After the Easter holiday, beloved by many, passes, a large number of colored eggs are found in our refrigerators. Everyone has already eaten them: some with salt, some with mayonnaise. And the question arises: what to cook from boiled eggs? It is advisable to use several pieces at once.

I want to offer you a salad recipe in two versions: one is more tender, the other is more crispy. But in both cases it will be quite light and fresh salad. Usually these are what you want in the spring. The salad is very simple, homemade, for every day, but no less tasty for that. I dine from the heart!

Boiled Egg Salad Ingredients:

  • bunch of lettuce
  • fresh cucumbers (I have a large cucumber for 300 g)
  • 4 boiled eggs
  • 1 can of canned green peas (2nd option: radishes and/or green onions)
  • sour cream for dressing (can be replaced with plain white yogurt)

Cooking salad with boiled eggs:


I made a version with green peas - more tender and a little more satisfying. And there will be a radish - I will cook such a salad with it.

To make the salad look more beautiful, it is better to collect it in layers on a large flat plate.

I have a plate with a diameter of 27 cm. From the indicated amount of ingredients, two such salad plates are obtained.

Wash the lettuce leaves and pat dry with a towel. Tear into pieces with your hands and put the first layer on a large plate.


My fresh cucumbers, cut into strips. Instead of cutting with a knife, I used a vegetable cutter - it turns out much faster.


Arrange cucumbers on lettuce leaves.


Salt. As an option: now you can not salt, but add salt to the sour cream / yogurt dressing.

Lay the eggs on top of the cucumbers.


Drain the liquid from the green peas and lay it on top of the boiled eggs.

Necessary:

2 chicken breasts or any other lean meat;

1 carrot for cooking;

1 carrot for decoration;

20 g of gelatin;

How to cook:

1 carrot, onion and celery, peeled and coarsely chopped. Wash the meat. Put vegetables in a saucepan with 2 liters of hot water, bring to a boil, reduce heat, salt and cook for 20-30 minutes. A few minutes before cooking, add bay leaf and black pepper. Remove the meat from the broth, strain the broth.

Peel eggs and cut into 4 pieces. Cut the cooled meat into thin slices.

Dissolve gelatin in hot strained broth.

At the bottom of a deep bowl, put carrot flowers (boiled or fresh - as you like), a third of green peas. Pour a little broth with gelatin so that it only covers the peas, and put in the refrigerator to harden for 20 minutes.

Take the form out of the refrigerator. Lay slices of meat in the center. Place the egg quarters around the edges with the yolks outward, pour in the remaining broth and refrigerate again for a few minutes. But do not wait for the aspic to completely harden. Spread the remaining green peas on top, return to the refrigerator and let cool completely.

Place the form with ready-made aspic for 5 seconds in warm water, cover with a dish and carefully turn over. Ready!

Meat Ring with Quail Eggs (Based on the Deli School recipe; 8 servings)

Necessary:

1 kg of minced meat (it can be beef, pork, lamb, mixed minced meat);

250 g of white bread;

0.5 l of milk;

2 fresh eggs;

8 boiled eggs;

1 bunch of greens;

1 large onion;

1 small carrot;

2 cloves of garlic;

2 tbsp. l. vegetable oil, salt, pepper to taste;

150 g of ready-made puff pastry.

How to cook:

Put mince into a large bowl. Soak the bread in milk, squeeze lightly and add to the minced meat. Separate the whites from the yolks, beat and add to the minced meat.

Add washed, finely chopped and dried herbs. Grind onions, carrots and garlic and sauté in vegetable oil. Let cool. Add to minced meat along with oil. Salt, pepper.

Place a sheet of parchment (or foil) lightly greased with vegetable oil on a baking sheet. Put a layer of dough rolled out in the form of a ring on it.

Put the first layer of minced meat on the dough layer.

Put peeled boiled eggs on the ring, trying to distribute them evenly. Put the remaining minced meat, covering the eggs. Smooth the surface

Pour boiling water over spinach leaves, finely chop. Simmer a little in butter. Add 100 ml of 10% cream and 2-3 tablespoons of soft cream cheese (I had the "Jolly Milkman"), 1 teaspoon of grainy mustard and a little nutmeg and a pinch of saffron.

Serve egg halves topped with sauce.
