   Placcinas are a dish of Moldavian cuisine, and what a dish! Delicate and crunchy dough that is not felt in the mouth and only the taste of the filling remains, which by the way is varied (we will have platters with potatoes and pumpkin today)


   There are many recipes for placindas, but I think that the most delicious and simple this one!

(based on 11 large platinum)

For the test:

   * 800 ml of water;
   * 2 - 2, 100 kg of flour (excluding powder when rolling platinum);
   * 2-3 tablespoons. vegetable oil;
   * a pinch of salt

For filling

   * 2.5 kg of potatoes (potatoes, it is advisable to take razvarysty, so plzindy faster roasted);
   * 100 - 150 grams of meat (can be more, it was put here "for flavor")
   * 2 bulbs
   * salt, freshly ground black pepper
   * pumpkin - 300 grams
   * sugar to taste

   Pour water into a bowl, add vegetable oil, a pinch of salt and knead the dough. The dough should not stick to the hands and at the same time be very steep. Soft, pleasant to the touch. You can put a little more flour than the prescription, but do not get carried away.

So, knead the dough


   Divided it into portioned "balls" based on the size of your pan. I got 11 pieces.


   Cover with a towel and leave for 10-15 minutes to rest.

At this time, we will deal with the filling. Chop finely the meat and fry with 1 onion.


   Finely chop the potatoes.


   Add to the potatoes the fried meat with onions and all the vegetable oil from the pan after frying.

  • minced meat - 500 g,

Cooking process:

In a bowl, where we will knead the dough, put 1 teaspoon of salt.

Now pour in boiling water. Add 2 tbsp. spoons of vegetable oil. For cooking, I took extra virgin olive oil. You can take any vegetable oil you prefer. Suitable both olive and sesame, sunflower. Stir the water with oil and salt until the salt is completely dissolved.


Sift 3 cups of flour and inject them to the liquid. Knead a smooth dough. It is better to work with a spoon or fork (the last option is most convenient for me). Choux dough will be hot enough. Hands uncomfortable to work.


The dough for the plate comes out like this. If in your case it is a little thin, add some flour. Put aside. It should cool slightly.


In a bowl, prepare the stuffing. It can be made at home by yourself or purchased at the store.

Crush the onions. Add finely chopped onion to the minced meat. Mince salt and pepper to taste.


Add a couple of tablespoons of water to the meat filling and mix until smooth.


Divide the dough into 6-8 parts.


Roll each piece into the thinnest layer.


Use a knife to make cuts along the edge of the formation.


Put a small amount of minced meat in the middle of the cake. Approximately 1-2 tbsp. spoons.


Alternately lift each edge of the dough and cover them with the meat layer.

In the pan, pour a tablespoon of vegetable oil. Fry the plate in the pan on each side for 2-3 minutes until golden brown. Putting the cake in the pan, you must be sure that it is hot. After roasting the first flatbread, reduce the heat under the pan to medium level (or just below it). On a too hot pan, the following tortillas will quickly burn. We do not need this.


As a result, I got 6 cakes. I have already said that they can be done with different fillings. To make cheese and greens, place grated hard cheese in the middle of the tortilla.


Cut any greens finely and add to the filling. Add some salt and spices. You can squeeze a little garlic. Form a cake as described above. Fry on both sides, 2 minutes on each side.

Step by Step Cooking

  1. Take a deep bowl and pour 1 stack into it. high-grade flour and 1 pinch of salt. Mix everything well.

  8. Stir the dough well again, adding flour to the top.

  9. Cut the dough into 2 equal pieces and roll each of them to a thickness of 2 mm.

  10. In the center of the resulting circles put an equal amount of filling.



  11. Every corner of the resulting "envelope" open, wrap and glue them, not reaching the middle.

  12. Heat the pan, pour a small amount of sunflower oil there and fry the pies on each side (first on the side where the stitches are located).

  1. Sift 800 g of flour through a sieve. Pour it into a deep bowl, add a pinch of salt, mix everything.

  2. Add 50 ml of vegetable oil, 400 ml of warm water and mix until smooth.

  3. Put the dough on a table or a large chopping board and knead it for 5 minutes.

  4. Put it in a food container or any other container and leave it at a temperature of 18-20 degrees for 20-30 minutes.

  5. Pour 1 kg of cottage cheese, 4 chicken eggs and 2 tsp into a deep bowl. salt.

  6. Grind everything well with a fork.

  7. Wash well under running water and finely chop 100 g of fresh dill and 140 g of green onions.

  8. Pour chopped greens to the curd mass and mix everything well again.

  9. Take the dough and mix it again. Then divide it into 5 equal parts.

  10. Lubricate your hands and work surface with sunflower oil.

  11. Make small circles out of all the balls and smear them with vegetable oil on the front and back sides (place the circles on top of each other on the plate).

  12. Leave them at room temperature for 10 minutes.

  13. Roll each cake well so that your work surface appears through the edges and the center of the dough is a little thicker.

  14. Grease the cakes with vegetable oil.

  15. In the center, put an equal amount of filling.

  16. The ends of the dough with four edges wrap to the middle of the filling so that it is completely closed (you should get a square "envelope").

  18. Wrap and glue them, not reaching the middle.

  1. Mix 500 ml of kefir and 500 ml of matsoni and pour the resulting mixture into a container.

  3. Melt 400-500 g of butter and after it has cooled, pour it into kefir with matsoni and mix the resulting mixture.

  4. Add 1200 g of flour to the kefir mass and knead the dough.

  5. Peel 1400 g potatoes, cut into small cubes, boil and mash.

  6. Boil in salted water 4 chicken gammon. Let the mashed potatoes and ham cool down.

  7. Peel the skin of the hams, separate the chicken from the bone and disassemble it into small pieces.

  8. Peel and finely chop 4 onions.

  9. On a hot skillet, pour 4-6 tbsp. l sunflower oil and put there onions.

  10. Add the chicken to the onions, salt and pepper to taste and fry everything together.

  11. Put the mashed potatoes and chicken with onions in a deep bowl, mix everything well.

  12. Put a frying pan on a small fire so that it is preheated.

  13. Sprinkle a small amount of flour onto the work surface; grease your hands with vegetable oil.

  14. Put the dough on a work surface and divide it into 20 equal parts.

  15. Roll each roll with a rolling pin or knead with your hands to a thickness of 1 cm.

  16. In the center of the resulting circles, place 1 tbsp. l stuffing.

  17. Tear the ends of the dough over the filling and roll the already formed plies into the flat cakes again.

  • activated yeast - 5 g;
  • milk - 0,200 l;
  • sunflower oil.

How to make Moldovan placids:

Heat the milk slightly and dilute the yeast in it.

While the yeast is completely dissolved, prepare the filling for the plate. In a deep container we combine: cottage cheese, finely ground, washed greens, one egg. We add a little salt and mix thoroughly. The filling is ready for use. So you can already do the test.


Combine the flour, milk, one egg and a couple of pinches of salt. If there is little milk, you can add some warm water. Knead the mixture until a homogeneous dough. The dough for the plate should be soft. Feelings are such that we knead the balloon. Leave the dough for 17 minutes "rest."

Divide the dough into 6 identical pieces. We knead each separately.

Now it's time to roll out the layers. We start with a piece, which was crushed first. Roll out small layers. Liberally grease them with sunflower oil and stack one on top of the other. This will soften the dough even more, and it will become more elastic.

We turn over the pile and begin to stretch the layer from the first. Stretch it with your hands gently so as not to tear. The thinner the dough, the better. If the formation is dry, you need to lubricate it a little more. And if the formation is sufficiently lubricated, we impose a filling. Cottage cheese is distributed as evenly as possible on only half of the reservoir.

Fold it into a harness, starting from the side with the filling. We form the plate in circular motions (see photo, how to make a plate). We put it on a baking sheet. So do with all layers.

So it came the turn and the remaining eggs. From it we use only the yolk. Knock it down carefully. With whipped yolk we will grease the plies. In principle, ready. But there is another nuance - plate can be decorated:
