It can be cooked with any meat, with vegetables, with any type of noodles, you can add anything you like.

But less often legumes or other ingredients are added to these soups, which increase the cooking time. But still, you can add whatever you want.

I tried to choose the most interesting and delicious recipes. Let's get started with the review, but first let's talk about the soup itself and listen to the advice of experienced chefs.

What is the main thing in this soup? Of course meatballs. They differ from meatballs not only in size (meatballs are smaller), but also in the fact that there is no rice in the minced meat. The minced meat itself can be made from any meat, but it is best when the meatballs are made from different types of meat. You can, for example, add chicken to minced pork. If you love fish, you can make minced fish balls.

To make the soup lighter, you can add the pulp of a soaked loaf to the minced meatballs, but this is not necessary. By the way, you don’t need to put a lot of eggs in the minced meat to hold it together; just knead it well.

Soup with meatballs and vegetables

The soup itself is hearty, light with pieces of meat melting in your mouth. Therefore, not only adults, but also children love such soups.

Only fresh minced meat is used. A real housewife will never take frozen meat. If you buy minced meat in a store, you need to take it chilled. Add breadcrumbs or bread crumbs, previously soaked and squeezed, to the minced meat.

Rusks can be replaced with semolina; it swells well and holds the minced meat together. Do not overdo it with cereal, there should be no more than 1-2 tablespoons per 0.5 kg of minced meat. After you add semolina to the minced meat, let it brew for 15-20 minutes.

To prepare meat broth, bones are used, for fish – tail, heads, skin, and for vegetable broth – any vegetables that are on hand. Mushrooms, carrots, onions, and various herbs are ideal for vegetable broth. Thanks to the broth, the soup with meatballs will be richer and more aromatic, and will acquire a richer and brighter taste.

Reduce the heat to low before adding the meatballs to the boiling water to ensure your broth isn't cloudy. Do not boil the meatballs separately; the soup will have a completely different smell and taste. If you are not on a diet, you can fry the meatballs in a frying pan to make your soup even tastier.

Prepare the meatballs ahead of time and freeze them. This is very convenient, as it will allow you to save time on preparing them next time. Before freezing, place the meatballs on special parchment paper, thanks to which they will not stick and you can easily separate them.

I called this recipe the main one, since we prepare it often, but we prepare other recipes based on it. And so let's get started.

We will need:

  • minced meat - 200-300 g;
  • potatoes - 3 pcs. average;
  • carrots - 1 piece;
  • onions - 1 pc. average;
  • greens - 20-30 g;
  • butter - 20 g;
  • vegetable oil - 2-3 tablespoons;
  • water - 2 liters;
  • salt to taste;
  • bay leaf - 1 piece;
  • ground black pepper to taste.
  • Step 1.

    We used ground beef in this recipe, but you can use any kind. Peel and chop the onion using a grater or blender. 1/2 of a medium onion goes for 200 grams of minced meat. The butter must be melted or used softened.

    Step 2.

    Add chopped onion, butter, salt and ground black pepper to the minced meat, as well as a small amount of water, so the minced meat will be more juicy.

    In addition to these ingredients, you can add a small amount of fried onions and carrots, grated Parmesan cheese, chopped herbs, and finely chopped bell peppers to the minced meat.

    After you have kneaded the minced meat, throw it as hard as you can onto the board, then lift it up and throw it again. Do this 10-15 times until it becomes smooth and uniform. This is necessary so that the meatballs do not fall apart during cooking.

    Now take a teaspoon of meat, put it on your hand and roll into balls. In this case, it is better to moisten your hands with water, so the meat will stick to your hands less. It is advisable that the meatballs be the same size, and they should be placed at a distance from each other so that they do not stick together.

    Pour water into a saucepan and bring to a boil. Add bay leaf, salt to taste and black pepper, ground or ground. You can also add allspice.

    Place the meatballs in boiling water and bring to a boil again.

    Meatballs are cooked for 7-10 minutes in boiling water. Then we take them out of the water. We prepared the broth.

    Peel the potatoes and cut them into cubes, or in any way convenient for you. Then put it in the broth and bring to a boil.

    In addition to potatoes, you can add rice, buckwheat, pasta, semolina or other grains to your soup. Accordingly, pasta and semolina should be added at the end of cooking, and rice and buckwheat along with potatoes.

    Taste the broth and add salt and pepper to taste if necessary. If desired, you can add any seasoning you need.

    Now grate the carrots. Cut the onion into cubes. We will do the “frying”. Pour vegetable oil into a frying pan, heat it, add carrots and onions. Fry until golden or translucent.

  • potatoes - 3 pcs;

  • flour - 3 tablespoons;
  • black peppercorns - 5-7 pcs;
  • bay leaf - 2 pcs;
  • salt and pepper to taste.

    We put water on the stove and turn it on. While the water is heating, peel the potatoes and cut them in a way convenient for you. Then we put it in water.

    Step 2.

    Let's make meatballs. The minced meat must be defrosted. Grate the onion and add to the minced meat. Add salt and allspice black pepper to taste. mix everything thoroughly and form meatballs, as in the first recipe.

    Now throw the meatballs into the pan and cook over medium heat.

    Now add the dumplings to the soup. To do this, take a teaspoon, moisten it in water, take half a spoonful of dough and drop it into the boiling soup. After this, add peppercorns and bay leaves.

    Mix well so that all the dumplings can float.

    The dumplings do not need to be made large; they will swell when cooked in the soup.

    Now we do the roasting. Grate the carrots and cut the onion into cubes. You can fry everything at the same time as in the first recipe. But I often first fry the onion in a frying pan until half cooked, then add the carrots.

    Now add the fried vegetables to the soup, add salt and pepper. Mix everything thoroughly.

    5 minutes before the soup is completely ready, do not forget to add spices and herbs to it, so it will become more aromatic and spicy. Dill, parsley, celery, and green onions complement the taste of meatball soup well.

    Now cook a little more and you can turn off the stove. That's it, the soup with meatballs and dumplings is ready.

    We will need:

  • minced meat - 200 gr;
  • potatoes - 2 pcs;
  • vermicelli - 3-4 tablespoons;
  • carrots - 1 piece;
  • onions - 2 pcs;
  • bell pepper - 1 piece;
  • bay leaf - 1 piece;
  • salt and pepper to taste.
  • Step 1.

    Defrost the minced meat. Grate the onion, add to the minced meat, salt and pepper to taste. Mix thoroughly and make meatballs (as in the first recipe).

    Step 2.

    Peel carrots, onions and potatoes. Grate the carrots, chop the onions and potatoes in a way convenient for you.

    Step 3.

    Now turn on the multicooker in the “frying” mode, pour a little oil. Add onions and carrots and fry until done.

  • zucchini - 1 pc. (average);

  • milk - 100 ml;
  • olive oil;
