How to get rid of the unpleasant smell, because of which many people dislike this delicious offal, and how to cook the most delicious and tender beef liver pancakes, you will learn below. In the meantime, I would like to say about the benefits of a sub-product. Indeed, the beef liver contains useful substances, which to saturate the body will be enough to eat only 100 g per day. It has everything the body needs: vitamins A, B, C, D, E, K and useful elements such as potassium, magnesium, sodium, phosphorus, iron, iodine, zinc. Beef liver is a low-calorie product, 100 g contains only 127 kcal, so it can and should be included in the diet menu if you want to be healthy and beautiful. This recipe proposes frying pancakes in vegetable oil, but they can be steamed without any problems, and in this form, the dish can also be given to small children (the main thing is that there is no allergy to tomatoes).

Just some 200 years ago, the liver was considered a delicacy among the nobles, but today it can be bought on the market without any problems. But the choice of the product should be approached thoroughly, because we do not forget that the liver of any living creature is a natural filter from toxins entering the body. The quality of the animal's diet also affects the appearance of the liver. Young cows have a light reddish-brown liver, while older animals have a more intense, bright red-brown, burgundy color. In addition, there should be an even and smooth film-shell on top, without defects and bubbles under it. The smell of the product should be fresh, slightly milky. If the liver is gray or gray-brown faded in color, or with a faint smell of ammonia, or with uneven contours and very loose, such a product should not be taken.

Beef liver fritters are very simple and quick to prepare. The recipe will be mastered even by the culinary specialist who has never cooked anything better than fried potatoes in his life. For convenience, you need a chopper or powerful blender to turn all the ingredients into a smooth paste. It will also be convenient to use a meat grinder. A hand blender is not a very good option, although it grinds the product, but veins remain that will be tough in the finished dish. Liver pancakes can be served as an independent dish, for example, with fresh vegetables, and as an addition to side dishes of your choice. Garlic and spices can be added to enhance the flavor, but this is not necessary. You can also experiment with vegetables in the composition. The main ones are carrots and onions, you can add tomatoes to them for sourness. And sometimes grated potatoes, pumpkin, cabbage are added. In addition, liver pancakes are prepared with semolina, which thickens the liquid mass, absorbing excess moisture.
