Based on practice, it can be seen that the correct organization of nutrition for patients with diabetes mellitus significantly facilitates their general condition.

The main principles of nutrition are quite easy to follow, since all recipes for diabetics are not only healthy, but also tasty.

You should know that in the family of a patient with diabetes mellitus, you should not specially take care of a separate table for him.

Enough, just to add some variety to recipes for diabetics.

Calculate your meal so that there is at least two to four hours between each meal.

Thus, breakfast, lunch and dinner are, as it were, diluted with several snacks (the so-called split meals).

At the same time, it is necessary to remember that it is impossible:

You can eat more food more often by increasing the number of meals and reducing the amount of servings taken.

Recipes for type 2 diabetics involve a varied, dietary meal that may even include some healthy sweets.

Try to remove all sorts of provocative foods (cakes, sweets, cookies) from sight, and keep a bright bowl of fruit in sight.

Every diabetic knows that it is forbidden for him to use:

  • sugar;
  • potato;
  • pasta;
  • baked goods;
  • bread;
  • most cereals are rich in carbohydrates.

However, not everyone can even imagine what a huge number of tasty and full-fledged dishes they can choose for their menu.

The basis of a diabetic diet is usually vegetables and fruits, in a ratio of (approximately) 3: 1.

For example, if you take about 800 grams of vegetables, then you should take about 300 grams of fruit.

Fruits and vegetables go great with:

  • fermented milk food (about 500 grams per day);
  • fish and meat (about 300 grams);
  • mushrooms (up to 150 grams).

In addition, you can consume carbohydrate foods:

  • about 100 grams of bread;
  • about 200 grams of cereals or potatoes.

Sometimes you can treat yourself to something delicious.

Try to divide your regular serving into two equal portions.

The first part should be rich in vegetables.

It is with them that you need to start your meal.

The second part is halved again.

Place protein food in one part (cottage cheese, fish, meat).

Put starchy foods (rice, pasta, potatoes, whole grain bread) in the second part.

With such a division of food, the sugar level will always show a stable mark.

Instead of industrial juices and soda, you can make all kinds of homemade drinks for yourself:

  • simple, clean water;
  • fermented milk drinks;
  • coffee.

Drink before meals, not after.

If you are uncomfortable with eating raw vegetables, then prepare various pates or stews from them (beetroot, carrot, legumes, eggplant, and so on).

If there is neither time nor desire to prepare food, buy ready-made frozen mixtures that you just need to heat up or stew.

While eating, try to "listen" to your body, chew food carefully and slowly, do not swallow it hastily.

The brain takes a certain amount of time to become saturated.

It is better to wait a little and, if necessary, take a small addition.

Products required for consumption:

You can refuse:

  • alcohol;
  • semi-finished meat products;
  • sweet soda;
  • industrial juices;
  • yoghurts;
  • sweet curds;
  • condensed milk;
  • Sahara;
  • products containing sugar (ice cream, marmalade, honey, chocolate, jam);
  • white flour products;
  • bananas;
  • grapes.

Recipes for type 2 diabetics should be used for the rest of your life.

This diet will help you avoid blindness and cardiovascular disease.

In addition to food, you can give yourself other sensual pleasures and pleasures:

  • fill your home with music, greenery and flowers;
  • play with your favorite pets;
  • relax (walk) in the park or garden;
  • take a shower;
  • go for a massage;
  • light scented candles.

Recipes for diabetics

Diabetes is a disease associated with impaired carbohydrate metabolism. There are two types of it - the first and the second.

Type 2 diabetes is diagnosed in 90% of patients. The good news is that it is treatable. To do this, you need to carefully select the menu.

You should add foods that lower sugar levels to your diet.

Unfortunately, there are no such foods, but there are some that have a low glycemic index and prevent sugar levels from rising. These products include eggplant, zucchini, cabbage, lentils, sea fish, greens, and lean meats.

Many sufferers fear that the transition to a healthy diet will be painful. There are three concerns: the first is that the dishes will not taste good, the second is that they will be expensive, and the third is that they are very difficult to prepare.

But these are all nutritional myths. Diabetic recipes are simple and inexpensive.

We would like to offer you:

  1. As an appetizer - tuna salad.
  2. First, lentil soup.
  3. On the second - ratatouille.
  4. For dessert - oatmeal cookies.
  5. As a drink - fruity spiced chocolate.

Some may be surprised, because the menu includes pastries. But in our defense, let's say that diabetics can have sweets, but they must be "right."

The main thing is that the confectionery does not contain glucose and fast carbohydrates.

    The amount of ingredients to your taste, I add more celery and cucumber. Voila, a delicious, healthy and most importantly hearty salad is ready. Usually I make it for dinner, it helps to cope with the feeling of hunger.

    Bon Appetit.

    I prefer to fight off the evil comrade chebgob with Greek cuisine. Especially popular at my table is the traditional Greek salad, salad hariatics as the native Hellene would call it) The peculiarities of preparing the salad are coarsely chopped, not chopped vegetables.

    It should also be noted that when preparing a salad, the Greeks peel the cucumbers from the peel, and do not always stir the dish before serving, preferring to do this immediately before eating.

    So, we need:

    - feta cheese - 200 g (can be replaced with feta cheese)
    - tomatoes - 3-4 pcs.
    - cucumbers - 1-2 pcs.
    - sweet bell pepper - 1-2 pcs.
    - juice from half a lemon
    - pitted olives - 80 g
    - olive oil
    - herbs - parsley, celery, basil
    - rye crackers

    Then everything is simpler than steamed turnips)) We chop vegetables and cheese into generous cubes, olives in half (you don't need to touch them at all), greens and a little salt are also there. Season with the juice of half a lemon and a spoonful of oil. Before the devour. HM. sprinkle with crackers on top)) Bon appetit!)))

    Diet for type 2 diabetics: a weekly menu with recipes

    Many people want to stay in shape and look good. People with chronic diseases are forced to listen to their body and be very careful when choosing methods of losing weight. Diabetics, especially those with type 2 diabetes, should pay close attention to their diet.

    By lowering the daily energy value of the menu, the diabetic manages to lose weight, which means that the sugar indicator will eventually reach the permissible standard.

    Unfortunately, a low calorie weight loss program is not enough for type 2 diabetics. Therefore, experts consider it their duty to inform insulin-dependent people that a low-carbohydrate diet can improve blood sugar. It is effectively used in the treatment of both type 1 and type 2 diabetes.

    In addition, it is quite satisfying, not strict, which means that it will not turn a person into a hungry dystrophy.

    Basic principles of the diet

    The diet for type 2 diabetics is not a short period of time, but a healthy eating program that must be adhered to throughout the rest of your life. You can't let everything go by itself, only constant attention to your own health can help a diabetic avoid many health problems.

    If you're still unsure about a low-carb diet, the table below compares it to a low-calorie diet.

    Currently, there are more than 10 million patients with diabetes in Russia, and their number is constantly growing. Scientists have studied the mechanism of the disease well enough.

    And today, patients with diabetes mellitus can lead a full life - but only if they receive adequate drug therapy and follow a diet.

    When the first symptoms of diabetes appear, you should immediately consult an endocrinologist. These symptoms include: constant thirst and a feeling of dry mouth, frequent urination, itching (often in the genital area), sleep disturbance, decreased performance, deterioration in general health, etc.

    Diabetes is sometimes indicated by sudden weight loss. However, much more often type 2 diabetes mellitus is detected in people with overweight, it is not without reason that it is often called "obese diabetes."

    It is important to understand that people do not die from diabetes itself - they die from its complications. These include diseases of the cardiovascular system, up to heart attacks and strokes, diabetic nephropathy, circulatory disorders in the lower extremities (which can lead to their amputation); diabetic retinopathy causes blindness.

    In short, the quality of life is drastically reduced if treatment is not started on time with the help of non-drug and medical methods. Their choice depends on the characteristics of the course of the disease and concomitant diseases and is determined by the endocrinologist.

    The main symptom of diabetes mellitus is an increased level of glucose in the blood due to impaired glucose tolerance, that is, the body's ability to use it as an energy source. Glucose enters our body from food. And insulin, a hormone produced by the pancreas, is needed to process it.

    The paradox is that even with sufficient production of insulin in diabetes, insulin resistance occurs in the body, that is, a decrease in the sensitivity of muscle, adipose and other tissues to insulin.

    Impaired glucose tolerance is currently found in every seventh person over 40 years old, so all of them are at risk of developing type 2 diabetes.

    The importance of proper nutrition in diabetes mellitus

    Along with drug therapy and a healthy lifestyle, proper nutrition plays a decisive role in type 2 diabetes. It allows diabetics to lead a normal life and maintain their ability to work for a long time.

    Diet is commonly talked about, but most healthcare professionals tend to believe that a type 2 diabetes diet — a healthy, balanced diet — is ideal for all people, even in the absence of diabetes or other medical conditions. The body receives all the nutrients it needs in natural form.

    However, the fat and calorie content of the diet is reduced, and the emphasis is on healthy and well-prepared meals.

    The diet for diabetes should be fractional and include at least 4-6 meals - 3 main and 2-3 snacks, and at a certain time and in moderation. This will keep your blood sugar constant by getting small amounts of glucose on a regular basis.

    Fast-digesting carbohydrates, also called simple or refined carbohydrates, must be excluded from the diet. These include all types of sugar and confectionery as well as fine flour baked goods.

    You should also limit salt and salty foods, which cause water retention in the body, resulting in an increase in pressure, that is, the development of hypertension and other adverse effects.

    Since the overwhelming majority of patients with type 2 diabetes are overweight, a diabetic's diet should not only be balanced, but also low in calories. Excessive consumption of foods containing large amounts of cholesterol (fatty meats, sausages, fatty dairy products, etc.) causes weight gain and leads to cardiovascular diseases, so you will have to change your eating habits.

    What is included in the diet for type 2 diabetes

    The diet should be balanced and varied, include many products, primarily of plant origin (vegetables, fruits, cereals, berries, nuts, herbs). These foods are rich in vitamins, microelements, phytonutrients, and dietary fiber, which ensure the normal functioning of the gastrointestinal tract without constipation.

    No less important in diabetes is the way food is cooked. Preference should be given to steamed or grilled dishes, stewed, baked, boiled, but it is strongly recommended to refuse fried dishes.

    As a rule, patients with type 2 diabetes mellitus of moderate to mild severity are advised to consume the following foods:

  • Bread: rye, protein-bran, protein-wheat and wheat from 2 grade flour, whole grain. Limit consumption. Butter baked goods are excluded.
  • Meat: lean beef, veal, lamb, rabbit. Pork, even lean in appearance, is best avoided, as it contains hidden fat. You cannot completely give up meat, because it is the most important source of protein. Fried meat should be avoided!
  • Poultry: turkey, chicken, goose (duck is not recommended because it has too fatty meat). The breast is the most useful. The skin must be removed as it contains a lot of fat.
  • Sausages, sausages, smoked meats: smoked meats and smoked sausages should be completely excluded. Cooked sausages and sausages contain hidden fat, in addition, many food additives (preservatives, flavor enhancers, etc.) are used in their production, so their consumption should be limited as much as possible. Diet sausages and sausages in limited quantities are allowed.
  • Fish: lean and moderately fatty fish; canned fish in its own juice. It is recommended to eat fish 2-3 times a week.
  • First courses (soups, borscht, beetroot soup, okroshka): weak low-fat meat, fish or mushroom broths with vegetables (limit potatoes) and permitted cereals are used for their preparation.
  • Milk and fermented milk products: must be included in the daily diet, but they must be low in fat. Low-fat cottage cheese and low-fat unsalted cheese (feta cheese) are recommended, sour cream with a fat content of 15% is limited. It is recommended to drink a glass of low-fat kefir at night.
  • Oils and fats: unsalted butter and ghee (limited), use of unrefined vegetable oils is recommended. Hydrogenated fats, including culinary and confectionery fats, lard, hydro fat, spreads, hard margarines should be discarded, since they provoke the development of atherosclerosis.
  • Vegetables: the consumption of potatoes, beets and carrots should be limited (no more than 200 g per day), but other vegetables (cabbage of all kinds, lettuce, cucumbers, tomatoes, zucchini, pumpkin, eggplants, radishes, legumes) can be eaten in almost unlimited quantities , both fresh and boiled, stewed or baked.
  • Fruit: fresh fruits, sweet and sour berries in any form, with the exception of grapes, raisins, bananas, figs and dates.
  • Drinks: tea (preferably green), coffee with milk (preferably insoluble), self-prepared juices from vegetables, unsweetened fruits and berries, unsweetened compotes (prepared with a sugar substitute), rosehip decoction. Ready-made juices, nectars, etc. will have to be abandoned, as well as carbonated drinks, lemonades and alcoholic beverages.
  • Eggs: 1-1.5 pcs. a day, soft-boiled or in the form of protein omelets. Nutritionists recommend refraining from eating egg yolks of fried eggs in a pan.
  • Porridge: buckwheat, oatmeal, millet, barley, pearl barley. Rice - very limited, with brown rice preferred. The semolina is excluded.
  • Pasta: limited, preferably durum wheat.
  • But what will have to be completely abandoned:

    • cakes, pastries from butter and puff pastry,
    • cream, salted cheeses and sweet curd snacks,
    • rich fatty broths,
    • milk soups with semolina, rice, pasta;
    • salted fish and canned fish in oil, caviar;
    • salted and pickled vegetables;
    • preserves, jams, confitures, sweets, ice cream.

    Since sugar is completely eliminated from the diet, diabetics usually use sugar substitutes, not all of which are useful. Therefore, when choosing a sugar substitute, it is necessary to consult an endocrinologist.

    And don't forget about regular fractional meals. As a snack between main meals, you can use fruits and vegetables, a glass of kefir, etc.

    Then your weight will gradually decrease, and your blood sugar level will remain at a stable level.

    Diabetes can be lived with as long as you follow the right diet.

    Nutrition rules

    Menu for type 2 diabetics, diet, recipes, contraindications

    It is possible to compose a menu for type 2 diabetics so that a person does not feel deprived, and his diet is varied and refined. Yes, you cannot eat foods that are high in carbohydrates. But are there really few delicious products in the world besides potatoes, pasta, cereals and sugar?

    Diabetic menus can be so compelling that even a healthy person will adopt them.

    The basis of the diet is vegetables and fruits. You can eat up to 900 grams daily. vegetables and up to 400 gr. fruit.

    They can be combined with fish, meat, mushrooms, fermented milk products. 300 gr. meat and fish, 0.5 liters of dairy products are both healthy and satisfying. In type 2 diabetes, some carbohydrates can also be included in the menu.

    200 gr. potatoes per day, as well as 100 gr. bread or 2 tbsp. spoons of cereal will supplement the diet.

    Avoid flour and sugary foods. Abuse of these products leads to impaired carbohydrate metabolism with a progressive increase in blood sugar levels. The task of the diet is to restore the cells of the body to the ability to absorb sugar.

    Therefore, any cakes, sweets, cookies are your enemies. Replace them with vegetables, fruits and berries. And for those who generally cannot imagine life without sweets, there is a loophole: one day, exclude bread, potatoes, cereals, fruit juice and fruits from the diet and replace all this with vegetables.

    Then you can eat a small piece of sweet dessert (up to 100 grams). Such a perfectly acceptable and most importantly delicious menu for type 2 diabetics will make you feel much better.

    What to exclude from the diet and how to replace it

    Let's discuss how to eat properly so that your blood sugar does not rise. We mentally divide the plate into two parts. One half is occupied by vegetables, with which you will begin your meal.

    Divide the other half in half again. One of the obtained parts will be proteins (meat, fish, cottage cheese), the second starchy foods: potatoes, rice, whole grain bread or pasta. If the carbohydrates contained in them enter the body along with the proteins or fats contained in nuts or vegetable oil, then the blood sugar level will not rise.

    This tracking of portion sizes allows you to eat a variety of foods and not harm your body.

    Go for drinks that are easy to make yourself. There is a lot of sugar in commercial juices, and even more so in all kinds of carbonated drinks.

    You can also drink freshly squeezed orange juice, mix still water with lemon juice. You can drink mineral water, tea, coffee (without sugar), fermented milk drinks.

    Just drink them not after meals, but before meals.

    When making cutlets, add vegetables or oatmeal instead of bread. Skip the muesli, switch to regular rolled oats and bran.

    You must remember that sugar, which is dangerous for you, is contained in jam, chocolate, ice cream, marmalade, white flour products, i.e. in cakes, pastries, pasta, as well as in grapes, bananas, sweet dairy products, condensed milk. These foods should be eliminated from the diet once and for all.

    How to cook and how to eat

    For those who do not like raw vegetables in large quantities, nutritionists advise to bake vegetables in the oven, make caviar and pates from them. Beets, carrots, eggplants, avocados, and legumes are great for you.

    You can also buy frozen vegetable mixes.

    It is best to take food 5-6 times a day at the same time, but no later than 1.5 hours before bedtime. And be sure to have breakfast. This helps maintain a stable blood sugar level.

    Snacks in the form of an apple or a glass of kefir are not contraindicated for you either.

    Eat slowly so that the body understands that you are offering it everything only the most delicious and healthy. Not full?

    The additive won't hurt you! You have prepared only the necessary products.

    A wide variety of sweeteners are available commercially today. The dietitian will definitely advise you on the most suitable one.

    With type 2 diabetes, the diet will need to be followed for life. This is the only way to avoid complications of the disease and maintain your figure.

    Diet and nutrition for type 2 diabetics - recipes and recommendations

There are 2 types of diabetes mellitus, depending on the production of the glucose-lowering hormone insulin by the pancreas - insulin-dependent type 1 (increased glucose is associated with insufficient insulin) and non-insulin-dependent type 2 (impaired glucose utilization by cells at normal insulin levels) diabetes mellitus.

    Regardless of the type, adherence to specific dietary guidelines is key in diabetes management.

    Reasons for the appearance of type 2 diabetes mellitus

    The essence of type 2 diabetes mellitus is the formation in all cells of a decrease in the sensitivity of membrane receptors to the physiological action of insulin (insulin resistance). At the same time, the utilization (assimilation) of glucose by the cells of the body from the blood decreases.

    The development of cell resistance to insulin develops due to its prolonged increased synthesis by the pancreas against the background of the intake of a significant amount of glucose from food. This process develops for a long time, for years, therefore diabetes mellitus is usually observed in people over 40 years old. There are several reasons for the development of type 2 diabetes mellitus:

    • Abuse of sweets - increased consumption of glucose, which is part of sweets, flour products, provokes a prolonged increase in the level of insulin in the blood and sensitivity to it in all cells of the body.
    • Age - People over 40 are more likely to develop type 2 diabetes.
    • Heredity - the susceptibility of cells to the development of insulin resistance is inherited from parents to children, if dietary recommendations are not followed in such cases, the development of pathology of carbohydrate metabolism can occur up to 40 years.
    • Fatty - An increased amount of adipose tissue in the body reduces the sensitivity of cells to insulin.

    Regardless of the causative trigger, the type 2 diabetes diet is key to re-establishing insulin sensitivity in cells.

    Nutritional guidelines for type 2 diabetes

    Proper nutrition for type 2 diabetes mellitus includes the following basic rules:

    • The first and most important rule is strict adherence to the dietary rules and your doctor.
    • Frequent (3-5 times a day) fractional meals in small portions.
    • Correction of body weight - it is necessary to try to reduce it, as there is a direct correlation between weight and the sensitivity of cells to insulin.
    • To exclude the intake of fatty foods as much as possible, since fats, entering the bloodstream from the intestines, impair the utilization of carbohydrates by the cells of the body.
    • Individual selection of a diet, depending on the age, gender and physical activity of a person.
    • Control of the amount of carbohydrate intake. The easiest way to count bread units (XE). Each food product contains a certain amount of bread units, 1 XE increases blood glucose by 2 mmol / l.

    It's important to know! 1 Bread unit (1 XE) is a measure for calculating the amount of carbohydrates in foods.

    1 XE = 10-12 gr. carbohydrates or 25 gr. of bread. For one meal, you need to consume no more than 6 XE, and the daily rate for an adult with a normal body weight is 20-22 bread units.

    On the eve of the New Year and Christmas holidays, in addition to the excitement with the choice of gifts, there is another unspoken competition that no one ever officially holds, but every hostess dreams of becoming a winner. As many have already guessed, this is a culinary competition, the purpose of which is to set the table with delicious and exquisite dishes in order to surprise guests and acquaintances with their culinary talent later.

    It is with a feast that many associate Christmas and New Year. But what about those who, due to certain circumstances, are shown a diet? How, for example, can a diabetic refuse a caviar sandwich or a baked goose, an offered glass to hot with a spicy sauce? After all, those who are forced to limit themselves in nutrition want all this even more than people who do not restrict their diet with diets, not only for the Christmas holidays, but also in everyday life. Or maybe not everything is so scary, and you can take a good walk without harm to your health? Or will momentary weakness necessarily lead to hyper / hypoglycemia?

    How can you set the New Year's table without the risk of a jump in the blood sugar of a patient with diabetes? First of all, one should start from what type of diabetes the patient has. New Year and Christmas table for diabetics suffering from the first form of the disease, there are no special restrictions on food. The main thing is that the dose of insulin is always at hand and the dosage in the syringe is correctly selected. But the selection of diabetic dishes for the second type of the disease can become a headache for the hostess who is expecting people with blood sugar problems to visit.

    First and foremost, you need to decide what should not be served for a diabetic dinner at Christmas and New Years. "Taboo" products include:

    After familiarizing yourself with such strict requirements for diabetic New Year's and Christmas dinners, the first emotion is bewilderment, because most people may think that in this case absolutely everything is impossible, and you can forget about the holiday. However, this is not the case, with the right approach, the diabetic table will include a variety of tasty and healthy dishes. The main thing is a sense of proportion. Adhere to the recommendations of domestic and foreign doctors on the rules of behavior during the New Year's feast for diabetics.

    Salads

    Sitting down at the New Year's table with diabetes, it is best to start your meal with salads. Fiber from fresh vegetables quickly and easily fills the stomach, dulls hunger and does not raise blood sugar. It is important that corn, carrots and potatoes are not included in the dishes prepared for the Christmas diabetic table. Otherwise, it will be necessary to count XE. Particular attention should be paid to dressing salads, sour juice (lemon) or sunflower oil (olive) is best, but not mayonnaise or fat sour cream.

    The most appropriate would be vinaigrette, salads with tomatoes, cucumbers, cabbage and herbs, seasoned with vegetable oil or apple cider vinegar. So that housewives in panic do not start scouring the web on the eve of the New Year, we will give examples of such salads, especially since on most culinary sites the ingredients of diabetic dishes do not correspond to what is recommended for diabetics.

    So, the vinaigrette is made quite simply and traditionally: you take carrots, potatoes and beets in different proportions and cook them separately. Then take 1/10 of the amount of the previous ingredients onion and 6/10 pickled cucumbers. All this is cut, mixed and shredded cabbage is added. Season the prepared salad with 1/7 olive oil and add a couple of drops of apple cider vinegar. The vinaigrette is not only useful for diabetics, but also delicious, so guests who do not limit themselves to diets will also enjoy it. However, you should not abuse this dish, since the potatoes, which are part of the salad, can affect the blood sugar, while boiled carrots do not pose any danger.

    Option two - tomato salad: take 6-7 tomatoes, wash them, cut them and put them on a flat dish, squeeze out a little garlic, onion rings on top, salt, pepper, cool a little and season with olive, then fill them with plenty of greens.

    You can also serve asparagus salad for New Year or Christmas. To do this, cook and then chop 3-4 Brussels sprouts, chop a cucumber and three tomatoes. Mix everything with half glasses of green peas and fill with 100 grams of fat-free sour cream.

    Do not worry, for diabetics, sour cream is not only possible, but also useful, the main thing is that the product is low-fat (up to 10% fat) and consumed in small quantities.

    Hot dishes

    What a New Year's table without smoked duck, baked piglet, fatty sausages and other dishes in the same spirit? The correct answer is diabetic. Since diabetics cannot do all this, shouldn't these dishes be served at all?

    Not certainly in that way. In fact, if you recalculate XE, then with diabetes you can try everything, but a little, so to speak, in homeopathic proportions. At the same time, you should not burden the already heavy food with side dishes or sauces, it is much better to take a piece of smoked duck and eat it like that than pour it over with sour cream gravy or mayonnaise, and then eat potatoes or pasta.

    Hot dishes from low-fat marine fish, beef, rabbit or chicken (without skin) will look useful and appropriate on the table of a diabetic. All this can be stewed, boiled or baked without fear of strong fluctuations in blood glucose.

    Vegetable stew is also a good option for the Christmas and New Year holidays with diabetes mellitus. If a vinaigrette was made on the festive table of a diabetic patient, then the stew must be prepared according to a recipe that does not involve potatoes. In this case, eggplant mushroom stew will do. For this dish, you will need 5 medium eggplants, 2 large onions, 700 g of porcini mushrooms or champignons, 1 glass of low-fat sour cream, 3 tablespoons of buckwheat flour or wholemeal flour and half a glass of olive.

    Onions are fried in a pan in rings, the eggplants are first diced and breaded in flour, and then fried separately. When the eggplants become soft, they are laid out on the bottom of a deep brazier, chopped mushrooms and onions are poured there, then the remaining eggplants. Beat the rest of the flour with sour cream, add salt and pour the vegetables. We poke all this with a lid and bring it to readiness in the oven.

    If, in addition to stews, fish is served as the only representative of meat dishes for the New Year's table, then a little rabbit meat can be included in the recipe.

    Ketchup, mayonnaise and mustard

    What's hot without sauce !? Mustard, mayonnaise and ketchup have become the representatives of the traditional sauce in recent years for Christmas and New Years. All these 3 sauces are not recommended for diabetics. The fact is that store mustard contains starch and sugar, which irritates the gastrointestinal mucosa and can exacerbate ulcers. Ketchup, like mustard, contains sugar and starch, therefore it is absorbed in the body in the form of glucose. Mayonnaise is rich in flavorings, stabilizers, preservatives, and vegetable and animal fat mixtures, among others. Trans fats, which are part of store-bought mayonnaise, are not broken down by our body and, entering the bloodstream unchanged, simply settle on the walls of blood vessels, in the kidneys and liver. That is, there is an overload of organs weakened by diabetes. The same thing happens with flavors and flavor enhancers.

    In general, any sauce or product with a high starch content is undesirable in diabetes, since its use can cause a long and persistent increase in blood sugar.

    However, the devil is not so terrible as he is painted. All of these sauces can be made at home so that they meet all diabetic standards. Moreover, this can be done not only in the New Year!

    Homemade mayonnaise requires 1 tablespoon of lemon juice, a couple of cloves of garlic, half a teaspoon of sugar, mustard and salt, and 160 ml of vegetable oil for its preparation. It can be recommended only for people with type 1 diabetes, for those diabetics who, in addition to the underlying disease, are obese, it is better to completely abandon mayonnaise sauce.

    Homemade ketchup is made on the basis of tomato paste, which is diluted with boiling water to the required thickness. Add salt, pepper, lemon juice, sweetener and bay leaf, bring the mixture to a boil, then remove the bay leaf and let the broth brew. For a more piquant flavor, you can add braised cabbage, zucchini, beets, or onions.

    Mustard is made from powder, which is poured with boiling water in a glass container until sour cream is thick. For 200 grams of the resulting mixture, add a spoonful of apple cider vinegar, a little pepper, salt and sweetener.

    Snacks

    What is a New Year's table without canapes and other snacks? And what canapes can be if bread is a lot of XE? If so, the snack can be made with high fiber diabetic cookies. As an example, you can use the recipe for canapes with avocado and regular cookies. To create such a snack, you need to take 200 grams of mint tofu, a tablespoon of lemon juice, 2 teaspoons of chopped coriander, a tablespoon of chopped garlic and 4 avocados. All this is ground together in a blender and spread over cookies.

    desserts

    Everyone wants something tasty at the end of the feast. But what is meant by this concept (cakes, pastries, sweets, ice cream) is either not allowed at all, or not recommended. All these products contain sugar, which means that they cannot be consumed, especially after a plentiful feast. Ice cream and other cold desserts are especially dangerous not because they themselves quickly raise blood sugar, but, on the contrary, significantly slow down the process of assimilating food. This means that the injected dose of insulin can enter the bloodstream before the sugar from food gets there, which is fraught with hyperglycemia.

    Therefore, it is better if baked apples with cinnamon, biscuits or stevia biscuit are served as a dessert for the New Year and Christmas table for the diabetic.

    For biscuits and biscuits, it is best to use flour or wholemeal or buckwheat, which is good for digestion and has a very low glycemic index. The biscuit is prepared quite easily and quickly: 4 eggs are mixed with a glass of coarse flour and a few stevia leaves, all this is ground in a mixer, a little vanillin is added and soda is quenched. The resulting mass is baked in the oven for 25 minutes. In these recipes, stevia acts as a natural sweetener that has no contraindications.

    The cookie has a more complex recipe: a glass of buckwheat flour, half a glass of whole grain flour and 2 tablespoons of rye bran are mixed with an egg and 3 tablespoons of stevia, a little baking powder and vanillin are added. The resulting mixture is laid out in molds and baked for 15 to 20 minutes.

    It is worth noting that stevia is much sweeter than sugar and by creating desserts with this natural sweetener, you can please not only diabetics present at the table, but also other sweet tooths.

    Alcohol

    Some of the patients with type 2 diabetes, the consumption of alcohol for the New Year's table, is allowed, but strictly in a certain amount. For a man, this dose should not exceed 30 g of alcohol, for women, the dosage is three times less. And then, before you allow yourself to drink, you need to ask what the attending physician thinks about this. It should be remembered that getting into the blood, alcohol enters the beta cells of the pancreas, which leads to a decrease in sugar in the patient. In parallel, the blocking of substances that destroy insulin occurs, which prolongs the period of its presence in the body, thereby achieving the effect of double administration of insulin. All this can lead to hypoglycemia in a diabetic 13-14 hours after drinking alcohol. At the same time, it is not possible to adjust the dose of insulin on your own, since it is impossible to compensate for consumption in bread units, and different sugars enter the bloodstream at different intervals.

    The rate of glucose absorption is influenced by factors such as the types of foods consumed, their proportions, and the temperature of the food. Warm food accelerates the assimilation of food, while cold food, on the contrary, slows it down. The absorption rate is also influenced by the presence of fats and the texture of the food. Therefore, it is better to drink it not with alcohol, but with fresh juices, preferably vegetable ones.

    Everything given as a sample menu for the New Year, for one person with diabetes, is a lot. Of course, I want to try everything. Therefore, in order not to harm your health, divide your usual portion of food in half. Do you like a big plate of salad? Take a saucer, try something different, and if at the end of the meal there is room in your stomach, you can always return to your favorite dish. This is especially true for spicy snacks, fatty meats and dairy products.
