I thought of this simple grated carrot salad almost by accident, but I was surprised how delicious it was. Take:

  • a couple of large carrots;
  • about 50-70 grams of hard cheese (I love Parmesan, but when it’s not there, I take any other);
  • 2-3 table. tablespoons of mayonnaise.
