I share an interesting new recipe for my favorite dish.
I learned from Wikipedia that there is a vegetarian version of the Herring under a fur coat. The herring is replaced with seaweed, eggs with avocado, and egg-free mayonnaise is used. I wanted to try. Armed with the remnants of seaweed (bought a week ago), half a pack of mayonnaise, Wikipedia, intuition and other ingredients, I built something very similar to a fur coat. I put it in the refrigerator to brew, took it out, tried it ... and ...

Surprised by the taste ... harmonious ... fresh, very pleasant. Its highlight is the combination of the specific aroma of kelp with the sweet and sour apple. Boiled vegetables add satiety to the salad. I advise you to try…

Ingredients for cooking: seaweed (kelp), apple, onion, potatoes, carrots, beets, mayonnaise, vegetable oil.

Immediately I apologize to the vegetarians, my mayonnaise was ordinary. Although, it seems to me, you can try to make such a salad instead of mayonnaise with vegetable oil. By adding additional vinegar, salt, anything else ...
An apple appeared in my salad because there was no avocado. And the second reason: I read on the Internet that in an ordinary fur coat (with herring) some separate layers are made with an apple.

Pre-boil potatoes, carrots and beets in their skins. Cool, peel, rub on a coarse grater.
We cut the seaweed with a knife across so that it is not so long.
Cut into cubes (or as used to) onions.
At the very last turn, we rub an apple without a peel on a coarse grater (so as not to darken).
About seaweed. I already bought it with vegetable oil, salt and vinegar (without any additives - carrots, onions, etc.). Therefore, if you have kelp without oil, then sprinkle it with oil. And vinegar. Or pickle onions in vinegar.

Lay in layers on a flat dish:
- seaweed;
- onion, which we grease with mayonnaise;
- apple, grease with mayonnaise;
- potatoes, sprinkle with vegetable oil for juiciness, then grease with mayonnaise;
- carrots, again - mayonnaise;
- beets, grease with mayonnaise.
We put the finished salad in the refrigerator for a couple of hours.

As for the thickness of the layers, in my opinion .... Unlike a classic fur coat, this salad should not be too high. The fact that he looks tall in my photo is because of the very small plate.
Laminaria should not be too much so that it does not interrupt other vegetables. Pronounced specific aroma.
I rubbed the apple a little. Literally one layer. The apple did not dominate. It only created a pleasant contrast with the taste of kelp.
As for potatoes, it is important not to overdo it. Otherwise, it will give excessive satiety, it will be rude.

I wonder how such a salad will turn out with the addition of avocado ...?

Many believe that vegetarians and vegans, who generally eat only plant foods, cannot get a full-fledged holiday feast. Let's dispel this myth, because there are so many recipes for delicious dishes prepared without meat and generally animal products that a vegan holiday table will look no less beautiful, and the dishes will be tasty and satisfying.
For example, it is a very satisfying and healthy dish, because beans are an indispensable source of vegetable protein, and even those who are far from vegetarianism will like it, the combination of flavors is so interesting in it. If you are not vegan, then you will probably be interested.
In the recipe for vegan herring under a fur coat, all the ingredients are very simple, except perhaps nori sheets. Nori is seaweed that has been dried and pressed into thin, paper-like sheets. Nori is indispensable in the preparation of sushi, they are widely used in the preparation of many dishes of Japanese, Korean and Chinese cuisine. Please note that the nori sheet, laying in the salad, needs to be slightly softened with water. Today, there are so many exotic products on sale that I think it will not be difficult to buy nori. As a last resort, if you can’t get nori, try replacing them with ordinary seaweed, which is certainly available everywhere, just remember to cut it smaller.

Ingredients for vegan herring under a fur coat.

Beets - 1 pc. (large)
Carrots - 2 pcs.
Potatoes - 4 pcs.
Pickled cucumbers - 3 pcs.
Lean mayonnaise - 200 g
Nori sheets - 2 pcs.
Water - 2 tbsp.

How to cook vegan "herring under a fur coat".

1. First of all, you need to boil the vegetables. Rinse them thoroughly under running water (best with a brush). Usually all vegetables are boiled together, removed from the water as they are ready, but I offer another option. Even if you cook all the vegetables in their uniforms, beets will inevitably color them. To prevent this from happening, I boil the beets in a saucepan, and put an aluminum colander on the saucepan, and potatoes and carrots are steamed under the lid in it. So, by the way, it turns out much more useful. Readiness of vegetables can be easily checked with a knife or fork.
2. Rinse the boiled vegetables with cold water and give them time to cool, then peel and rub individually on a fine or medium grater.
3. Put a layer of grated potatoes on a dish, level it with a fork and cover with a layer of mayonnaise.
4. Lay out the nori sheet with the second layer, moisten it with 1 tbsp. a spoonful of water so that it softens, and spread the diced pickles in an even layer. Lubricate with mayonnaise.
5. Again we lay the nori sheet, grease it with a second spoon of water, and carrots on it with an even layer. And again grease with mayonnaise.
6. The last is a layer of beets, smeared with mayonnaise. The salad must be kept in the refrigerator for at least 2 hours, and before serving, decorate to your liking.

I decorate the Herring under a fur coat with neatly chopped onion rings, and in the center of each I spread a parsley leaf and what is left of other salads: canned beans or peas or a small cube of carrots. And for the New Year, for example, you can lay out a Christmas tree from dill branches. In general, turn on your imagination!

What is the New Year without a "fur coat"? I love this salad so much! Vegetarian fur coat with seaweed does not leave a feeling of heaviness at all. This dish is easy to prepare and quite affordable. The only negative - they cooked it in the morning - they ate it until the evening, well, in extreme cases - the next day, because. "mayonnaise" on sour cream in my recipe. Or you can season with other mayonnaise, purchased or made with milk without eggs or from aquafaba (vegan option).

If you love layered salads, then here are some more easy options:

  1. with pickled mushrooms

And for the “fur coat” you will need boiled vegetables of medium size (approximate amount):

  • 1 carrot;
  • 2-3 potatoes;
  • 2-3 dark beets;
  • you will also need about 100 g of seaweed;
  • 250 g or any other lean.

Clean your vegetables.


Grate the carrots on a fine grater, carefully and evenly place them on the bottom of a mold or a deep plate.


Spread a generous layer of mayonnaise. Lay out the seaweed (you need to cut it with a knife or kitchen scissors so that there are no long "threads").


Put grated potatoes on the same grater on top, level and put another layer of “mayonnaise” on top.


Now it's the turn of the beets - also grate it, lay it out, level it.


And the last layer is mayonnaise.


In principle, half an hour or an hour in the refrigerator and "Herring under a fur coat" can be served.


Herring under a "fur coat", along with Olivier, always takes its rightful place on the festive table. This option fur coats without herring will appeal not only to vegetarians, but also to those who simply do not like her.

  1. Shop for soy or eggless mayonnaise (lean)

Recipe 1: Vegetarian herring under a fur coat - the easiest

  • Potatoes - 4 pcs.
  • Carrots - 2 pcs.
  • Adyghe cheese - 150 g.
  • Seaweed - 70-100 g.
  • Beets - 1-2 pcs.
  • Sour cream - 250 g.
  • Salt - ¼ tsp
Boil carrots, potatoes and beets in their skins. Learn that beets are cooked for about 1.5 hours. Cool the vegetables and peel them. Grate half the potatoes with the first layer.
Then lay out the seaweed. In the photo, I laid out the cabbage as it was in the jar. However, I recommend that you grind it first. Otherwise, it will not be very convenient to eat and cut such a salad.
Grate half of the Adyghe cheese with the next layer.
And then lay out a layer of half of the grated carrots.
Prepare sour cream mayonnaise according to this recipe (BELOW) and grease the carrots. Don't forget to salt the sauce or sour cream if you decide not to bother with the sauce.
Now we repeat everything. Lay out a layer of potatoes.
Then another layer of Adyghe cheese.
A layer of boiled carrots.
And another layer of sauce.
Then carefully cover the salad with a thick layer of beets.
And grease the salad with sauce or sour cream. If you made a salad on a plate, then probably there were sloppy bloopers from beets and sauce around the edges. Take a slightly damp cotton pad and clean the edges of the plate. Vegetarian coat without herring is ready! Good appetite!

Sour cream mayonnaise for a fur coat without herring:

  • Sour cream - 250 ml
  • Turmeric - 1 tsp
  • Asafoetida - a pinch or garlic salt - ½ tsp
  • Ground black pepper - ½ tsp
  • Mustard (tube) - 1 tsp

Place all ingredients in a bowl and blend with an immersion blender or fork.

Store the sauce in the refrigerator.

Recipe 2: Vegetarian fur coat without herring (more difficult)

  • 800 gr. potatoes
  • 800 gr. carrots
  • 800 gr. beets
  • 350 gr. seaweed
  • 300 gr. Adyghe or processed cheese
  • 5 pieces. walnuts
  • 250 ml. sour cream
  • 400 ml. mayonnaise
  • spices: ground black pepper, cinnamon, asafoetida, nutmeg, ground coriander
  1. Boil potatoes, carrots and beets in "uniforms" for a couple or in water.
  2. When the vegetables have cooled, peel them.
  3. Now you need to grate the vegetables and cheese separately. Beets and carrots are best on a medium grater, and potatoes and cheese on a coarse grater.
  4. Wash the seaweed and chop finely.
  5. Add 2 tbsp. spoons of sour cream in carrots and beets, and in potatoes - 3-4 tbsp. l.
  6. Add spices and 1 tsp. salt:
    • in beets - a pinch of cinnamon and nutmeg
    • in carrots - ½ tsp. ground coriander and a pinch of black pepper
    • in potatoes and seaweed - ½ tsp each. asafoetida and some ground black pepper

    If you don’t have any spices, it’s okay, it will still turn out delicious.

  7. Crush the walnut kernels.
  8. Pour it into the beets and mix.
  9. Now all the components of the “fur coat” are ready for us and you can proceed directly to laying out the layers, lubricating each one. For this amount of food, a deep dish Ø 25 cm and a height of about 9 cm is best suited.
  10. Put ½ of the potato on the bottom, level with a spoon and grease with mayonnaise.
  11. Make the next layer from ½ part of seaweed and also grease it with mayonnaise.
  12. Put ½ part of the cheese, grease with mayonnaise.
  13. The next layer is made from ½ of the carrot, smeared with mayonnaise.
  14. Now lay out ½ of the beetroot and also do not forget to grease it with mayonnaise.
  15. Now repeat again all the layers, if the height of the dish allows.
  16. It remains now to decorate beautifully and put on the festive table.

Recipe 3: Vegetarian “fur coat”, fried mushrooms as herring

We take products, as for "under the fur coat" herring

I have:
2 boiled potatoes
1 large boiled carrot
1 boiled beetroot
2 pickles,
lean mayonnaise.

Instead of herring, we take mushrooms fried with onions - I have champignons.

Cooking like a herring.
I just:
mushrooms, mayonnaise,
potato
cucumbers
carrots, mayonnaise,
beets, mayonnaise.

Three vegetables on a grater - on a small or large one - as you like.
Between mushrooms and potatoes, you can still cut a fresh onion, if you like onions.

I tried it at my husband's birthday - everyone liked it very much, both fasting and non-fasting.

Recipe 4: Vegetarian coat without herring with salted mushrooms

Probably, many people love a fur coat with herring. The ambush in the salad is the bones, although now, probably, everyone buys a peeled fillet. We are preparing our own version of the salad. The ideological inspirer is a friend. We used to make just a “fur coat” or mimosa, and friends treated us somehow to a variant with lean soy mayonnaise and salted oyster mushrooms (they marinated them in vinegar and with special spices for fish). I decided to make it with salted mushrooms, there were no oyster mushrooms.

Boiled potatoes 200 grams,
boiled carrots 200 grams,
Boiled beets 200 grams,
Onion 70 grams,
Mushrooms mushrooms salted 200 grams,
Soy mayonnaise 150 grams,
Sea salt

I don’t have a salad form, so I made something similar to it from cardboard, although then I guessed that I could cut off part of the bottle from the water. It would be a ring.
In principle, salad is not much different from herring under a fur coat. Milk mushrooms go to the very bottom, then onions.

It makes sense to pickle the onion slightly.

Salad "Herring under a fur coat" is a traditional festive salad, which is an indispensable attribute of any festive table. The history of the appearance of this dish is very interesting and has a political connotation. As the legend goes, in 1918 lettuce was able to unite two warring parties, namely the proletariat and the peasantry.

In one of the popular taverns of that time, representatives of different classes and political beliefs often gathered at dinner, which inevitably led to violent disputes and fights. Tables flew, crockery broke, and defeated opponents were no longer able to pay the bill for dinner.


Aristarkh Prokoptsev, the chef of this tavern, came up with an original solution to the problem. In one dish, he managed to combine the preferences of the two warring parties: herring, which the proletariat loves so much, and carrots and potatoes, which the land gives us - as an analogy with the peasantry. A mixture of these products was well seasoned with French mayonnaise sauce and served at the table as an appetizer. The tavern patrons approved of the new dish and did not refuse to eat a plate or two of the new salad. Since the dish turned out to be very satisfying, the visitors no longer got drunk as before, which means they fought and argued less.

This story took place on New Year's Eve, so 1919 was greeted with a "salad of the peoples" in completely different political circles. It is not known how true this story is, but the idea of ​​\u200b\u200bunification, just kindly fabulous, is what you need for the New Year.

Today, Fur Coated Herring may also unite two conflicting "teams": vegans and people who eat animal products. Just by replacing the herring with nori seaweed, you can please the most fastidious dish lover.

  • 400 gr. potatoes in uniforms
  • 400 gr. boiled carrots
  • 400 gr. boiled beets
  • 200 gr. nori or other seaweed

1. Boil potatoes in uniforms until tender, peel and cut into cubes.

add salt, then put a layer of seaweed on top and again coat with mayonnaise.

5. Then a layer of carrots + salt, pepper.

6. Again a layer of potatoes + seaweed + mayonnaise. Next lay out a layer of beets.

7. Alternating layers, lay out all the ingredients in layers so that the beets are the last layer. Lubricate again with mayonnaise and refrigerate for a couple of hours.
