I want to offer you a salad recipe in two versions: one is more tender, the other is more crispy. But in both cases it will be quite light and fresh salad. Usually these are what you want in the spring. The salad is very simple, homemade, for every day, but no less tasty for that. I dine from the heart!
I made a version with green peas - more tender and a little more satisfying. And there will be a radish - I will cook such a salad with it.
To make the salad look more beautiful, it is better to collect it in layers on a large flat plate.
I have a plate with a diameter of 27 cm. From the indicated amount of ingredients, two such salad plates are obtained.
Wash the lettuce leaves and pat dry with a towel. Tear into pieces with your hands and put the first layer on a large plate.
My fresh cucumbers, cut into strips. Instead of cutting with a knife, I used a vegetable cutter - it turns out much faster.

Place a sheet of parchment (or foil) lightly greased with vegetable oil on a baking sheet. Put a layer of dough rolled out in the form of a ring on it.
Put the first layer of minced meat on the dough layer.
Put peeled boiled eggs on the ring, trying to distribute them evenly. Put the remaining minced meat, covering the eggs. Smooth the surface
Roll out the dough. Cut out strips of 2-2.5 cm wide and a length corresponding to the width of the meat ring. Lay the strips on the ring at the same distance from each other and pinch them with the bottom ring
Cut out the leaves of an elongated shape, stick them on the strips. Brush pastry and exposed meat with beaten egg yolks.
Necessary:
6 boiled eggs;
2 chicken breasts;
1 onion;
1 fresh egg;
2 cloves of garlic;
100 g of oatmeal;
100 g of milk;
2-3 tablespoons of breadcrumbs (or semolina mixed with dried herbs).
How to cook:
Punch in a blender or pass through a meat grinder chicken breast fillet, onion, garlic. Add fresh egg, cereal, milk. Mix everything well and leave for 10-15 minutes.
Peel the eggs from the shell, pour boiling water over and let the water drain.
Divide minced meat into 6 equal parts.
“Wrap” the egg in minced meat, roll with breadcrumbs and fry on all sides in hot vegetable oil. Pour a little water, reduce the heat and cover the pan with a lid and leave the cutlets to simmer for 10-15 minutes.
Serve by cutting the patty in half. Garnish with greens or slices of fresh bell pepper or canned pineapple ring.
Snack sandwiches with egg and smoked herring
Pour boiling water over spinach leaves, finely chop. Simmer a little in butter. Add 100 ml of 10% cream and 2-3 tablespoons of soft cream cheese (I had the "Jolly Milkman"), 1 teaspoon of grainy mustard and a little nutmeg and a pinch of saffron.
Serve egg halves topped with sauce.
This year I had a lot of boiled quail eggs left. And I decided to make my dream come true and pickle them. It turned out unexpectedly delicious! So I am sharing the recipe with you.
Marinated quail eggs
Necessary:
For 10-12 quail eggs -
250 ml of water;
3 art. l. apple cider vinegar;
5-6 art. l. vegetable oil;
3 small onions;
a quarter of red, yellow, green bell pepper;
2-3 stars of cloves;
2-3 peas of allspice;
2 bay leaves;
1 st. l. salt;
1 st. l. Sahara;
a little dill, parsley;
2 sprigs of rosemary;
1 sprig thyme.
How to cook:
Bring water to a boil. Add cloves, salt, sugar, pepper, chopped dill and parsley, bay leaf. Boil 10 minutes. Add oil and vinegar.
Put a layer of finely chopped pepper in a jar, then eggs, onion, rosemary and thyme. Pour in boiling brine and close the lid. Cool down. Place in refrigerator for 24 hours. It is recommended to store such eggs no more than 4 days.
With pickled eggs, it turned out to be a very easy to prepare, light and tasty salad.
Vegetable salad with marinated quail eggs
Cut cucumbers, tomatoes, pickled onion and soft Gouda cheese into slices. Top with pickled egg slices and bell pepper cubes. Fill with dressing:
2 tbsp. l. marinade;
2 tbsp. l. olive or vegetable oil;
1 spoon of soy sauce.
