  • Salt - 1-2 pinches
  • Ground black pepper - 1-2 pinches
  • Rice (dry) - 70-100 g
  • Vegetable oil - for frying
  • Onion - 1 pc.
  • Carrots - 1 pc.
  • Wheat flour - 2-3 tbsp
  • Tomato paste - 1-2 tbsp
  • Broth / water - 400-600 ml
  • Sour cream - 200-250 g
  • Bay leaf - 1-2 leaves
  • Dried herbs - to taste

Cooking:

minced meat - 1 kg (I have a mixture of: pork and chicken);

onion - 1-2 pcs.;

rice - 0.5 cups;

egg - 1 pc.;

tomato paste - 200 g;

carrots - 1 pc.;

flour - 1-2 tsp;

adjika - 1 tbsp. l. or optional;

salt, pepper - to taste;

sunflower oil for frying - 2-4 tbsp. l.;

any greens - 2 zhmenki.

Cooking steps

We wash the rice, fill it with water and set to cook until tender, salting the water.

Let's prepare the stuffing. I have a mixture of minced pork and chicken prepared in advance. You can use any - to your liking.

Then add the egg, salt, pepper and mix.

Put the cooked rice on a plate and let cool.

Combine rice with minced meat and mix well.

Now you can sculpt balls - these will be our hedgehog meatballs! We spread them on a preheated pan, greased with sunflower oil.

After frying the hedgehogs on one side for 5-7 minutes, turn them over to the other side and fry for another 5-7 minutes over medium heat.

While hedgehog meatballs are fried, peel and cut the carrots (I have red carrots, but you can use any).

We dilute a teaspoon (with a slide) of flour with a small amount of cold boiled water and mix until smooth.

Then pour this flour mixture into a frying pan with hedgehog meatballs.

Mix well and simmer for another 3-5 minutes. If necessary, add salt to our sauce.

Add chopped greens - and now our hedgehog meatballs are ready!

We treat our loved ones with tender and tasty meatballs-hedgehogs! Serve them with sour cream.
