and, of course, delicious. I will cook these. Of course, I will make my own corrections. Thanks.

    I am writing to you because I want to express my admiration for these cheesecakes, we cooked them all day yesterday. We do not have such a mixer and oven, of course we are worn out. They baked for the first time, my daughter and I, she is 13 years old. Honestly, they were already tired and did not want to eat them. But, nevertheless, they tried it. They turned out to be so tasty - they ate half of them themselves in the evening, treated them to some neighbors, today I’m going to my mother’s place, and I’ll take all that is left to her. Next Saturday we will bake more with my daughter, this time it will be faster. Very tasty. Thank you very much for your kindness. I wish you and your family health. I am your fan forever.

I will try your recipe too, then I will unsubscribe. In general, you are doing a very good right thing, because even if I find a lot of useful things for myself, you can imagine how important it is for novice housewives. You are great. Best regards, Granny Nina.
