We love to travel. From there we brought the idea to open our own bakery in Russia. Initially, we wanted to sell freshly baked rolls in vending machines. A man who woke up in the morning, slipping down in slippers to buy a warm croissant for breakfast - that was how we imagined it, but the idea was too costly. Later we realized that the niche of baking in Moscow restaurants is packed to the limit. But, despite the abundance of coffee houses, there are gaps in the dessert menu.


Forbidden desserts

We buy berries from “Fruit Post” (a large importer of fruits and vegetables. - Note The village), we take most of the ingredients from the East-West wholesale supplier and at the Dorogomilovsky market - many Moscow restaurants are purchased there. If cheese is added to the cake, this is necessarily an Italian mascarpone. If French cream goes to Tiramisu, then it would never occur to us to buy a “Village House” and just don’t tell anyone about it, although this would reduce the cost of the product by five times. The imposition of sanctions has so far slightly affected the business. Our suppliers have enough “forbidden” products in stock. Yes, prices for certain items rose by 30%, but this still will not force us to abandon the French and Italian ingredients. For the next three months, the reserves of our suppliers will be enough for us to maintain the necessary production volumes. Further we will solve problems as they become available.

Stars "sell"

Eugene used to work in the club industry. She has kept contacts with the stars of Russian show business. The first famous client was our friend Pavel Volya. He shared a photo of cakes on his Instagram. Actress Evelina Bledans reacted very violently to his post. Milfey and others

In our team, Zhenya is responsible for attracting new partners, Alexei is the supply manager, he solves all organizational issues, Mikhail is the financial director. Eugene goes to the chefs and restaurant owners. Almost all of them use social networks. If a potential customer responds to the offer, Alexey organizes a tasting, introduces him to the production technology. Mikhail is responsible for concluding a supply contract with those who agreed to cooperate.

Today, from large restaurants Oyster Bar, La Terrasse, Uryuk cafe, and Scarlet Sails yacht club are constantly cooperating with us. Orders arrive at 22: 00-23: 00, at seven in the morning we are already sending the car with fresh produce. We are often compared to Renardi cakes, which are sold in the ABC of Taste. On average, a kilogram of Renardi costs 2,500 rubles, Sweet Craft desserts - 1,800 rubles, while the set and quality of the ingredients are about the same.

About 95% of orders are for restaurant chains, the remaining 5% are private owners who go to us through the site or thanks to word of mouth. Summer was the wedding season, but we are selective about orders. In Russia, there is still an idea that wedding cake should be decorated with flowers, curls, swans. We do not undertake such orders. At our wedding there was a Millefeuille cake. The guests ate it so quickly that the parents did not get a bite. To some extent, the decision to open a confectionery was made under the influence of that taste impression - we did not eat anything tastier in our life. Today in our assortment "Milfey" is the most popular product, it is ordered most often.




“Not an oil well”

We spent 9 million rubles on launch alone. Part of the funds is consumer loans, part is the investment of our friends. They went on to repair the premises and purchase equipment. A machine for rolling cakes, for example, cost us 340 thousand rubles, a refrigerator that allows for shock freezing of a product costs 100 thousand rubles, and six were needed for our production volume. Peugeot car for the delivery of finished products - 800 thousand rubles, a special refrigerator for the car - 380 thousand rubles. The repair took at least 1 million rubles. Previously, this room was a checkpoint - all communications, water, three-phase sockets had to be carried out from a "clean slate". The monthly cost of maintaining a confectionery is approximately 500 thousand rubles. Plus, the bad experience with the opening of the cafe hit the wallet hard.

Now we have reached the breakeven point. We make 700-800 cakes a day. Depending on the season, revenue is from 700 thousand rubles a month. The average cost of a cake for restaurants is 120 rubles, for frequent customers - 160 rubles. Prices are high due to expensive ingredients. You could save on them, but then everything will go down the drain. You probably noticed: as soon as a new product enters the market, there are no complaints about its quality. You "sit down" on it, and after some time you discover that the taste has changed, and not for the better. A very common story among manufacturers: to achieve brand recognition, gain a customer base and allow yourself to switch to cheaper products in the hope that no one will notice.

As for profit, we have no illusions. We understand that a candy store is not an oil well. The return on investment, as in any normal restaurant project, must be mortgaged for a period of 3 to 5 years. It all depends on how well the strategy is chosen and whether the goods are distributed effectively.



Future plans

Our team has professional athletes: Mikhail - a master of judo, Alexei - in karate, together we play football and prepare cakes. We are united by sports maximalism. "Bolshevik" and "Red October" are familiar to many Russian customers. In the future, we want to make SweetCraft the same recognizable brand. We are already starting production expansion: we are moving to another building with an area of \u200b\u200b300 square meters.

We plan to develop more affordable products, in the near future we want to make vegetarian desserts on a regular basis, and not on order. The current line was developed by the Frenchman, a chef from Italy is working on new positions. Now, on the recommendation, the restaurants themselves have come to us. Recently, a chain of stores with more than 80 outlets in Moscow wanted to buy our brand, but we refused. When production becomes more extensive, we ourselves will open a network of company stores.
