Soup is a dish that must be included in the diet of every person. In addition to satisfying hunger, it does not take much time to prepare and does not require a large number of ingredients. Today we will cook chicken soup with vermicelli or noodles.

To make chicken soup without potatoes you will need:

  1. 1 carrot;
  2. ½ large onion;
  3. 1 piece of chicken skeleton or 2 thighs (required meat on the bone);
  4. 100-130g noodles;
  5. 2 bay leaves;
  6. seasoning for soup to taste;
  7. sunflower oil for frying.

  • defrost;
  • put the carcass on the back;
  • take the leg and pull it slightly. We make incisions around the leg, cutting the skin. Separate the leg by cutting along the joint. Don't try to cut the bone. The knife must pass between the joints. We do the same with the second leg.
  • We divide each leg into 2 parts: thigh and lower part;
  • We separate the wings at the shoulder joint. If necessary, then divide the wing into 3 parts.
  • Flip the chicken carcass. Make an incision in the middle of the chest. In the left hand we take the chicken fillet and begin to separate it from the skeleton. Cut off as much meat as possible.

So, you got legs, wings for the second, fillet for baking in the oven and a chicken skeleton for soup with noodles.

Immerse the chicken body in a pot of water. We put on fire. We put bay leaves, salt.

Advice: spices should not be added at this stage.

When the water boils, foam will form on the surface. For the transparency of the broth, remove it. When the foam ceases to form, add spices. We leave to cook.

Peel the onion from the skin. Finely shred.

Chicken cheese soup without potatoes with egg


Often in the store we find products that we never use in the home menu. One of these products was processed cheese such as "Druzhba", which are sold in briquettes for 10-15 rubles. I was wondering what to make of them. Thus a new one was born.

  • 3 processed cheese "Friendship";
  • 100g vermicelli;
  • 2 eggs;
  • spices for soup to taste;
  • 100g smoked sausage.

Recipe

Smoked sausage must first be fried. To do this, pour 2-3 tablespoons into the pan. sunflower oil. We put on fire. When the pan is hot, lay out the smoked meats. Fry until crispy for 3-5 minutes on slow fire.

Pour cold water into a small saucepan. I lay eggs. Boil over low heat for 15 minutes.

Advice: To prevent the eggs from bursting during cooking, remove them from the refrigerator in advance.

While the sausage is fried, we proceed to the preparation of cheese soup. Pour water into a saucepan. We put it on the fire and wait until it boils. Grated melted cheese on a coarse grater. When the water boils, add the cheese. We mix. Salt, pepper, spices to taste. Add fried sausage. We pour in the noodles. We cook more 15 minutes.

We clean the boiled eggs from the shell. We cut into 4 parts. We will add them already in portions to the table. When added to soup, they will spread and turn into porridge.

Chicken kharcho without potatoes


A well-known soup, popular with many. Replace beef with lighter chicken meat.

For cooking you will need:

  • 500-800g chicken;
  • 1 carrot;
  • 1 tomato;
  • 1 head of onion;
  • 1 red pepper;
  • 3 tablespoons tomato paste or 2 tomatoes;
  • 100-150g rice;
  • ½ head of garlic;
  • Spices for soup, to taste.

Recipe

Cooking chicken broth. Place the chicken in cold water. It must necessarily be with a bone for rich soup. We put on fire. Wash and clean all vegetables thoroughly. Shred carrots into long thin strips. We heat up the pan. Pour vegetable oil on it. Lay out the carrots. Fry. Finely chop the onion. Cut the pepper in half, remove the seeds. We cut into cubes. Add onions and peppers to carrots. We mix. Add some water, cover and simmer 3-5 minutes.

Pour the rice into a deep bowl. Rinse several times until the water runs clear. Add rice to kharcho. When the rice is cooked, add the fry.

Peel the garlic and finely chop. Add to soup. We turn off the gas. We get meat. We separate it from the bone. We cut into cubes. Add to kharcho again. Let's stand 30-40 minutes.
