Avocado with cheese and garlic. Three grated 1-2 medium avocados, 150 gr. cheese, 2-3 cloves of garlic, salt, season with sour cream or mayonnaise.

Pancakes with various "economical" fillings. We wrap various fillings in thin pancakes: finely chopped or grated boiled eggs, rice with fried onions; liver with onions and eggs; mashed potatoes with mushrooms and fried onions; cheese with mushrooms; sliced ​​boiled sausage with mushrooms and cheese.

Salad with biscuits "Fish". Lay out in layers: “fish” cookies, coat with mayonnaise, grated smoked cheese (“Sausage”), finely chopped chicken breast with green onions, 3 finely grated eggs, a layer of mayonnaise. It is better to let it brew in the refrigerator for 2-3 hours so that the cookies are “soaked”.

Salad with fresh vegetables and herbs:
Option 1: young cabbage, cucumber, dill, green onion, sour cream, salt.
Option 2: cucumber, radish, 2 finely chopped eggs, lots of herbs, salt, sour cream.
Option 3: cucumber, tomato, sweet pepper, cheese, onion, herbs, salt, sour cream.

Tomatoes with cheese and garlic. Cut the tomatoes into rings, put grated cheese with garlic and mayonnaise on top.

Liver plates. We make a liver pate: 0.5 kg of boiled or fried liver, 1 carrot, 1 onion, 0.5 packs of plums. oils, salt and spices to taste. Scroll the liver with vegetables in a meat grinder, mix everything. Then put on "wheat plates", tartlets or bread.

Salo. Salo can be used both as a cut, and make a kind of snack by chopping it together with garlic and pepper in a meat grinder. Then spread this mixture on bread. It turns out especially tasty if such sandwiches are slightly warmed over a fire on a grate.

It is more economical when using an abundance of seasonal ingredients: if there are freshly picked or canned, frozen mushrooms, we cook dishes with them, in the season of an abundance of fresh vegetables, we use them to the maximum, etc.

Chicken breast fritters. Finely chop the raw chicken breast, 1 onion, salt, pepper, mix with mayonnaise and fry in a pan.

Chicken cutlets. We scroll the chicken breast, add a small piece of bacon or pork, 2 eggs, salt, pepper, a little milk, bread or potatoes. Mix thoroughly and fry.

Liver pancakes. Grind 0.5 kg of chicken liver in a meat grinder or blender, 1-2 eggs, 2 tbsp. spoons of milk, onion, 100-200 gr. flour. Mix thoroughly until thick sour cream and spread the pancakes on a preheated pan.

Fish in sauce. Ingredients: 3 large pollock, 1 carrot, 1 onion, 100 gr. milk, 2 tbsp. spoons of sour cream, salt, pepper. Put the fish in a hot pan, fry on both sides, add chopped carrots and onions, simmer for 5 minutes, add milk, sour cream, seasoning, simmer for another 5-10 minutes.

Boiled rice with fried mushrooms. Separately, cook the rice and fry the mushrooms with onions, then mix or spread the mushrooms on top of the rice.

Chicken wings baked in the oven. A few hours before baking, soak chicken wings in sauce: sour cream or mayonnaise, salt, pepper, spicy seasoning. Then spread on a baking sheet and bake until crispy.

Potato casserole. We wrap it in thin pita bread, laying it out in layers: mashed potatoes, minced meat or stew, fried onions, cheese, sour cream.

Warm meat salad. Fry separately: finely chopped chicken breast, a little beef and vegetables: eggplant, zucchini, onions. We spread it on a plate, serve it short.

1. Preheat the oven to 180 C.
2. Minced mince through a meat grinder along with onions and herbs, salt and pepper, mix thoroughly. Divide minced meat into two equal parts.
3. Lay foil on the table in one layer (with a margin for the lid). Form a rectangular bottom from half of the minced meat, in which to make five small nests. Put the peeled eggs into the recesses. Close with the second part of minced meat and carefully shape the meat loaf.
4. Cover the top with bay leaves, cover with foil, pinch the edges tightly and wrap with foil in several more layers. Bake in the oven for an hour.

Ingredients:
● pork tenderloin 1 kg
● dried apricots 120 g
● dry white wine 120 ml
● apple 1 pc.
● bacon 75 g
● salt, pepper to taste
● ground cloves to taste

Cooking:
Preheat the oven to 180 degrees. Cut the dried apricots into cubes and pour over the wine. Leave for 30 minutes, then strain. Do not pour wine. Grate the apple. Chop bacon and mix with apples and dried apricots. Salt the filling, pepper and season with cloves. On the meat, make a longitudinal cut 3 cm deep and make 2 transverse cuts from it to the sides.

Fill the resulting pocket with stuffing, tie the meat with a thread. Lubricate the baking dish with oil, put the meat in it and put in the oven for 40-50 minutes. Pour the wine over the meat every 15 minutes. Remove the cooked meat from the oven, wrap in foil and leave for 15 minutes. Cut into slices and serve.

Roast pork with cloves

Ingredients:
● pork leg 5 kg
● water 3 l
● salt 12 tsp.
● carrots 2 pcs.
● swede or turnip 1 pc.
● bow 2 pcs.
● stem celery 300 g
● bay leaf 3 pcs.
● allspice 7 peas
● cloves to taste
● apricot jam 200 g
● cognac 50 ml

Cooking:
1. Separate the ham with the skin from the bone. Dissolve salt in water and pour over meat. Put in the refrigerator for 12 hours. Then drain the liquid and again pour the meat with salted water.
2. Coarsely chop the vegetables. Put the ham in a saucepan with vegetables and pour boiling water. Bring to a boil over high heat, add pepper and immediately reduce heat. Cook the ham for 5 hours under a lid with a hole.
3. Remove the ham from the broth and place it on a baking sheet. Let the ham cool down a bit. Then you need to cut off the skin with a thin layer of fat from it. With a sharp knife, make cuts in the form of a grid. Insert a clove bud into each cage.
4. Mix cognac with apricot jam. Apply the mixture on the surface of the ham and bake for 1 hour in an oven preheated to 180 C.

Ingredients:
● Chicken fillet - 4 pcs.,
● Buckwheat - 1 cup,
● Water - 2 glasses,
● Mushrooms - 500 gr.,
● Bulb onion (large) - 1 pc.,
● Cream 22% - 500 ml.,
● Vegetable oil - 2 tablespoons,
● Butter - 1 tbsp.
● Salt - to taste,
● Freshly ground black pepper - to taste.

Cooking:
1. Rinse buckwheat under cold running water. Pour 2 cups of water into a saucepan, bring to a boil, salt, add buckwheat, bring to a boil, cover, reduce heat to a minimum and cook buckwheat until the water has completely evaporated (until cooked).
2. In a large stewpan (frying pan), heat vegetable and butter, put the chopped onion and fry until slightly golden. Add the champignons sliced ​​​​in plates to the onion, fry the mushrooms until the liquid has completely evaporated. Salt mushrooms, pepper to taste.
3. Mix buckwheat with a small amount of mushrooms.
4. In the middle of the chicken fillet, with a sharp knife, make an incision without reaching the end of the fillet. You also need to make side cuts inside the fillet, thereby increasing the pocket for the filling. Salt the prepared fillets inside and out. Stuff with buckwheat with mushrooms, and close the “pocket” with a smaller fillet.


5. In a grill pan (or in a regular pan), heat a couple of tablespoons of vegetable oil, fry the stuffed fillet on both sides until slightly golden. Pour cream into a saucepan with the remaining mushrooms, bring to a boil, salt and pepper to taste, put the fried chicken fillets there and simmer under a closed lid for 10 minutes.

On a note! You can start the meat to your taste.

Ingredients:

1 PC. chicken breast (boneless)
2 tbsp. cow's milk
3 tsp salt
1 tbsp olive oil
1 tbsp soy sauce
1 tsp honey
1/4 tsp nutmeg

Cooking:

1. Wash the chicken breast and place in a container. Pour the chicken breast with milk, well mixed with salt. Leave in milk for 2 hours.
2. After three hours, remove the chicken breast from the milk, pat dry with paper towels and tie tightly with kitchen string.

Prepare marinade. Mix in a separate container olive (sunflower) oil, honey, soy sauce, lime juice, nutmeg, sweet paprika and garlic, passed through a press. Coat the chicken fillet well with marinade and leave to marinate for 10-15 minutes.

3. Next, put the roll in a mold or on a baking sheet covered with baking paper and send it to the oven, preheated to 220 degrees, for 20 minutes. After 30 min. take out, grease with sour cream mixture (mixture 3). Bake another ~40 min.

Ingredients:
● 1.5 kg pork boneless
● 2 tbsp. salt
● 4 tbsp. Sahara
● 3 bay leaves
● 1 tsp. dill seed
● 1 tsp. coriander seed
● 10 black peppercorns

● 1 tbsp. parsley
● 1 tbsp. cilantro greens
● Favorite seasonings

For confiture:
● 10 small onions
● 2 garlic cloves
● 300 gr. white grapes (not quiche mish) and orange peel strips
● 100 gr. Sahara
● 100 ml of water
● 1 tbsp. butter

Cooking:
Boil 1.5 liters of water with salt, sugar, bay leaf, dill and coriander seeds and black peppercorns. You can add a few more cubeb peppercorns. Cool the marinade to room temperature, put the meat in it and leave for 2 hours at room temperature. Remove pork from marinade, pat dry and brush with oil. Sprinkle with finely chopped herbs and seasonings, salt if necessary. Dry adjika and hamburger mix are good. Wrap meat tightly in foil (if foil is thin, use 2 layers). Bake in preheated to 200 gr. oven for about an hour and a half.

Peel the onion, cut in half. If mini onions, then you can not cut them. Remove the seeds from the grapes. Fry the garlic in butter (previously crushed with a knife blade), then remove it, put the onion in the oil and fry for 2-3 minutes. Dry the oil from the onion on paper towels. Boil water with sugar over low heat until the latter is completely dissolved. Put onion, grapes, orange strips in the syrup. Excellent taste will betray ginger. Cook, stirring constantly, until the consistency of liquid jam. Serve pork with confiture both hot and cold. This is delicious!

Ingredients:
● A piece of pork weighing about 1 kg

Ingredients:
● beef (steaks, 250-300 g each) 2 pcs.
● vegetable oil 2 tbsp.
● salt, pepper to taste

For sauce:
● onion 1 pc.
● white wine 50 ml
● mustard with grains 1 tbsp.
● cream 120 ml
● seasonings to taste

Cooking:
1. Heat vegetable oil in a frying pan, fry the meat on both sides for 3-4 minutes until golden brown. Salt and pepper. Bring to readiness in a hot oven for 10-12 minutes.

  • pork ribs - 2 kg;
  • raw pork sausages - 500 g;

  • chicken broth - 0.5 l;
  • flour - 2 tbsp. l.;

  1. The skins are removed from pork sausages. The meat is placed in a medium-sized bowl, mixed with parsley, lemon zest, ground black pepper and mustard. Salt is not needed.
  2. A pocket is cut along the ribs. This cavity is stuffed with minced sausages. To keep the pockets from spreading, you can use environmentally friendly ropes. The cooking time can be calculated as follows: for every 450 g - 25 minutes at 220 ° C in the oven.
  3. Whole onion rings are laid in an even layer on the bottom of the baking sheet. The ribs are placed on a layer of onion skin side up and sprinkled with salt.
  4. The ribs are baked based on the calculation described in point 2, but after the first forty minutes the temperature should be reduced to 180 ° C. Ideally, full readiness can be seen when piercing the ribs with a fork or knife - if the juice is clear, then it is ready.
  5. Ready ribs are transferred to the board, covered with foil and infused in a warm place for about 30 minutes.
  6. While the meat is cooling, prepare the gravy. The fat that has been rendered from pork is scooped out into the pan. Separately merges another 1 tbsp. l. The main volume in the pan is placed on the stove (medium heat). The fat is sprinkled with flour and mixed. Then the pan is removed from the heat (without turning off the stove), and the contents are gradually poured with cider during the mixing process. After that, the dishes are returned to the fire. Gravy, stirring often, you need to boil for another 2 minutes and pour the broth into it. This "fatty soup" should barely simmer for 12-15 minutes until it's thick enough.
  7. The gravy is strained into a heated gravy boat or other clean dish. Add honey or jelly, mustard and the remaining (1 tbsp.) rendered fat.

Ingredients:

  • Minced meat to your taste - 500 grams;

Add peppers and tomatoes, simmer for 5-7 minutes.

Cover with a lid, reduce the heat and simmer in its own juice for 15 minutes.

Remove the lid, season with salt and pepper, add heat and simmer until the liquid has evaporated by half.

Divide the cooked meat into 2 parts. Place half of the meat in a saucepan, pour in 1 cup of vegetable or meat broth, let it boil and add potatoes, bring to a boil, add salt if necessary.

Remove heat, add oil and bay leaf.

Well, okay, we will assume that you managed to beat the pieces of pork meat in some way, and we got the primary blank for our chops.
  2. We throw all the served pieces of meat into a saucepan (there it will be most convenient to mix), salt, pepper, and sprinkle with spices for meat. A bouquet of spices - come up with it yourself, personally I always collect it randomly, based on what is available.
