  1. To start making scallions and egg patties, you need to prepare the ingredients. To work with yeast dough, you must use food at room temperature.
  2. Pre-melt the butter over low heat and let cool to room temperature.
  3. Only milk will need to be heated to a temperature of 36-38 degrees - this is a comfortable temperature for yeast to work. By the way, you can cook brass pies with green onions and eggs on kefir. It will be tasty too.
  4. The dough is kneaded very quickly. In a bowl, mix milk with dry yeast (it is allowed to use fresh - 25 grams), add sugar. Stir well, trying to dissolve the sugar and yeast.
  5. Next, pour in the melted and cooled butter or margarine. Mix again until evenly distributed.
  6. The next step is to add the sifted flour: in small portions, stirring thoroughly.
  7. When the dough becomes thicker, it is allowed to knead with your hands on a floured table. For convenience, sprinkle the dough on top too. As a result, the dough should be soft and elastic. Now it does not stick to the table and hands at all.
  8. We collect the dough in a ball, cover or wrap in cling film. We give him a rest for twenty minutes. The gluten will swell, the dough will become smoother and slightly rise during this time.
  9. Prepare the filling while the dough is resting. It can be anything, but it is better not raw: this way the pie will cook faster. Today I use a spring filling: green onions with boiled eggs.
  10. Boiled eggs should be cut into cubes. Cook them in salted water, about five minutes, hard boiled.
  11. Cut the green onion, not very large. The proportions of onions and eggs can be different: it is allowed to take more or less of something.
  12. We mix everything, salt to taste. Black pepper can be added for flavor. Pour in vegetable oil: this way the filling will not turn out dry. Stir - and the filling is ready.
  13. We take the dough: you do not need to crush it. This is a very fast yeast dough that does not require long processing and proofing! Divide into equal pieces so that the pies are the same size.

  9. We spread the filling and carefully, without too much heating it, level it over the surface of the dough.

  2. Next, add finely chopped hard-boiled eggs to the onion in a skillet. Pour pepper and salt there, mix everything, fry a little more and remove from heat. The filling is ready!
  3. Now prepare the dough. To do this, melt the butter by adding sugar and salt to it. Then pour kefir and raw chicken eggs whipped into foam to the resulting mixture. Then add flour mixed with baking powder into this mass. Stir everything until smooth. The dough is ready!

How to cook yeast pies with onions and eggs in the oven

First, let's put the dough. Grind yeast into a bowl, add sugar to it, fill everything with warm water.

We knead the dough with a whisk (it is easier and faster for them to achieve homogeneity than with a fork) and add a glass of flour.


Knead everything again and remove the bowl to the side until the dough doubles or triples. As a rule, this happens in 10-15 minutes.


Sift the flour last into the dough and knead the soft dough.


The dough is kneaded perfectly, and after 5 minutes it completely ceases to stick to your hands. After kneading to such a state, cover the bowl with the dough and put it on the rise. If, nevertheless, your dough is capricious and even after kneading it strongly sticks to your hands, add another handful of flour. Here it is important not to interrupt it with flour, otherwise the pies will lose their softness, so if the dough sticks, but just a little bit, you don't need to add anything else! During the time allotted for the rise, the flour will disperse, and the dough will become soft and elastic. Ideally, if your dough has time to come up twice (I have time while I am filling): after the first rise, we knead it, after the second rise, we knead it and send it to the formation of pies.


In the meantime, the dough rises, we make the filling. Wash the eggs and, dipping them into cold water, boil until tender (hard-boiled).


Wash the green onions as well, then shake well to remove the water. We tear off all the darkened parts from the feathers and chop finely.


Dip the boiled eggs into cold water, peel and chop finely in the same way. Mix with onion, add salt - and the filling is ready.


Knead the dough that comes up and divide into several small koloboks. The larger you want to get the pies, the larger the koloboks should be. I got them 12. We crush each bun again, flatten it a little, then roll it into a cake up to 0.5 cm thick. Put the onion-egg filling on each cake. I like a lot of toppings, so I put 2 tbsp each. l., directly pressing it into the dough, so that it is easier to close up the edges.


We form pies.

Line the baking sheet with baking paper, if it is not oiled, grease it with oil and lay out the pies with the seam down. We give them 5-10 minutes. stand up and grow up again, after which we grease with protein and send to a preheated oven. Baking temperature - 200 gr., Time - about 20 minutes.
