If you like different kinds of jellies and, but you will definitely like this dessert. Having bought a bunch of bananas the other day I began to think about how to cook delicious from them and remembered about banana mousse. I started looking for a suitable recipe on the Internet.

It turns out that there are a lot of banana mousse recipes on the Internet. Among them, such recipes as cottage cheese-banana, chocolate-banana mousse, strawberry-banana mousse, creamy banana mousse, banana mousse with proteins, with gelatin are very popular.

Since I was preparing it for the first time, I decided to try to prepare for a start a simple classic banana mousse with gelatin based on sour cream, without adding additional components.

The banana mousse turned out to be as consistency as I expected, thick, elastic like jelly, but at the same time more airy, with air bubbles. This banana mousse can be prepared as a separate dessert or used for.

The first I propose to consider my option of how to cook banana mousse step by step with photo and then other banana mousse recipes that I found on the Internet.

Ingredients:

  • Gelatin - 25 gr.,
  • Water - 50-70 ml.,
  • Sour cream 20% fat - glass,
  • Sugar - 4 tbsp. spoons,
  • Vanillin - half a bag,
  • Bananas - 2 pcs.,
  • Lemon juice - 1 tsp,

Banana mousse - recipe

Making banana mousse starts with preparing the gelatin. Pour the instant gelatin into a small bowl.

Fill it with hot water at a temperature of 80-90C. Stir. Typically, the gelatin dissolves immediately. Let it cool down to 35-40C.

In the meantime, prepare the other banana mousse ingredients. Set aside the required amount of sour cream in a bowl or bucket (I have sour cream).

Add vanillin.

Add sugar.

With an immersion blender, but better with a mixer, mix sour cream with sugar and vanilla.

Peel the bananas. Cut them into circles.

Add to whipped sour cream. Add freshly squeezed lemon juice or lemon concentrate. In addition to the fact that the banana mousse will acquire a sourness, it will become lighter in color, due to the fact that the acid will inhibit the oxidation and darkening of the bananas.

If at the first stage of preparing the mousse, you could use a mixer or a blender to choose from, now, in order to turn all the ingredients into a homogeneous mass, we need a submersible blender. Use a hand blender to beat the bananas and sour cream until smooth.

The base of the banana mousse is ready. Pour in the cooled gelatin.

Interrupt all the components again.

The banana mousse is ready, but it needs to cool and set.

Pour it over bowls, small glasses, bowls. Refrigerate. As soon as its surface becomes dense, it can be assumed that it is ready. To make the banana mousse even more appetizing, garnish it with grated chocolate, fudge or icing, nuts, mint leaves, or banana slices before serving. Enjoy your meal. I would be glad if you like this banana mousse recipe and come in handy.

It is impossible to find a person who does not like sweets. Sweets help people to become happier, kinder, but everything has its own price. The main side effect of eating sweets is the extra centimeters around the waist. Recently, "healthy" low-calorie dietary sweets have come into vogue. Banana mousse has become one of the most popular desserts. This airy delicacy will make the day more colorful, and the mood will be bright and will not harm the figure at all.

Peculiarities

All ingenious is simple, which is why most people rarely ask questions about the appearance of simple things. So it is with the origin of the mousse - for sure this question rarely arises, and in vain! This is a fascinating story that happened in France, and it is associated with mayonnaise and a famous French artist.

The name of the inventor of this delicacy is lost with no hope of finding it. The first evidence of the existence of a product such as mousse dates back to 1894. At that time, gelatin-condensed whipped fish or vegetable snacks became popular in France. Such a product could in no way be called a dessert.

Decades later, Henri Toulouse-Lautrec invented "Chocolate Mayonnaise", which became the ancestor of all modern mousses. The artist beat the chocolate and egg whites to a firm, firm foam. This dessert is firmly entrenched in the culinary traditions of France. Today, the menu of every French cafe contains the canonical Mousse au Chocolat, created according to the recipe of the great Toulouse-Lautrec.

Throughout the 20th and 21st centuries, the mousse recipe changed, transformed, acquired new ingredients, supplemented and improved. Today, the ability to make high-quality mousse is considered to be the pinnacle of confectionery art.

Technology and subtleties of cooking

Whatever recipe for mousse the pastry chef chooses, the technology of preparation of this dessert is unchanged and is always subject to a strict sequence of actions.

  1. Preparation of gelatin. At this stage, it is important to properly prepare the gelatin: for this you need to pour dry gelatin with a small amount of cold boiled water, mix thoroughly and leave to swell for 30 minutes. There should be a minimum amount of water, as it can destroy the structure of the dessert. Swollen gelatin must be brought to a boil, stirring slowly, and left to cool.
  2. Preparation of the base. To prepare the perfect mousse, you need to thoroughly grind the product, bring it to a state of homogeneous puree.
  3. Foaming base. At this stage, it is important to decide on the component that will make the mousse light and airy. Beat the egg whites, heavy cream, or banana pulp until light foam. Banana for making mousses should be as ripe as possible, but without black spots, because they are more moist and will not allow the pulp to be whipped into a strong foam. It is also very important to peel the banana thoroughly. In addition to the peel, it is necessary to remove all the "villi" that may be on its surface, since they are difficult to grind.
  4. The main stage. At this stage, it is necessary to thoroughly beat the base with a mixer, continuing to beat, gradually pour out the whites and continue until an airy, stable foam is formed. Then pour in the gelatin cooled to room temperature and mix gently. In order for the gelatin not to sediment the foam, it must be poured in a thin stream and quickly mixed with a wide silicone spatula with smooth circular movements in the direction from the bottom to the surface of the mass.
  5. Cooling. The resulting mass must be poured into molds and refrigerated until completely solidified.

Recipes

Banana is a product that can be easily combined with a huge number of other ingredients.

In order not to get confused in this variety and not to be mistaken with the choice of a really good mousse recipe, you should opt for proven options.

Creamy banana

One of the classic options for mousse is creamy banana.

To prepare it you will need:

  • 3 bananas;
  • 200 milliliters of cream;
  • 2 tablespoons of powdered sugar;
  • 1 sprig of vanilla;
  • juice of ½ lemon.

Peel the banana, cut into slices, pour with lemon juice and grind until smooth. Combine the cooled cream with powdered sugar and beat until firm peaks. Add banana puree to the finished foam, mix thoroughly. Put the prepared mass in the bowls, serve immediately.

In order to make such a dessert in advance, it is necessary to combine the finished foam with gelatin soaked according to the instructions and cool.

Banana and plum

To surprise loved ones, it is not necessary to look for exotic things, it is enough just to find an unconventional combination of traditional things. For example, you can please them with an original dessert of plums and bananas.

In order to make banana and plum mousse, you will need:

  • 2 ripe bananas;
  • 600 grams of plums;
  • 1 cinnamon stick;
  • 150 grams of sugar;
  • 10 grams of gelatin.

Soak gelatin in a minimum amount of water according to the instructions. Peel the plums, put them on a baking sheet and bake in an oven preheated to 180 degrees for 10 minutes. Then put them in a blender bowl, add bananas and beat until smooth. The resulting mass must be combined with gelatin, add sugar and beat for a few more minutes until the sugar dissolves.

Put cinnamon in the finished puree and bring to a boil over low heat, pour into molds and cool until it solidifies.

Curd mousse with banana

This is a dietary version of the dessert, as no sugar or other sweeteners are used in its preparation.

To prepare curd mousse with banana you will need:

  • 200 grams of cottage cheese;
  • 2 ripe bananas;
  • 200 milliliters of cream, 30% fat;
  • juice of ½ lemon.

Cottage cheese must be wiped through a fine sieve and chopped thoroughly with a blender with a puree attachment. If the cottage cheese is dry and poorly pureed, you can add 2-3 tablespoons of cream to it.

Banana must be peeled and subcutaneous films, cut into large chunks and mashed with a blender until smooth. In order for the banana pulp not to darken, it must be poured with lemon juice and mixed thoroughly.

Beat the cream with a mixer until stable peaks are obtained. Continuing whipping, add cottage cheese and banana puree in small portions. Beat until smooth.

This version of the mousse is made just before serving, since it does not have a thickener base, which means it will quickly lose its shape. In order to make such a mousse in advance, it is enough just to soak the gelatin according to the instructions, then add it to the cream along with the cottage cheese and banana.

You will learn more about how to make banana mousse in the following video.

Banana mousse - a delicious and sophisticated delicacy that can not be tasted in all cafes or restaurants. But, at the same time, every housewife can cook it at home using ordinary kitchen utensils. This delicacy turns out to be porous, airy and tender.

Banana mousse, the recipe and photo of which we will provide to your attention, will be an excellent decoration for the festive table, which will delight all guests. Also, this delicacy, due to the fact that its recipe is quite simple, can be made on a regular day, thereby delighting your household with yummy.

After trying and spending a little time on cooking, the banana mousse will turn out appetizing and tender, and its appearance will be the same as in the photo. Intrigued? Then read the recipe carefully and let's go!

This is a regular mousse without any additives that retains the strong banana flavor. It needs the following ingredients:

  • 2 bananas;
  • 150 g cream 25% fat;
  • 1 teaspoon lemon juice
  • 1 tablespoon honey
  • 2 egg whites;
  • 0.5 teaspoon vanilla sugar.

To make the banana mousse really tasty and sweet, the recipe uses good, yellow, ripe bananas. The more ripe the banana is, the tastier it will be. We peel them, and then cut them into pieces and put them in a bowl. Add lemon juice, vanilla sugar and honey to the bananas.

Beat everything thoroughly with a blender to get a homogeneous mass, without any lumps. After that, we need to pour cream into our mass, and then beat the mass again. As for the latter, the recipe allows the use of heavier cream, for example, the classic 33% fat. With them, the banana mousse will turn out to be even softer, tastier and, more importantly, tastier, and will be as beautiful as in the photo.

So, we set aside the whipped banana-creamy mass with a blender and proceed to whipping the eggs. Gently separate the yolks from the whites. Our whites should be clean, without shell particles and inclusions of yolks. We beat them, of course. We do this with a mixer, since it will take a very long and intense whisk to whisk. Beat our proteins until they form a fluffy foam, or rather, stable, white and shiny peaks.

After this action, we are faced with a difficult, but very important task: we need to mix the banana mass with proteins. It is the proteins that will give our mousse a splendor, so you need to mix very, very carefully. We put the squirrels on top, and not all at once, but by dividing them in half, thus mixing them in two passes. Stir gently from top to bottom. As a result, you should have a homogeneous mass of pleasant, as in the photo, color. As you can see, the recipe is very simple, because the banana mousse is almost ready at this point. We just have to put it in beautiful bowls or glasses and put it in the refrigerator for about 20 minutes. When we get our banana mousse, we can decorate it with nuts on top, put a slice of some fruit on the side of the dish, or sprinkle it with grated chocolate. The recipe does not limit you in this matter.

Banana Orange Dessert

This recipe is special in that we use orange juice in it, and we get banana mousse with orange notes, which gives it an unforgettable taste. For such a delicacy, we will need:

  • 3 bananas;
  • 1 glass of orange juice, or even better - fresh;
  • 2 packs of orange jelly;
  • 300 ml of concentrated sterilized milk;
  • Half a glass of sugar.

And this recipe provides for the beginning of cooking with actions on bananas. We clean them, then cut them into circles and put them in a saucepan. Then pour orange juice to them, and add sugar. then we put our saucepan on a small fire. Bring the mass to a boil and, stirring, boil the bananas until they become gruel. We cook our gruel, counting from the moment when it boiled, about seven minutes. and then turn off the fire.

Then we take the jelly. If you have one that does not need to be soaked, immediately put it in the banana porridge. If you want to soak, add about six tablespoons of water to it, wait until it swells, and then dissolve over the fire, not allowing it to boil. Then add to the banana gruel.

We need to cool the concentrated milk, and then beat well with a mixer. Such milk has a wonderful property of whipping into an excellent fluffy foam. When the milk has whipped, gently add it to the banana mixture and stir gently. If you have not found such milk, the recipe calls for using cream instead, which also needs to be whipped.

After that, we put the mousse in bowls or cups and send it to the refrigerator. Let him stay there all night. As you can see, cooking such a pleasure as in the photo is quite easy, and every housewife will definitely get a banana mousse.

Before you start preparing the strawberry-banana mousse, you need to do some actions with the products: keep the cream cheese in the refrigerator for at least 4-5 hours, and, on the contrary, remove the butter from the refrigerator about 1 hour before cooking, it should become soft and pliable. Only under such conditions will you end up with an excellent mass with a delicate texture and taste.

So, you can start cooking: beat the butter with powdered sugar using a mixer or blender with a whisk attachment. Beat the ingredients until the mixture is smooth and white (this will take about 5-6 minutes).

Add prepared cold cream cheese (such as Almette) and beat again thoroughly with a blender.

Rinse the strawberries, remove the green part with leaves and dry well with napkins or paper towels. Berries should not have excess moisture on them.

Put the strawberries and banana slices in a blender bowl and chop in a puree.

Combine the strawberry banana puree with the butter and butter mixture ...

And beat thoroughly with a mixer.

Divide the mousse into containers (bowls, decorative jars, bowls) and refrigerate for 2 hours to harden.

Serve chilled and garnish with strawberries and mint leaves.
