For an elderly person, there is nothing better than starting your morning with a plate of oatmeal! It’s not without reason that the word “oats”   translated from Latin means "to be healthy"

It is curious that in England - the country with which this popular dish is traditionally associated - oats   the Romans originally brought as feed for horses, and only inXVI   century from it began to cook so belovedall oatmeal.

In the middle of XIX   century, the unique properties of oats began to study the chief medical adviser of the British army, Frank Buckland. He conducted one of the first large-scale studies, involving recruits from various regions of the country, and proved that the Scottish soldiers fed oatmeal were much stronger and more enduring than the British.

However, in Russia, oats were well known. The diet of our distant ancestors always included many dishes prepared on its basis. All kinds of jelly, pies, pancakes, casseroles and other goodies were certainly served to the table every day. Oatmeal was an indispensable dish during wedding feasts, Christmas parties or christenings. In the monastery booksXVII   century it is mentioned that porridge made from oats was an integral part of ancient Russian cuisine. It is impossible to imagine the days of Orthodox fasting without oat dishes. It took extremely little time to cook them, and the result exceeded all expectations - hearty, tasty and healthy.

About a hundred and fifty years ago, Swiss physician Bircher-Benner chose oats as an ideal base for the so-called “healthy food”, known as “muesli”, invented by him and widely used. Well-digestible and emollient oatmeal with milk or yogurt, a variety of additives of fruits and nuts, honey and dried fruits have become a classic breakfast dish all over the world, which is especially loved by supporters of a healthy diet.

A wealth of nutrients

The grains of this unique cereal contain up to 55% starch, 24% fiber, 11% fat and 20% protein with a high content of essential amino acids ( tryptophan and lysine).  The amino acid composition of oatmeal is the closest to muscle protein, which makes it a particularly valuable dietary product, because the body needs protein to grow and restore tissue. There are also saponins, carotenoids, vitamins, various sugars, essential oils, and minerals in oats. It contains much more iron than other grains (4.2 mg per 100 g), a lot of sulfur, silicon, phosphorus, potassium, magnesium, chromium, manganese, zinc, fluorine, iodine.

Vitamins and minerals of this cereal are involved in important metabolic processes of the body and reduce the risk of numerous diseases. So, for example, due to the presence of vitamins of the group IN,   the inclusion of oatmeal in the diet restores the rhythm of cardiac activity in the elderly, and the silicon contained in oats prevents hair loss.

Starch provides the body with "slow energy", this avoids a sharp increase in blood sugar, which is especially useful for diabetes. Soluble fiber with regular use reduces blood cholesterol, protecting the entire cardiovascular system.

The biologically active substances of oats improve the functioning of the liver and pancreas. Not so long ago, an enzyme was found in oat grains, acting like amylase (an enzyme of the pancreas), it helps the fast and high-quality assimilation of carbohydrates. The correct metabolism of fats is facilitated by specific substances present in the cereal - polyphenols.

And thyreostatins have a positive effect on the activity of the thyroid gland.

Oatmeal is an excellent remedy for chronic inflammatory processes. It is no coincidence that oatmeal is widely used in acute inflammation of the gastrointestinal tract. A variety of dishes are prepared for people who have had serious illnesses, as well as for asthenia and anemia from oatmeal, as a general tonic. By the way, the green grass of oats is not inferior to grains in its healing properties. Her infusion has a diaphoretic, diuretic and antipyretic effect.

Hercules giving strength

The "younger brother" of oats, or rather its derivative, is the well-known hercules. Unlike many popular cereals, it is made from whole grains of oats by the method of flattening. The basis of hercules is oat seeds, deprived of a rigid indigestible shell. Hercules is especially useful for older people, because it is well absorbed by the weakened gastrointestinal tract.

However, cereal producers still cannot completely get rid of the remains of this shell. But this has its plus. Passing through the intestines, they literally “scrape” its walls to a shine. Even modern medicine cannot offer a more effective and, importantly, inexpensive means of cleansing the intestines.

In recent years, scientists have proven that Hercules is an important source of antioxidants. preventing the formation of malignant tumors. In addition, antioxidants actively slow down the aging process of the body.

Gluten free (or gluten), moderate consumption of finely chopped oatmeal is useful for stomach ulcers. Gluten envelops the inflamed area, weakening all pain and contributing to the healing of ulcerative damage. Moreover, in this case, not only Hercules porridge is useful, but also raw Hercules in the form of granola, but they still need to be used with great care, since solids for an inflamed stomach can be difficult to digest.

We treat oats

Hippocrates wrote about oats as an excellent healing agent with general exhaustion and weakness of the body and advised drinking an infusion or decoction of oats without any ingenious recipes - like tea. It is useful for almost everyone. to strengthen the nervous system, heart, lungs, improve blood composition and metabolism . Prepare the infusion like this: unpeeled oats are grinded in a coffee grinder, put in a thermos and filled with boiling water at the rate of 1 tbsp. spoon in a glass of boiling water. Insist for 12 hours, then filter and drink.

For normal liver function you can prepare such a decoction: c start in 1.5 l of water to lower the silver object, bring the water to a boil and remove this object. Then pour 150 g of oats in the husk into the water, simmer on low heat for 15 minutes, insist for 2 hours, wrapping in a warm blanket, strain. For 10-15 days, drink a decoction 3 times a day for 0.5 liters 30 minutes before meals. During this period, eat light food, exclude fatty, fried foods and solid foods.

With insomnia   Rinse 500 g of oat grains with cold water, pour 1 liter of water, cook until half cooked, strain and take a decoction of 150-200 ml daily overnight, adding a little honey. The remaining grains can be added and used to make porridge.

Increase vitality   such a decoction will help: rinse 3 cups of oats thoroughly and pour 3 liters of water. Boil for 20 minutes over low heat, then remove from heat and wrap well for 24 hours or pour into a thermos. Strain the broth through a dense napkin, add 100 g of honey (if the water temperature is not higher50 ° C), close tightly with a lid. After the broth has cooled, pour it into clean bottles and refrigerate. Before use, add freshly squeezed lemon juice. Drink in small sips of 100 ml per day half an hour before meals. When the drink is over, make a new one, and so 3 times. The course is carried out 3 times a year - in spring, summer and autumn.

Oatmeal porridge stewed in a pot

Whole oats - 250 g; water - 1 l; from filling oil - 80 g; from ol, sugar to taste.

The traditional preparation of porridge is to simmer it in a pot in a hot oven. Such porridge turns out to be much tastier and healthier and frizzier than the one that was cooked in a saucepan on a gas stove.

Sort whole grain oats, rinse with water, put in a pan, pour boiling water and cover with a lid. Leave for approximately 8 hours at room temperature. Then shift the oats with water into a clay pot and put in an oven preheated to 100 degrees. Hold for approximately 2 hours.

Remove from the oven, add salt, sugar and mix thoroughly, add butter. For dietary purposes, you can season the porridge with yogurt.

Whole grain oatmeal I like more than Hercules, and even more so cereal, which does not need to be cooked at all. Probably also from the fact that the benefit of whole oats has been read. And the fascination with grain oats began with the fact that a very long time ago at one of the Tashkent bazaars, in the ranks of cereals, I saw a seller with a bag of oats. “Why is he?” I asked. In broken Russian, the seller began to explain that he was being treated, and he had many regular customers taking it. And what if I buy this oat, wash it, pour water in a glass, and drink it the next day, then I will become a chiroloi (very beautiful) and skin - zur, hair - zur. (Zur is a type of excellent - slang) And bending over to me, he whispered to her husband not to hear: “There will be no female sore. 70 years will be - you can give birth! ”Wow! I thought, this is how many children can be born on one oat. Finally, the seller said that the soaked grains should not be thrown away, cooked or added to the cake. There were no patients with diabetes among acquaintances, from which I probably did not encounter grain oats before. I won’t write for oat wonders for health. It’s written without me. Type in the search for "oat healing properties" and read out.

Well, after that meeting I began to read a lot about oats. Well, the same Makropulos Remedy, I concluded. Eat and live forever.

Now we are talking about a delicious viscous gelatinous porridge made from infused oat grains, boiled in the same water in which they insisted. One thing in such a mess is bad - it completely fights off the appetite. And this is sad. And I want nothing but her. This means that she performs some processes in the body. Therefore, if there are any chronic sores, first read about the properties of oats. Although serious contraindications to oats have not yet been identified, people with individual intolerance happen.

We sort out oats, clear from extraneous grains. Rinse well with running water. For soaking, I use a liter jar. I pour a quarter of the can and add boiling water to three quarters of the height of the can. Thus, the ratio of oats and water is approximately 1: 3. I leave to insist for the night.

Pour oats with water into a thick-walled saucepan, put on a stove and wait for boiling. As soon as it begins to boil, I reduce the fire to a minimum. Bring to a boil is not worth it. The thick infusion will froth and “run away” like milk. From that and the lid of the pan should not be closed. In general, it’s best, of course it’s better to simmer such porridge without boiling in the oven.

So, without boiling, porridge is evaporated for 40-50 minutes. To it (to porridge) you need to periodically approach and stir, removing the accumulated jelly from the walls. This infusion turns into a thick jelly, the grains are boiled. This jelly, by the way, is very good for a face mask to use. You can add honey. Wonderful effect.

Salt almost ready porridge. You can add raisins, cut into pieces of dried apricots or prunes. Steaming dried fruits in a porridge a little. Turn off the stove. Close the saucepan with a lid and leave to cool to a temperature at which porridge can be eaten without burning. This is on an electric stove. If the stove is gas, then wrap the saucepan with a towel and let the porridge cool down slowly.
Sugar and butter should not be added to such porridge. She is already surprisingly good. Moreover, it turns jelly-like, and there is no need to soften it.

Another time I’ll write about oatmeal in a cast iron, or about cakes. And I also think a lot about haggis.

Anticipating questions of Tashkent friends, I’ll say that our local Asianfood in yellow-blue packs began to produce whole grain oats, and it is sold in many stores - you just need to pay attention.

It is written without me.
