This means that right now it is time for strawberry lovers to enjoy its taste and make sure of the value of the microelements and useful vitamins it contains, such as vitamins C, B, A, magnesium, phosphorus, potassium, calcium, selenium, iron, fiber and organic acids.

Of course, strawberries for the winter will not replace a first aid kit, however, if it is on your table every day, you can significantly improve your health. Strawberries will strengthen the immune system and vascular walls, protect the body from viruses and saturate it with iodine. Despite the fact that strawberries have a sweet taste, they have a sugar-reducing effect, which means they are safe for people with diabetes. In addition, strawberries will help remove excess water from the body, normalize blood pressure and metabolism, eliminate bad breath and relieve you of insomnia.

Of course, the strawberry season is not so long, but strawberries for the winter will preserve the beneficial properties of the berry for a long time. Strawberries are not only famous for their medicinal qualities, but also play an important role in cooking. First of all, this is a wonderful dessert, strawberries are perfect for fermented milk products, they are included in salads, baked goods, they go well with seafood and poultry, and also perfectly complement white sparkling wines.

Of course, it is best to eat freshly picked strawberries, but in winter, alas, this is not possible, therefore, several options for harvesting strawberries are offered to your attention. Strawberries for the winter will allow you to enjoy the taste, aroma and nutrients all year round.

Strawberry jam

Rinse 2 kg of fresh, not very large whole strawberries in running water, remove the leaves and add 1 kg of sugar. Leave for 7-8 hours, then simmer over low heat, then boil until the required density over a higher heat. A few minutes before being ready, pour in the juice of 2 lemons or 5 g of citric acid. Pour the ready-made jam into steam-sterilized jars.

For jam, only freshly picked berries are suitable, which must be rinsed in running water and peeled from leaves, and allowed to drain. Pour 1 kg of berries in layers with 1.2 kg of sugar and put in a cool place for 5-6 hours so that the strawberries give juice. Then on low heat, heat the mixture to a boil, and, so as not to crush the berries, gently stir until the sugar is completely dissolved in the juice, and after a few minutes remove from heat for 20-25 minutes. Then put it on the fire again and bring to a boil, repeat this procedure 2 times, then cook the jam until tender. To prevent the jam from becoming sugared, shortly before the end of cooking, add 2 g of citric acid or the juice of 1 lemon to it. Put the cooled jam in sterilized and dried jars.

Strawberry compote

Strawberry compote must be cooked very carefully and carefully, because the berries are easy to boil and lose their shape. Compote can be prepared in two ways. In the first case, the berry needs to be sorted out, washed and dried a little on a napkin. Transfer 5 kg of berries to a container, add 2 kg of sugar and let stand for 10-12 hours. Drain the resulting juice and heat to 80 ° C, pour berries over them, mix, put in jars and roll them up. Sterilize liter jars for about 20 minutes.

In the second case, pour over the washed selected berries with boiling water and put them loosely in jars. Then pour boiling sugar syrup over the berry, prepared at the rate of 200-500 grams of sugar per 1 liter of water. After 5-7 minutes, drain the syrup, bring to a boil again and fill the jars with them up to the neck, immediately roll up the jars and turn them upside down.

Strawberries, grated with sugar

Rinse 1 kg of strawberries thoroughly, peel and dry. Twist the dried berries through a meat grinder or grind in a blender, add 2 kg of sugar and mix thoroughly. Pour the resulting mixture into sterilized dry jars, pour a small layer of sugar on top and roll up the lids.

Strawberry jam

Pass 1 kg of washed and dried strawberries through a meat grinder and put on low heat. Cook for a while without sugar in your own juice. Add 750 grams of sugar to the boiling mass and cook for 25 minutes from the beginning of the boil. When the jam has cooled down a little, pour into jars, close the lid and put in a saucepan with boiling water for 30 minutes.

Frozen strawberries

To prevent the berry from losing vitamin C, it can be frozen. Rinse the berries thoroughly under running water and let the water drain. Place the dried strawberries on a tray and place them in the freezer. When the berries are frozen, transfer them to any container that is convenient for you and put them back in the freezer. It is better to immediately divide the strawberries into portions, because thawed berries do not re-freeze.

Strawberry ice

Use strawberry ice to garnish drinks. To prepare it, you will need 1/2 cup of sugar, 1/2 cup of warm water, 450 g of strawberries, 2 tablespoons of lemon juice, and an ice mold. In a blender, combine the sugar and water until the sugar is completely dissolved. Put the washed and peeled strawberries in a blender to the syrup, add lemon juice and puree so that the mixture is homogeneous. Transfer the finished mixture to an ice cube tray and place in the freezer. You can also make strawberry ice as follows: Rinse the small strawberries thoroughly and place them in an ice cube tray, cover the berries with water and place them in the freezer.

In winter, when vitamins and fresh berries are scarce, you can bake a cake, make pancakes, or decorate any pastry or dessert with strawberries that you yourself have prepared in the summer. Ingredients:

150 ml of milk
300 gr strawberries
3 eggs,

Preparation:
Separate the yolks from the proteins and mix with flour, add sugar, milk and salt. Beat the whites into a thick foam and transfer to the dough, add strawberries chopped in a blender there. Form small pancakes with a spoon and place in a greased hot skillet. Bake the pancakes on both sides. Once removed from the pan, sprinkle with powdered sugar and vanilla.

Strawberry cocktail

Ingredients:
300 gr strawberries
½ l milk,
3 tsp Sahara,
100-150 gr vanilla ice cream

Preparation:
Grind half of the strawberries in a blender, add milk and sugar. Whisk the resulting mixture in a blender, pour into glasses, then add the remaining berries there and put a spoonful of vanilla ice cream on top.

Strawberry season has just begun, so stock up on fresh strawberry vitamins for future use. However, keep in mind that strawberries are a strong allergen, so don't overdo it.
