Cooking

Beat the chicken breasts so that their thickness is about 0.5 cm. Place thin slices of dried bacon and Gorgonzola cut into thin layers on them. Place bell pepper slices on top.   • chicken breasts (4 pieces);
  • chicken legs (2 pieces);
  • champignons (500 gr);
  • tomatoes (4 medium fruits);
  • cheese "Parmesan" (200 gr);
  • chicken eggs (2 pieces);
  • olive oil;
  • spices: salt, pepper.

Cooking

Let's make the filling with which we will start the chicken roll. For her, the legs, previously smeared with salt and pepper, must be baked in the oven on a baking sheet at 200 degrees for 40 minutes. Let them cool, remove the meat from the bones and chop finely. Mix with finely chopped tomatoes and mushrooms. Add grated Parmesan on a coarse grater and pour the resulting mixture with raw eggs (this is necessary to "bind" the ingredients). Salt and pepper a little. Roll up the rolls, stab them with special skewers, brush with spices and olive oil. Wrap in foil and place in the oven at 180 degrees for 30 minutes. After this time, remove, remove the foil and, increasing the temperature to 220 degrees, return to bake until golden brown. This usually takes an average of 15 minutes. The dish is ready. It can be served with tender mashed potatoes sprinkled with fresh herbs. We recommend adding a little cream to the garnish for a richer taste and a pinch of basil for flavor.   • mustard seeds - 2-3 tbsp. spoons
  • garlic - 4-5 cloves
  • gelatin - 20 grams

Cooking

    Beat off all the pieces a little - give a more or less flat shape. But don't be too hard.

    Very small pieces can be skipped, do not beat off.

    In a bowl, mix all the other ingredients of the recipe: squeeze the garlic through a press,

    salt and pepper, add mustard seeds.

    Pour in the gelatin. Stir.

    Put the prepared chicken pieces in another, spacious bowl. Put the spices here and mix thoroughly - all chicken pieces should get their “portion” of spices about the same.

    Unscrew the cling film from the roll. Put the chicken meat with spices on it. And roll it up like a roll.

    You need to roll tight enough.

    Then, holding the ends of the film, twist it like a candy. As soon as a beautiful “candy” is formed, fasten the ends (you can tie a film into a knot, or you can tie it with threads).

    It is better to cook diet chicken roll in a double boiler or in a pot of water over low heat. Cooking time about 1.5 hours. Then the roll must be cooled. And chilled put in the refrigerator overnight.

    In the morning, remove all the film, cut the chicken roll and enjoy, for example, a delicious sandwich or just pieces of roll with vegetables.

ON A NOTE

If you add or replace spices, you get a different chicken roll - a different look, taste, with a different flavor. Experiment. For example, you can include cubes of bacon and ham in the roll; finely chopped fresh herbs, cubes of fresh sweet pepper, green peas, paprika, turmeric.

Ingredients:

  • 0,5 kg chicken fillet
  • 0.5 kg minced poultry (turkey, duck, goose, etc.)
  • 250 gr. raw smoked bacon
  • 100 gr. chicken liver
  • 100 gr. pistachios
  • 1 PC. onion
  • vegetable oil
  • 2 tooth h
  • 3 art. l. dry white wine
  • 3 art. l. cognac
  • a pinch of dry thyme
  • 2 pcs. bay leaf
  • salt
  • black pepper hammers
  • 50 ml cream
  • 2 tbsp. l. flour
  • 1 egg

Cooking method:

1. Peel the chicken fillet from films and skins, cut into cubes of 2-3 cm. Season the fillet with salt, pepper, thyme and cognac. Stir the chopped meat and drizzle with dry white wine.

2. Cover the dishes with meat with cling film or a towel. Place the meat in the refrigerator to marinate for 3 hours.

3. Chop the onion. Spasser the onion until golden brown in vegetable oil.
Chop the garlic and add to the onion. Fry everything for 1 more minute, then transfer to a bowl.

4. Wash the liver, blanch for 3 minutes in salted boiling water and drain in a colander. Cut the liver into pieces and lightly fry in the remaining oil after frying the onion.

5. Knead the minced meat well or beat it on a wooden surface.

6. Beat the egg with the cream and flour until a homogeneous mixture.

7. Put the fried onions and garlic into the minced meat and pour the egg-creamy mass.
Knead the minced meat well, salt and pepper.

For uniformity, minced meat can be beaten in a blender.

8. Peeled salted pistachios pour boiling water over them. After 3 minutes, drain the boiling water. And peel the pistachios from the film.

9. Combine minced meat, chicken liver and pistachios.

10. Grease a rectangular baking or baking dish with vegetable oil. Lay out the whole form with overlapping bacon slices.

11. Divide minced meat into three parts. Chicken fillet for two.

12. Layer minced meat, chicken meat, minced meat, chicken meat and minced meat in layers on the bacon.

Pack each layer very tightly, it is best to use a silicone spatula for this. Spread the bay leaf over the top layer of minced meat.

16. Before serving, remove the oppression, turn the form over onto a dish and cut the roll into slices.

The prunes roll is not as difficult to prepare as the first one.

Ingredients:

  • chicken fillet
  • pitted prunes
  • pepper
  • butter

Cooking method:

  1. Pour prunes with boiling water for 5 minutes. Then drain the water.
  2. Cut prunes into cubes.
  3. Divide the chicken fillet into large pieces and beat each one as thin as possible.
  4. Melt butter.
  5. Brush chicken chops on all sides with butter.
  6. Pepper and salt the meat to taste.
  7. Lay out the chops on the table.
  8. On the edge of one chop, put prunes cubes in a long strip.
  9. Roll the chops into a tight roll.
  10. Fasten the roll with toothpicks or tie with a thread.
  11. Fry the roll in melted butter for 2-5 minutes on each side until golden brown.
  12. Put the roll on a baking sheet or in a baking dish.
  13. Pour the roll with warm water and place in a hot oven.
  14. Bake the roll for about 1 hour.
  15. Wrap the finished roll in foil and cool in it. Put the roll in the refrigerator for 3-5 hours. Cut into slices before serving.

In this step-by-step recipe, there are three toppings to choose from at once: xylo-sweet dried apricots with cheese, prunes with walnuts, mushrooms with sour cream.

Ingredients:

  • chicken breast fillet - 3 pieces;
  • dried apricots - 70gr;
  • prunes - 70g;
  • walnut - 1 tbsp;
  • mushrooms (champignons) - 70g;
  • onion - 1/2 pc;
  • cheese - 50g;
  • sour cream - 1 tablespoon;
  • salt and pepper - to taste;
  • vegetable oil - 2 tbsp.

Cooking:

For each breast we will make a different filling. My mushrooms, cut into small pieces.

Soak dried apricots and prunes in hot water from a kettle.

In a frying pan, heat the oil, put the mushrooms, fry, stirring, until the liquid evaporates and the mushrooms are fried. Put the onion, fry for a couple of minutes. Add sour cream, salt, mix, reduce heat and cook for another 10 minutes. Turn off and leave aside to cool down a bit.

Drain water from dried fruits, cut into pieces.

Mix prunes with chopped walnuts.

We cut the chicken breasts with a knife not completely and lay them out like a book, see the photo below:

Salt, pepper and lightly beat off on both sides, covering with polyethylene from splashes.

For those who want to cook a healthy and tasty sausage substitute at home, this will be a cold appetizer that can successfully replace sausage or ham. Instead of an egg, you can put any other filling: dried fruits, mushrooms, carrots, or cook without filling.

Ingredients:

  • chicken - 1 piece (or 1-1.5 kg fillet);
  • eggs - 3pcs;
  • greens (parsley, dill) - 1 bunch each;
  • salt and pepper - to taste;
  • gelatin - 1 tbsp.
  • spices - optional.

How to cook:

  1. We also need cling film and a mesh for smoking (cooking) meat. If there is no mesh, then a strong cotton thread.
  2. We cut the chicken, separating the meat from the bones. We try to keep the breasts whole. All meat except for them, either finely chop with a knife, or pass through a meat grinder, minced salt, pepper, add gelatin and spices to taste, mix.
  3. Cut the breasts so as to get thin layers. Each of which we slightly beat off and add.
  4. Hard-boil eggs, cool and peel. Greens finely cut.
  5. Lay out cling film on a cutting board. We lay out the beaten fillet on it in one layer with a slight overlap.
  6. Place minced meat on top. Lay the eggs in a row in the center, one after the other. Sprinkle with herbs.
  7. Carefully lift the edges along the long sides to the center by the film, forming a log with eggs inside. We twist the ends of the film like a candy. We wrap the workpiece in a couple more layers of film, giving the shape of a sausage loaf. From above, for strength, we put on a mesh or wrap it with threads.
  8. Pour water into a roaster, brazier or large saucepan. I put a roll in it. We wait for the boil, reduce the fire to such a level that the water in the pan boils very weakly. We cook for an hour.
  9. We take out the finished boiled roll, cool it and, without unfolding, put it in the refrigerator for 8 hours. Only then can you remove the mesh or threads, unfold and serve. According to the same recipe, you can cook chicken in a bottle, which will be a form for it.

Chicken rolls in lavash

Such an appetizer, which is now fashionable to call rolls, is suitable for a quick snack. Instead of pita bread, you can use a Mexican tortilla, and add fresh vegetables inside - tomatoes, lettuce, bell peppers.

Products for 2 rolls:

  • 1 chicken breast;
  • 1-2 pickled cucumber;
  • 2 slices of ham;
  • 50g of cheese;
  • mayonnaise;
  • salt;
  • spices for chicken;
  • vegetable oil;
  • 1 lavash

We make rolls in pita bread

  1. We rub the meat with salt, spices, 1 tsp. vegetable oil, wrap in foil and bake in an oven heated to 200 ° C for 40 minutes. 10 minutes before the end, unfold the foil, turn on the "Grill" mode or the maximum heating of the upper spiral to bake.
  2. Let the cooked meat cool slightly. While it is cooling, prepare the rest of the ingredients. Cucumber and ham cut into large strips.
  3. Cut the chicken into pieces, mix with mayonnaise and grated cheese.
  4. Lavash cut into two equal parts. We straighten each on the board, put the chicken on them, lay out the cucumber and ham. Roll up into a tight envelope.
  5. Heat up a pan without oil. To make beautiful transverse stripes on the rolls, a grill pan is used. We put the rolls first on one side, then on the other. Lavash will dry out and become crispy, the cheese in the filling will melt.
