Kefir brushwood, lush

This version of this ordinary pastry always turns out soft and tender, as kefir is used in it. But this is not the most important thing, it turns out to be very light and airy. Although yeast is not used at all in it and it is prepared without vodka.

Love all sorts of sweets and fragrant pastries, then you may be interested in this note:

Brushwood from batter on water with molds

I remember this type of brushwood from childhood, like my grandmother's. This is her super tasty USSR-Rovsky version, which our grandmothers loved to cook so much and the most economical kind. Although, of course, a lot of oil is used, I would not call it very economical 🙂, perhaps a low-budget option. Such cookies are not for the lazy, you need to spend a lot of time.

And what beauty it turns out is just lovely, the main thing in our time is to find such molds, but if they are not there, then you can buy them, as I did recently, or cook them without molds, but of course, based on another recipe not batter.

We will need:

  • egg - 2 pcs.
  • water or milk - 1 tbsp.
  • sugar - 0.5 tbsp.
  • salt on the tip of a knife
  • vodka - 1 glass
  • flour - 1 tbsp.
  • frying oil

Cooking method:

1. Beat the egg, sugar and salt with a whisk so that there is a slight foam. Add milk and water to eggs. Stir, then add vodka.

2. What do you think vodka is for here? In order for the crunchies to take less fat into themselves. Add flour to the ingredients gradually, mix well so that there are no obstacles, the dough should turn out to be liquid like sour cream.

3. Let it rest aside for 20 minutes with the lid closed. Now take a special curly stick with a shape and place it in a preheated pan with vegetable oil. Soak in the oil for 1 minute and then dip the stick in the dough so that the dough sticks halfway to the mold.

Important! The pan with oil should be well heated, but the oil should not boil in it.

And now fry until cooked, that is, until a beautiful color. Don't worry, it will fall behind on its own.

Openwork, figured, lace cookies are ready! Oh how great it looks. And with condensed milk or jam, it will disappear from you in a matter of minutes.

Interesting! Have you ever heard about pink or salted brushwood, today I found such a small note in which I learned that if you do it without sugar, but only with salt, then homemade chips may well turn out. Salt can be added to frying oil. To make this pastry pink, you need to add beet juice or raspberry juice to the dough.

Puff pastry brushwood in the oven

This option is the easiest, because the dough will be used store-bought, ready-made, so it will take very little time to prepare such a miracle. So, I suggest you look at this option:

Brushwood in a slow cooker

Of course, you can cook this delicacy as a miracle helper. To do this, take any kind of dough for brushwood and bake, fry in a multicooker bowl.

It is a pleasure to fry in it, because all the bowls are very deep. Pour in the vegetable oil, heat the oil well on the “Frying” mode, and place the finished crunches there. Easy and fast, and even completely without splashing.

Tatar brushwood

Well, in conclusion, I would like to show you a recipe for brushwood in Tatar style, or as they also call "Urama" or "Kosh tele" - oriental sweet roses. This version will not use powdered sugar, instead it will be a sweet dousing of sugar.

  • sugar - 2 tbsp
  • flour - enough to make an elastic dough, like on dumplings
  • water or milk - 4 tablespoons
  • soda - 0.5 tsp
  • vegetable oil

Sugar Syrup:

  • sugar - 1 kg
  • water - 500-700 ml

Cooking method:

1. Mix all the ingredients for the dough and knead the dough. Soda can be extinguished in vinegar if desired.

2. After kneading, put the dough to rest for thirty minutes, covering it with a towel.

Sticks can be taken to eat the roll.

4. Take a deep saucepan, add vegetable oil and heat strongly. Put in deep-frying such beautiful flowers.

Important! When the syrup boils, do not forget to remove the foam.

That's all for me. Bye-bye everyone! See you tomorrow on this blog!

For many years, what only a variety of pastries has not been invented by chefs for tea. Among all this delicious variety, brushwood can be recalled. There are various variations in the preparation of brushwood, recipes have been created with different additives. Usually brushwood is made in the form of curls, which are fried in oil.

Brushwood can be prepared on the basis of different products. So, if you cook brushwood in ordinary water, then baking will be tighter. If the brushwood is made on sour cream or kefir, then it will be airy and tender. If you want to get a more crispy and crumbly version, then cook brushwood with the addition of vodka. Fans of crispy, but at the same time softer brushwood, should use the recipe for making brushwood in milk.

One of the most popular options for making brushwood is baking with condensed milk. This product will add sweetness, pleasant aroma and unique taste to baked goods.

Brushwood with condensed milk

Product composition:

  • three chicken eggs;
  • 430 g of condensed milk;
  • a tablespoon of vodka;
  • half a liter of vegetable oil;
  • 400 g flour;
  • powdered sugar.

Cooking progress:

  1. First you need to beat the eggs so that the foam appears. Add condensed milk to it, pour a tablespoon of vodka. Vodka can be substituted for brandy in this recipe. Shake the mixture very well so that it becomes completely homogeneous. In the prepared mixture, add wheat flour, which we pre-sift through a sieve. Then knead the dough with your hands.
  2. We put the finished dough on the table and roll it with a heavy rolling pin into a thinner layer as possible. The optimal thickness can be called the thickness of the dough, equal to the thickness of the knife blade. It is from a dough of this thickness that you can cook the most delicious and crispy brushwood.
  3. We divide the dough into strips, after which we cut each in the middle. One half of the strip of dough must be inserted into the hole, so that the result is classic brushwood loops. At this time, boil the oil in a saucepan or a very deep frying pan.
  4. We place the prepared brushwood in a saucepan and fry in it for literally one minute (even a little less). Be sure to make sure that the brushwood does not burn and stick to the bottom of the container. Ready brushwood should be carefully laid out on a paper towel, where excess vegetable oil will drain from the sweets.

To serve, you need to put brushwood in a beautiful dish and sprinkle with powdered sugar on top.

As a child, my grandmother often cooked very interesting sweets in a large cauldron for us. She caught them with a slotted spoon, and then only had time to sprinkle a little powdered sugar, as we happily reached for these “curls”.

They crunched in my mouth, as if someone was standing nearby and breaking a whole bunch of fragile dry branches. Guess what we like to eat? Of course, this is a chic thin crispy brushwood!

Now it can often be found in shops of sweets or cooking. You will be sold a whole package of these delicious cookies, and it will weigh only 200-300 grams. It is so light and airy!

Why don't you make this delicacy yourself? A minimum of food and time, and the joy of your household will be much more than from a purchased dessert.

A real classic brushwood looks like it consists of a thin, airy crisp. It is as if you have large chips in your hands, only from sweet unleavened dough, which inflates into tender bubbles in hot oil. By the way, the latter appear due to the vodka added to the composition, which you will not even taste.

The cookies do not have time to be saturated with oil, because they are fried in just a matter of seconds. People ignorant of the culinary process may think that you cooked this yummy in the oven.

By itself, this pechevo may not seem too sweet. Therefore, it is additionally sprinkled with powdered sugar.

We will need:

  • Flour - 250 gr.
  • Egg - 2 pcs.
  • Sugar - 2 tbsp. l.
  • Vodka - 1 tbsp. l.
  • Salt - 1 pinch.
  • Powdered sugar - to taste for sprinkling.
  • Sunflower oil - ½-1 cup for frying.

Cooking:

1. Sift the flour so that it is more oxygenated. Pour into a cup of 200 gr. and mix it with sugar. Season with a small pinch of salt.

Grandma always said that you need to add a little salt to sweet pastries. So the taste of all other components is better revealed.

2. Break the eggs into the flour mixture and pour in a spoonful of vodka. Start kneading the test. First you can do it with a spoon, and then with your hand.

3. The remaining 50 gr. Sprinkle flour onto a work surface and turn the dough into it. It is good to knead it so that it becomes elastic and at the same time a very tight ball.

Then cover with a bowl and let stand for about 20 minutes. After this time, the dough will become smoother, more uniform and slightly softer and more pliable.

4. With a rolling pin, turn the bun into a translucent rectangular layer. It should be thin enough to show through the surface on which it was rolled out. In fact, the thickness should be literally 1-2 mm.

Cut with a knife or curly cutter the same stripes. In each of them, in the middle, cut holes 2-5 cm long.

5. Gently lift one tip of the workpiece and turn it several times through the cut so that the sidewalls of the strip turn into twisted flagella. So repeat with all the rolled ribbons from the dough.

6. Pour oil into a deep frying pan and heat it. With quick movements, transfer 2-5 twisted products to a frying dish and fry on both sides for 5-10 seconds until a golden hue appears.

The brushwood is fried very quickly, so it is better not to leave the stove so that it does not turn into coal.

7. Catch the finished crispy curls with a slotted spoon or tongs and put them on a paper towel if you are afraid that they are still a little saturated with oil.

Carefully transfer to a large plate and sprinkle with powdered sugar to your liking.

Delicious Crimean brushwood with vodka dough recipe

Crimean brushwood is considered to be the most delicious and famous in our country. Skillful housewives prepare it according to a recipe with vodka, which is almost a hundred years old.

Thin, rolled dough pieces are dipped into boiling oil and deep-fried for just a few seconds. It turns out so crispy and airy sweetness that you want to immediately eat it all at once, to the very last crumb.

  • Egg - 1 pc.
  • Vodka - 2 tbsp. spoons.
  • Salt - 1 pinch.
  • Sunflower oil - ¾ cup.
  • Powdered sugar - to taste for sprinkling.

Cooking:

1. In a deep cup, beat a fresh egg with a pinch of salt. Then add water with a couple of tablespoons of vodka and shake this mixture again so that it becomes homogeneous.

5. In a thick-walled dish, heat the oil and send it in batches of several pieces of blanks to deep-fry, for a few seconds on both sides.

Video on how to cook thin crispy Rosettes

Today we will consider different options for preparing your favorite treat. Each new recipe will include a new dough recipe.

This method also differs in that a completely different form is obtained here. Such brushwood is baked somewhat less frequently than its standard versions. Because it seems that such products in the form of roses need more time. But in fact, this is not entirely true. It will take almost the same amount of time.

But how beautiful they are!

Here, as part of the dough, we use only flour and eggs, and literally a spoonful of cold water (there is a recipe where water is not even added). But my grandmother always said that at least a teaspoon should be added to any pastry. The dough with its addition becomes more "fluffy", that is, tender.

Note that the dough recipe does not use sugar at all. Therefore, you need to generously sprinkle the roses themselves with powdered sugar. They can also be served with condensed milk, and they are very tasty with honey. You tear off the petals, dip them in a rosette with honey, and drink fragrant delicious tea.

Imagine how delicious!

Friends, get ready. The recipe is not only delicious, but also very beautiful!

Crispy tasty brushwood cooked in milk

With milk, not only pancakes are thin and tasty, but also brushwood. Although it only takes 3 tablespoons, it still gives a more delicate flavor to an appetizing sweet snack, and thanks to it the dough can be rolled out very thinly.

A fragrant note of vanilla, added during kneading with flour, will fill the whole house with a pleasant aroma that will make you want to immediately taste pastries.

We will need:

  • Flour - 1.5 cups.
  • Egg - 2 pcs.
  • Milk - 3 tbsp. spoons.
  • Salt - 0.5 tsp
  • Powdered sugar - 2-3 tbsp. spoons.
  • Vanillin, salt - 1 pinch each.

Cooking:

1. In one bowl, beat warm eggs with milk at room temperature with a whisk until smooth.

2. Sift flour into another bowl. Mix it with a pinch of salt and sugar.

Do not forget to add fragrant vanilla to this dry mass. Then pour in the egg-milk mixture and make a rather soft and elastic dough.

3. Make 2-4 buns out of it and roll each of them to a thickness of one and a half millimeters.

4. Cut each rolled layer into five-centimeter squares and make a two-centimeter cut in each of them in the center. Pass one of the ends through the slit to make it look like a bow.

5. Heat fresh sunflower oil in a cauldron. There should be enough of it so that the workpieces lowered in one layer float on the surface as if deep-fried, and not fried, as if like potatoes in a pan.

Fry until the brushwood is golden brown on both sides.

6. Get the finished batch with a slotted spoon and put it on an iron sieve so that excess oil is gone (usually there are none, but much depends on the quality of the sunflower).

7. Transfer to a beautiful plate and sprinkle with sweet powder.

Serve and eat with pleasure!

A simple recipe for making lush treats on kefir

If you add kefir to the dough, then super-thin baking will not work. However, mouth-watering lush twisted sticks, outwardly very similar to thin sweet elongated baursaks, will be provided to you!

The brushwood on this fermented milk product turns out to be very tender and porous inside, and on the outside it is covered with a golden crust, which will be pleasantly crunchy when fresh.

Such a beautiful and tasty deep-fried delicacy is usually served during tea drinking, always sprinkled with sweet sprinkles.

We will need:

  • Flour - 3 cups.
  • Kefir - 1.5 cups.
  • Egg - 1 pc.
  • Sugar - 3 tbsp. l.
  • Soda, salt - ½ tsp each.
  • Sunflower oil - 2 tbsp. l. + for frying.

Cooking:

1. Pour kefir into a deep cup and stir soda in it. Wait for the bubbling reaction to begin (usually 5 minutes after the ingredients are combined).

Then add a fresh egg, sugar with salt and a couple of tablespoons of butter. Beat the kefir mixture until smooth. Sprinkle the sifted flour in parts and mix until it is convenient to do with a spoon or whisk.

2. Transfer the contents of the bowl to the work surface of the table and knead with your hands a sufficiently plastic dough. Roll it into a bun and cover with a waffle towel so that it does not have time to wind in 20 minutes of proofing.

3. Cut off a third of the dough and roll it into an even layer. Do the same with the other two parts of the test.

4. Cut into rectangles and make a slot in each of them. You can fry them further as they are, but the ends of these strips scrolled through the hole 1-3 times will look much more interesting.

5. Brown the products in hot oil on both sides. During deep-frying, the dough will increase in volume and become beautiful and ruddy.

6. Put for a few minutes on paper napkins, and then put them in a deep bowl or on a tray. Sprinkle the top with powdered sugar through a sieve.

Both hot and cold, brushwood is very tasty. It can even be dipped in honey, jam or condensed milk. Drink well with milk, jelly or any favorite hot drink.

Brushwood on sour cream - a step by step cooking recipe

Even more lush pechevo is obtained on sour cream. Such crunchy donuts! Both adults and children will be crazy about them. And the delicate aroma of vanilla will drive any gourmet crazy.

In this recipe, baking sprinkles can be kept to a minimum, because the dough will be sweet on its own.

We will need:

  • Sour cream 20% - 200 gr.
  • Flour - 250 gr.
  • Powdered sugar - 100 gr.
  • Sunflower oil - 1 cup.
  • Vodka - 20 gr.
  • Vanilla sugar - 20 gr.
  • Egg - 2 pcs.
  • Sugar - 2-3 tbsp. l.

Cooking:

1. Remove all ingredients from the refrigerator in advance and warm to room temperature. Break the eggs into a deep bowl and beat them with sugar. Then add fat sour cream and once again work well with a whisk.

2. Pour vodka into the egg-sour cream mass. It will evaporate during frying, but will add airiness to the dough.

3. Mix vanilla sugar with flour and sift them into a liquid mixture. Start kneading first with a spoon and then with your hands.

4. Knead the dough well so that it becomes elastic and does not stick to your hands.

You may need to lightly dust the surface of the table with flour, but do not hammer the dough with it - it can become hard and then the brushwood can turn out just as hard.

5. Roll out the finished dough after 15 minutes of proofing it into a half-centimeter thick rectangle. Cut it into equal strips and make cuts in them.

6. Form twigs from each ribbon of dough. It is enough to twist them through the slot only 1-2 times.

7. It remains only to fry the beautifully twisted dough in deep fat. Since the brushwood is quite plump and the dough was cooked on fatty sour cream, it costs about a minute to simmer it, not forgetting to turn it over during this time so that both sides are browned and fried.

8. Ready donuts should lie down for a couple of minutes on a paper bed to remove excess oil. And then they can be sprinkled with white or colored powder and served.

It is also very tasty to serve them with condensed milk or honey.

It would seem that there is such a thing here ... Thin dough fried to a crunch, and it brings so much joy and pleasure to children. Yes, and parents, like seeds, will gnaw tender stripes. Especially delicious with sweet milk tea.

Even if you don’t have powdered sugar in your house, brushwood will still come in handy for treating unexpected guests. It is a matter of several minutes to prepare it, and a conversation at the table under a light “crack” can be stretched out for the whole evening.

And although vodka is used in most recipes, even those who are driving can still eat this treat. Ethyl alcohol will evaporate during frying and there will be not the slightest effect on the body. Even a breathalyzer will not determine that the composition had a small amount of alcohol.

Bon appetit and crunchy pleasure with homemade brushwood!

Brushwood with condensed milk is one of the options for making traditional brushwood cookies, which were popular in Russia as early as the 1600s. These are crunchy biscuits in the form of curls, fried in fat. It should be noted that the delicacy acquires a characteristic crunch due to the addition of strong alcohol to the dough. Traditionally, the dough consists of milk and sour cream, but today we will prepare a special version of cookies: with condensed milk. It gives products sweetness, rich taste and aroma.

Ingredients

  • Eggs - 3 pcs.
  • Condensed milk - 430 g.
  • Vodka - 1 tbsp. l.
  • Flour - 400 g.
  • Sunflower oil - ½ l.
  • Powdered sugar

Cooking

Beat eggs until foamy, add condensed milk and a tablespoon of vodka or brandy. Shake the mixture well so that it is homogeneous.

Pour wheat flour into it, which must be passed through a sieve in advance, and knead the dough well with your hands.

Now you should put the dough on the table and with the help of a heavy rolling pin (it will be easier to work with it) roll out the mass as thinly as possible. It is recommended to roll out to the thickness of a knife blade, then the structure of brushwood with condensed milk will be ideal. We cut the layer into strips, each cut in the middle.

By inserting one half of the strip of dough into the hole, we form traditional figured cookies while the oil boils in the pot. We put the products in a pot and fry for about 45 seconds. Make sure the cookies don't start to burn.

Wet the finished sweets from fat on a paper towel, put them in a beautiful container and sprinkle with powdered sugar.
