It is advisable to take sour apples for making the pie. We take puff yeast dough, but you can take yeast-free for cooking.


Wash, peel the apples from the core and cut them first into slices, then into small cubes.


Put our apples in a bowl. Add sugar, you can sprinkle with lemon juice so that our apples do not darken. Add a little semolina to the filling so that during the preparation apple juice does not “run out” of the pies.

Apple pie with sour cream filling (Tsvetaevo pie) is one of those recipes that is both quick to prepare and has excellent taste. It may not be the most dietary one, but today we close our eyes to it 🙂

This is a recipe for the Tsvetaev’s sisters, which they treated their guests to. The recipe is quite simple, in addition, we will consider the step-by-step preparation of this dessert. If you have questions in the preparation of this apple pie - write in the comments.


Ingredients:

The apples   - 500-700 gr (3-4 apples)

For the test:

  • Butter - 150 gr
  • Sour cream - 100 gr
  • Wheat flour - 200 gr
  • Baking powder - 1.5 teaspoons (can be replaced with baking soda - 0.5 teaspoons, which we extinguish in any acid - a little sour cream or vinegar)

Sour cream filling:

  • Sour cream - 200 g.
  • Chicken Egg - 1 pc.
  • Sugar - 150-200 g (2 faceted glasses).
  • Flour - 2 tbsp. a spoon
  • Vanilla Sugar - 1.5 tablespoons, optional

Let's start cooking:

Washing apples. Heat the oil to room temperature. Sift the flour in advance.

Making the dough:

Melt 150 grams of butter in a microwave or in a saucepan, let it cool slightly.

In the meantime, add 2 cups flour (200 g) to the bowl


Add 1.5 tablespoons of baking powder and mix.


Pour warm butter.


And add sour cream.


Mix. From the resulting mixture - with our hands we begin to knead the dough.


You should get a soft, uniform dough.

We wrap the resulting dough with a film, send it to the refrigerator for 20-30 minutes.


In the meantime, we are filling for our apple Tsvetaevo pie.

Break the egg into a clean container.

Take a full glass of sugar (approximately 150 gr), if you want a sweeter pie, you can add a little more.


And you can also add one and a half tablespoons of vanilla sugar. Mix, whisk with a whisk or mixer until smooth. Sift the flour.


Add sour cream.

It’s very good to add some vanilla. Initially, of course, this component was not in the recipe for the Tsvetaevo pie, but this will help make the pie even tastier.

For Tsvetaeva apple pie, you need to cut apples in very very thin slices of length less than 0.5 centimeters.

Ingredients:

Ingredients:

  • Flour - 300 g
  • Cottage cheese - 300 g
  • Butter - 200 g
  • Sugar - 150-200 g
  • Baking powder for dough -10 g
  • Egg - 1 pc.
  • Salt - a pinch
  • Vanillin - 1 tsp
  • Apples - 6 small pieces

How to make apple pie:

Sift the flour.


Add salt, sugar, baking powder.

In the middle of the apple, cut out a recess. We make it so that it can be placed cherry (cherry), nut, prune or dried apricots. 🙂


To prevent apples from darkening, they can be sprinkled with lemon juice. Lemon (lime) will give an interesting sourness to our apple pie.

So let's get started. We begin, of course, with the preparation of the dough. In softened (slightly melted) margarine, add sour cream, sugar with vanilla sugar, as well as flour and baking powder. Mix everything well to make a uniform sticky dough.

Now let's get into the filling, take the apples, cut them into slices, which are then sprinkled with cinnamon.

The dough and filling are ready. The final step will be putting all the ingredients in a mold. Both metal and glass or silicone are suitable for us. We lubricate it. We spread the dough into it, and stick the apple slices evenly in a circle, while slightly deepening them.

This open pie with apples needs to be baked in the oven, preheated to 180 degrees, for about 30-40 minutes. The result is a delicious aromatic dessert.

Yeast Dough Apple Pie

Such a cake will have an amazing taste due to the thick caramel, which is obtained from a mixture of sugar, apple juice and cinnamon and excellently soaks the base.

To make a yeast pie with apples, we will need:

  • butter dough (how to cook it, consider below);
  • apples
  • cinnamon;
  • sugar;
  • vegetable oil.

Of course, you can use any yeast dough, but the best option for a sweet cake is just butter.

Everyone knows that sweet pastries are much tastier if their oven is based on pastry. Apple pie is no exception. Let's get acquainted with the recipe for making such a test.

We will use such products:

  • water (milk or yogurt) - one glass;
  • pressed yeast - 25-30 g;
  • salt - ½-1 tsp;
  • sugar - ¼ glass .;
  • eggs - 2 pcs.;
  • butter (vegetable) oil - 60-80 g;
  • flour - about 600 g.

First, put the dough by analogy with the usual yeast dough. But you need to melt the butter in advance. When the dough is ready, the oil temperature should be 30-40 degrees.

In the finished dough we introduce the muffin, namely the eggs with butter. And add the remaining ingredients: salt, sugar, part of the flour. It is important that the consistency of the test is correct. It is usually recommended to do one that will not stick to your hands. However, it is already considered too steep and heavy. That is why it is necessary to achieve a consistency when the dough is still sticking, and “light” to the touch. Not everyone can do it the first time. But do not despair. Experiment, and most importantly, try to remember how much flour is put, maybe next time its amount will need to be increased or decreased.

Kneading the dough, you need to put it in a warm place to rise, while covering it with a towel. When the dough rises 2-3 times, beat it and leave it to rise again. This procedure should be repeated 2-3 times.

Spicy apple pie

Let's make an apple pie in a slow cooker. The recipe that we offer for consideration is prepared on a crispy pastry and with air filling. This is what gives the cake a special piquancy.

Well, let's get acquainted with the ingredients that we need. We will prepare the dough from:

  • rye flour - about 180 g;
  • olive oil (odorless) - 50 g (5 tbsp. l.);
  • cold water - 3-5 tbsp. l .;
  • eggs - 55 g or 1 pc.;
  • poppy - 18 g (2 tbsp. l.);
  • salts - pinch;
  • butter - 3-5 g.

For the filling, you need 200 g of apples (one large or 2 medium), and the filling is prepared from:

  • eggs - 110 g or 2 pcs.;
  • natural yogurt (fat content 2.5-4%) - 200 ml;
  • brown sugar (honey) and cinnamon - ½ tsp.

So, the products are collected, now we are preparing a pie with apples in a slow cooker.

Shake the egg with a whisk. Mix flour with poppy seeds, salt, egg and butter. Knead the dough. Gradually, add cold water over a tablespoon until a ball is made from dough. Wrap the dough with cling film and put it in the refrigerator for at least 30 minutes.

A bowl of multicookers grease with butter.

We cut two strips of parchment paper about 12 cm wide and about 15 cm long. We put them crosswise in the multicooker bowl. They are necessary for convenient drawing of the cake, so as not to turn it upside down.

Roll the dough into a disk with a diameter approximately equal to the diameter of the bottom of the bowl. Carefully lay it and distribute along the bottom, forming sides along the walls with a height of about 2.5 cm.

If desired, peel the apples, cut them in half, remove the core and cut into slices.

To prepare the filling, beat the eggs with a whisk, mix them with yogurt, sugar (honey) and cinnamon.

We spread the apple slices on the dough and pour the mixture of eggs and yogurt. We set the program "Baking". Turn on the slow cooker for 1 hour and 5 minutes.

When the pie with apples in the slow cooker is ready, take out the bowl. Let the cake cool, then carefully remove it and put it on a previously prepared dish.

Puff pastry apple pie

Another option for a delicious apple pie is a layer cake with apples. It is prepared very easily, and most importantly, incredibly quickly.

We will need:

  • one egg;
  • jam;
  • 500 g of puff pastry;
  • sugar;
  • 3 apples
  • lemon juice.

Preparing a layer cake with apples in two simple steps. First, lay out the frozen puff pastry on paper, let it thaw, cut small ribbons along its entire perimeter, which we cut with a knife on both sides. With a beaten egg, grease the edges of the dough. We put ribbons on these edges. Lubricate the middle of the dough with jam, then lay the apples peeled and sliced.

At the second step, sprinkle apples with lemon juice, sprinkle them with sugar, grease the ribbons with an egg. The remnants of ribbons can be put on top of the pie, but then they also need to be greased with an egg. Put the cake in the oven (temperature 180 degrees) somewhere for 25-30 minutes. When the cake is ready, let it cool and call the guests for tea.

We will prepare the following products:

  • butter - 100 g + for greasing the pan;
  • sugar - half a cup + for sprinkling apples;
  • salt - one pinch;
  • flour - 3 stacks. with horseback;
  • milk - 1 glass .;
  • drinking soda;
  • apples - 10-11 pcs.;
  • powdered sugar.

We take the butter and grind it with sugar, introduce the eggs one by one, pour in the salt, flour mixed with soda, pour in the milk. Knead the dough well. We roll it into a layer and put it on a baking sheet. Pre-oiled. Cover the dough with an even layer of peeled thin slices of apples. Sprinkle them with sugar.   - eggs - 2 pcs.;
  - sugar - 2.5 tablespoons;
  - salt - ½ teaspoon;
  - flour - 3 cups (maybe a little less or more, how much dough will take);
  - vegetable oil - 2 tablespoons;
  - melted butter - 100 grams;
  - warm milk - 1 cup (200 ml.);
  - dry yeast - 3 teaspoons (no slide);

The order of preparation of the test

Step 1.   We pour a little water into the glass and pour the yeast into it, while we mix the rest of the ingredients, the yeast will dissolve. I always dissolve them in water, even if this is not prescribed by prescription. Firstly, they dissolve faster in water than, for example, in milk. And secondly, kneading the dough, in which the yeast is evenly distributed throughout the volume, is better than when they remained pellets.

Step 2   Lightly heat the milk, melt the butter and combine everything in a bowl in which we will knead the dough.

Step 3   There we break the eggs and pour the vegetable oil.

Step 4   Then add sugar and salt.

Step 5   We mix everything as it should, with a whisk until foam is formed and pour out the dissolved yeast.

Step 6   Sift the flour and gradually introduce it into our dough. You don’t need to pour everything at once, it can turn out to be a lot, and the dough will turn out very cool.

Step 7   Knead the soft dough. Lubricate a clean bowl with vegetable oil, place the dough in it and cover with cling film. In this state, we send for an hour and a half to the refrigerator. NOT IN THE FREEZER !!!

Meanwhile, while the dough for the pie in the refrigerator, prepare the filling. I said above that I make my pie with a filling of fresh apples, apple jam and dried apricots. Therefore, pre-soaked in hot water, dried apricots cut us parts. I also cut fresh apples and mix everything with apple jam. The proportions are completely arbitrary.

If you cook your pie with apples only, then cut them into slices and sprinkle with sugar. Apples, of course, are best cut before the bookmark itself. Otherwise they will turn black. There is another option, sprinkle apples with lemon or orange juice, then they will not turn black and calmly wait for their turn.

Recipe: make a cake with dried apricots and apples

Meanwhile, an hour and a half has passed, the dough is ready, the filling is ready. Proceed:
Step 1.   Divide the dough into 2 parts. One more, the second smaller. The one that is larger is the foundation, which is smaller will be the upper part. We roll out the base so that it is enough on the sides of the form in which we will bake. I have a round one. You can have a rectangular or any other.

Step 2   We spread the filling on the base, cover with the second part of the test, which was also rolled out previously. The diameter of the “cap” will be called it that way, smaller than the base and approximately equal to the diameter of your shape.
  The edges of the two layers of dough (upper and lower parts) are connected and braided with the same braid as on. But before that, cut the excess dough around the edges, it will come in handy for decorations. Remember to make a small hole or cut in the center of the cake. This is done so that it does not tear when baking.

We cover the finished decorated apple pie with a napkin and leave it in a warm place for about 30 minutes to come up. Before baking, grease with an egg, you can only yolk, and send to the oven. Baking time about 20 minutes at a temperature of 180˚C. We check the readiness with a toothpick by piercing the pie in the region of the edges, where the dough is thicker.

  16. Grease a baking sheet with vegetable oil and put the pies on it.
  17. We cut the pies into several equal parts (not cutting to the bottom - only the upper part) so that the finished pie does not crumble and break.
