Pour the whipped mixture into a bowl of flour and yeast and begin kneading the dough, spiraling from center to edges. When a finished lump is formed, you need to beat the dough on the table so that it becomes even softer and more uniform. The dough is now ready to be rolled out and baked.

Step 2: Prepare the filling for the pies.


Rinse potatoes and onions with running water and peel them off. We collect water in a saucepan and put the potatoes in it. We cook it as for mashed potatoes, the actual filling will consist of it. If your mushrooms are chopped coarsely or even whole, you can chop them smaller. But I do not do this, because then I punch the finished filling in a food processor. There is no need to cook fresh champignons - we fry them right away.

Ready-made mushrooms have an appetizing fragrance and are well-browned. Yes, during the frying process, we salted them to taste. Let it cool a little for now.

Let the potatoes cool slightly and then turn them into mashed potatoes. It is more convenient and best to do this with a meat grinder, but you can also use a crush. Add one chicken egg to the warm puree. No flour!

Now we just mix everything by hand until smooth - the puree is not hot, but warm. We try it for salt, add a little if necessary.

We need to boil potatoes "in their skins", that is, without peeling. For those who do not know: pour the washed tubers with cold water and put them on fire. The boiling time depends on the size of the tubers. On average, jacket potatoes are cooked for about 15 minutes. The knife should go well through the potato.

While the potatoes are cooking, let's start preparing the filling. In our case, fresh champignons and onions. Wash the mushrooms and chop finely. Chop the onion finely.

First fry the onion in a preheated pan, and then send the mushrooms to it.

Yeast, 1 tablespoon flour and granulated sugar should be mixed in a small bowl.


Then this mixture must be diluted with warm milk. The most favorable temperature for activating yeast ranges from 27 to 35 degrees. Therefore, the milk should be slightly cool to the touch.


Pour the sifted flour into a large container, leaving 100 g for the backing. Then pour in milk with yeast, add salt and leave for 10 minutes.


Warm the butter to room temperature to soften and add it to the milk mixture. There it is also necessary to break one egg and add the protein from the second. Separate one yolk so that you can grease the pies with it.


After that, you need to knead a soft dough. In terms of density, it should resemble an earlobe. If necessary, add the remaining flour. Transfer the dough to a spacious container greased with vegetable oil, cover with a towel and leave warm for 45-60 minutes.


In the meantime, you can prepare the filling. For pies, you can use the leftover puree from dinner or prepare a new one. It should be quite thick without any lumps. Onions must be finely chopped and quickly fried in a mixture of vegetable and butter. Then it should be added to the puree along with the butter. The filling for the pies should also be seasoned with salt and pepper to taste.

If good yeast is used, the dough should double in 1 hour.


It needs to be divided into 25 parts and each rolled into a ball.


Each portion of the dough should be rolled out into a flat cake with a diameter of 12-14 cm.

Pies with potatoes without yeast are cooked in a dry frying pan, so they are not at all harmful. They are not fried, they are light, and very healthy for the stomach. After frying, they can already be greased with butter or served with sour cream. Such dry pies are thin and very tasty.   • durum flour 1-1.5 cups (approximately),

  • 5 potatoes.

First, we need to prepare mashed potatoes. To do this, wash the potatoes, peel them, rinse them again and set them to cook until tender in salted water. At the end of cooking, all the water must be drained. Knead the potatoes with a crush. Add butter. If you add onions fried in vegetable oil, then you do not need to add butter. The filling is ready.


Wash green onions under running water and chop finely. We heat the water to 50 degrees, dissolve salt in it, add vegetable oil and add durum flour. Mix everything with a spoon. Durum flour is molded worse than wheat flour, so add it for kneading. Pour in white flour and add chopped onion, knead not tight dough. We cover it with cling film and let it rest for twenty minutes.


Sprinkle the working surface with flour. We spread the dough for pies with potatoes on it, divide it into 8 equal pieces.


Knead a piece with our hands, add a tablespoon with a heap of filling in the middle, pinch the edges and roll the pie with a rolling pin so that it becomes flat. If you do this, and do not pre-roll each piece into a thin cake, then neat blanks will come out.


Now we will fry our pies in a dry frying pan. Bake on each side for 3-4 minutes over high heat.

Then heat the oil for frying in a hot frying pan and lay out the pies one by one, "seam" down. Fry over low heat for 3-4 minutes on each side. Ready-made pies can be blotted with napkins to remove excess oil.
