Agree, at least once in our life, each of us prepared a classic Caesar salad. Of course, I am also no exception. But for a long time I didn’t succeed in refueling for Caesar according to a variety of recipes. I have tried many recipes for dressings for this salad from famous chefs, and at every convenient opportunity I ordered Caesar salad in restaurants, both here and abroad.
In the end, putting everything together, I got the perfect Caesar salad dressing at home, or, at least, until I stop this option until I come up with another recipe. Today we are going to cook Caesar salad with shrimps - a classic recipe with croutons and cheese.
The following dressing option is universal for the entire "Caesar salad family". With this dressing, you can prepare not only Caesar salad with shrimps, but also Caesar salad with chicken, salmon, or without any "protein additives" at all. Caesar salad dressing with shrimp is perfectly stored in the refrigerator for 12 hours, so you can safely prepare it in advance.
To make our shrimp caesar salad tasty, special attention should be paid to shrimp. I use boiled frozen shrimp in glaze size 90/120. And if the shrimps are cooked correctly, then in the salad they will be juicy, tender and retain the unique taste of seafood.
I advise you to immediately abandon the idea of buying already peeled frozen shrimp - when thawed, they are tasteless and bland. Pour shrimps in boiling water in a deep bowl, and leave to cool completely.
Prepare the ingredients for the dressing: separate the whites from the yolks, squeeze out the lemon juice, peel the garlic, measure out the required amount of vegetable oil, mustard and anchovy fillets.
Place all the ingredients for Caesar dressing in a blender bowl, add sugar and black pepper.
And beat at maximum speed into a homogeneous mass. The recipe for shrimp caesar salad contains anchovies, which are very salty in themselves, so we do not add salt to the caesar dressing. Let the sauce stand for 15-20 minutes, so that all the ingredients "make friends" with each other, and only then taste it. The anchovies in Caesar dressing can be replaced with spiced sprat fillet.
Another important ingredient in shrimp caesar salad is white bread croutons. They can be prepared in any convenient way. I dried the loaf slices in the toaster and diced them quickly and easily.
Now let's start assembling our restaurant salad. Tear the iceberg lettuce leaves into a flat salad bowl, or a portioned plate, put chopped tomatoes and shrimps on top of the salad.
