9. It is very simple to prepare tender and tasty meatballs from chicken in mushroom gravy. Soak two slices of white bread without a crust in a small amount of milk and squeeze. Pass through a fine grill meat grinder 500 gr. skinless chicken. Chop one small onion finely. Combine bread, minced chicken and onions, add 1 tbsp. a spoonful of chopped dill, salt to taste. Knead the minced meat thoroughly and form small meatballs. Chicken with Tomato Paste

This spicy dish will add a couple of sprigs of fresh rosemary and bay leaf. In addition to the broth (0.6 l), it is taken: 750 g of pork and minced chicken, 80 g of dried white rice, 2-3 garlic cloves, egg, salt, a slice of butter, 1 tbsp. low-fat sour cream, 25 g flour, a pinch of pepper mixture.

  1. Semi-finished rice with the egg goes to the minced meat. Salt, seasoning and garlic cloves passed through the press are added to the mass.
  2. The meatballs from the resulting mixture in a glass form are cooked in a hot oven to a minimum browning.
  3. Sour cream and broth are mixed in a stewpan. As soon as the mass boils, the fire turns off, melted butter and salt are added to the other components of the gravy.

  • flour - 2 - 3 tbsp. spoons

For tomato sauce

  • carrots - 1 pc
  • onion - 1 pc
  • garlic - 1 - 2 cloves
  • tomato paste - 1 tbsp. spoon with a slide
  • sugar - 1 tbsp. a spoon
  • paprika - 1 tbsp. a spoon
  • dill
  • bay leaf - 2 pcs.
  • salt, pepper - to taste


Cooking:

We divide the entire cooking process into three stages.

To prepare the meat, we need one onion head, and leave the second head for the sauce.

2. Rub the carrots on a medium grater.


3. Chop the garlic. Incense garlic on your own, whoever loves. You can cut one and two cloves. And you can do without it at all. But it always gives a very important, very aromatic flavor note. Therefore, at least a little, but must be added.


4. The minced meat is already ready, it can be used by anyone you like. Very tasty and tender meatballs are obtained from mixed minced beef + pork. But sometimes according to this recipe, I cook using minced chicken. Then the dish turns out dietary and, what is nice, more economical. And also delicious.

5. We must have ready rice pre-cooked to the floor of readiness. This means that it was necessary to boil it for 10-12 minutes, then drain the water and let it cool. If you use round-grain rice varieties, then they are very boiled and quite sticky. Such rice can be rinsed with warm boiled water.

If you take rice long grain, and even more steamed, then it is no longer necessary to wash it.

Add rice to the minced meat, put chopped onion and chopped garlic with it.


6. Then add the egg, salt, pepper and any spices for meat, if desired. I add my favorite spices - ground coriander and zira. I love them very much and add to any meat dishes.


Stuff the minced meat thoroughly until smooth.

7. Let's start shaping our products. For this we need flour, well, the stuffing itself.


Take a tablespoon of minced meat and roll a ball out of it. Try to take the same amount of minced meat every time so that the products are all the same size. This is important so that everything cooks evenly.

8. Pour the flour onto a small flat plate. Roll each ball into it from all sides and put on a cutting board.

2. Rinse fresh mushrooms, defrost frozen ones, soak dry ones in water, and then boil in salted water. I use frozen boletus mushrooms, we frozen these mushrooms ourselves. But if you don’t have your own mushrooms, then you can buy champignons and use them.

5. From the prepared meat, form small balls. I got 7 of them. By the number of finished meat products, I divided the mushroom stuffing into 7 parts as well, so that everything was enough and nothing was left. Then we need to form cakes from each ball. In the middle of each of them put a filling of mushrooms with onions.


6. Then grind so that the filling remains inside. Jewelry work, it is not advisable that the mushrooms crawl out. Form all the balls at once. Then roll them in flour.


Put on a preheated frying pan with a small amount of oil and fry first on one side and then on the other. Add a minimum of oil again. Our meatballs contain fat, it will evaporate and the products will be fried in oil and fat at the same time.

So it’s no coincidence that they turn out so delicious. Everything is thought out!


At the same time, make sure that the fire is not too large, and that the meatballs do not burn. When one side is browned, take two forks, and with their help turn the products on the other side.

7. In the meantime, our products are fried, let's deal with potatoes. It must be cleaned and cut into small slices or cubes.


Fry in a separate frying pan until cooked on a minimum amount of oil. Salt to taste.


8. Cook the sour cream sauce. To do this, fry the flour in a dry pan. So that it does not burn, watch the fire, it should not be too large. You also need to constantly stir it. Fry for 2 to 3 minutes until slightly creamy in color.


9. Add butter, it is best to use 82% butter. As you can see, enough oil is used, but it is necessary. Reducing its amount is not recommended. Thanks to the oil, the meatballs will turn out simply the most tender. In addition, excess oil subsequently drains into shape and can not be used.


After the butter has melted, add sour cream, salt. I also add pepper to make the gravy sharper. In this case, mix thoroughly. Bring to a boil and turn off. The mixture should slightly thicken.


10. Prepare a baking dish. I will use an elongated glass heat-resistant mold.

3. For the recipe, we will use it with the sauce. I have my own homemade tomatoes. If there are none, then you can buy them at the store. Or, as a last resort, replace with tomato paste with the addition of water, as in the first recipe.


Cut the tomatoes from the jar into large cubes, provided that the tomatoes no longer have a peel. If they are with skin, then it must first be removed.

4. Put the chopped tomatoes with the jar sauce in a pan with onions. Add 50 ml of water, pepper and bay leaf, cover and simmer for 10 minutes.


5. Meanwhile, form meatballs. It is better to do this with wet hands so that meat and fat do not stick to your hands. Formed balls should be about 4 cm in size.


6. Put the resulting product in a pan with tomato sauce. Lay out cherry tomatoes next to it. Or you can do without them, this is optional.


7. Bring to a boil, reduce heat and simmer over low heat for 20 minutes.

8. Grind fresh herbs, pour it into the pan and close the lid again. Leave on for 10 minutes, already without fire.

9. Serve the prepared meatballs with sour cream and fresh herbs.

We will need:

  • meat - 500 gr
  • egg 1 - 2 pcs (depending on size)
  • white loaf - 80 - 100 gr
  • milk - 0.5 cup
  • onion - 2 pcs (small)
  • chopped parsley - 1 - 2 tsp
  • salt, pepper to taste
  • fat - 30 g (or vegetable oil)

Cooking:

1. Remove all lived and films from the meat, and then pass it through a meat grinder. From the scraps, it will be possible to weld the broth, adding seeds, of course.

Veins and films will not allow you to get a gentle and juicy stuffing, so they must be removed!

2. Soak a piece of the loaf for a short time in milk, then squeeze and rub through a sieve using a tablespoon or pestle. And also pass through a meat grinder along with meat.


3. Onion cut into very small cubes and fry in fat, or vegetable oil. It should become soft and slightly fried.

4. Add the fried and cooled onions, egg, salt, pepper and parsley to the minced meat. And we have already introduced the roll, twisting it through a meat grinder.
