Pour a portion of dough onto a hot surface with a ladle, scroll the pan, distributing the pancake composition in an even thin layer.
  5. We hold it over medium heat until the bottom side is browned, then, having pried off the pancake with a culinary spatula, turn it on the other side and brown for literally 20-30 seconds. Hot, freshly baked pancakes, if desired, are coated with butter to soften the edges as much as possible.
