Korean zucchini salad with carrots

A very tasty spicy salad can be prepared from zucchini with carrots. Vegetables for salad are taken raw, as a result, the salad is very juicy and crispy. If you eat it with your eyes closed, it seems that you are eating a pickled appetizing spicy cabbage with carrots. The taste of zucchini is completely covered with spices.

Those people who do not know what the salad is made of may think that it is made from thinly shredded cabbage. This savory salad is good both on its own and as a snack with boiled rice, for example, or with potatoes. You can use it like . It is clear that this salad has nothing to do with Korea, it's just the name.

If you have a zucchini or two lying around, be sure to try this delicious new salad! You can make such a salad of zucchini for the winter. In this case, it is laid out in clean glass jars and sterilized for 15 minutes. Then we roll up the banks and store them in the basement.

Korean zucchini salad recipe with carrots

To prepare this salad, we need a special grater for (this is a must). Using a grater, we will rub carrots and zucchini with bulky straws.

List of salad ingredients:

  • 1 medium zucchini (I used zucchini)
  • 3-4 large carrots;
  • 1-2 bulbs;
  • vegetable oil 4 tablespoons;
  • salt 2 tsp;
  • vinegar 6% 5 tbsp;
  • spices for Korean carrots 1 tsp without a slide;
  • ground black pepper 1/3 tsp

For pickling Korean carrots, I usually take a mixture of ground spices - chili. coriander, basil, nutmeg, curry and turmeric. The given proportion of spices allows you to prepare a moderately spicy salad. If you like it spicy, then put more spices, already to your liking.

You can also add 1 tbsp sugar to this Korean salad, but since I try not to use sugar, I didn’t put it in. Sugar is up to you.

Peel the onion and cut into thin half rings. Grate carrots and peeled and seeded zucchini with a grater for Korean carrots. In a frying pan, heat the vegetable oil and pour the spices for Korean carrots into the heated oil, calcine for 1 minute. Pour hot oil with spices into the salad.


Put salt and ground pepper, add vinegar and mix well. We remove the salad for pickling in a cool place for 1 hour. It turns out well. Bon appetit!
