We continue the topic of small pastries whipped up. Today we will bake delicious cottage cheese cookies, a simple recipe that has been familiar to many since childhood - it came to us from Soviet times almost unchanged (except that we now replace margarine with butter, because now it is not in short supply). If there are children in the house, be sure to involve them in the process of forming cookies from cottage cheese. I personally am not familiar with any child who would not like to cut circles out of dough, sprinkle them with sugar and put them into pads. The dough is completely non-sticky, pleasant to work with. In the process of baking, the cookies rise, are covered with an even golden crust, look so appetizing that whole baking sheets are eaten at such a speed that you do not have time to blink an eye. So if your family has a lot of cookie lovers, double the number of products, then cottage cheese cookies from the second baking sheet have a chance to reach evening tea.

Ingredients:

  • egg - 1 pc.;
  • cottage cheese from 9% fat content - 300 g;
  • flour - 1.5 cups (cup \u003d 250 ml);
  • sugar - 0.5 cups;
  • butter - 70 g;
  • baking powder - 1 tsp

How to make delicious cottage cheese cookies

Add one egg to the curd and mix roughly.


Melt the butter in a ladle, let cool slightly, pour into the cottage cheese and quickly rub it with a spoon. Then enter the baking powder. You can replace it with soda (in this case, it does not need to be extinguished, because cottage cheese is a fermented milk product containing acid, which will act as a catalyst).


Sift flour into the curd. For such a volume of cottage cheese (300 g), an average of 1.5 cups of flour is needed. But it should be borne in mind that the humidity of the cottage cheese may vary. For example, store cottage cheese contains more whey, as opposed to homemade. And flour for store curd may need a little more. When determining the “sufficiency” of flour in the dough, you should focus on whether the dough sticks to your hands or not. This curd dough should be absolutely non-sticky.


Note that we did not add sugar to the dough. We will need it in the next stage of preparation.


Divide the dough into 4 parts, so it will be easier to work with. Each part is alternately rolled into a layer, 3-4 mm thick. The working surface on which we work with the dough should be crushed with flour. Using a glass or mug (with a diameter of about 8 cm), cut out circles from the dough.


Each circle is dipped in sugar on one side.


Fold the loan in half so that the sugar remains sealed inside. Dip the half again in sugar on one side. And again, fold in half (sugar inside).


The final action - dip the “quarter” in sugar on one side. This will be the top of the cookie.


We put the blanks with the non-sugared side on a baking sheet covered with parchment. Do not forget that the sugar side should be on top. Before sending cookies to the oven, you should perform one small action. Using a wooden spatula, press each cookie so that it is flattened slightly.


The oven is preheated to 180 degrees, and we only need to send a baking sheet with cottage cheese cookies into it and wait 25 minutes. Ready-made curd cookies should acquire a ruddy golden surface and slightly increase in size.


Immediately after baking, remove the still-cooled cookies from the parchment until it adheres tightly to it (the sugar melts and forms a caramel that could come in contact with the parchment).

And at the same time it is made quickly and from the usual ingredients, and at the end it turns out with a crisp and airy inside - simply incomparable.


Ingredients:

  • 250 gr cottage cheese;
  • 150 gr. flour;
  • 1 tbsp + 5 tbsp Sahara;
  • 100 gr. butter;
  • 1 tsp baking powder;
  • a pinch of salt.

Cooking:

1. To start, mix the cottage cheese with 1 tbsp. sugar and a pinch of salt. If you want to make a more uniform dough, then it should be grated or crushed in advance with a blender. Then add the melted cooled butter and mix again.


It is better to add flour in parts so that it is convenient to knead the dough.

When you knead, it will probably not keep its shape and disintegrate. Therefore, it should be put in the refrigerator for 1-2 hours (the longer, the better) so that it becomes malleable.


3. After the time has passed, remove the dough from the refrigerator and divide it in half. First, we will work with one part, and put the second again in the refrigerator.

4. So, thinly roll out the dough and cut out identical circles with a diameter of 7-10 cm using the mold. By the way, other circles can also be formed from the rest of the dough.


5. Pour sugar (5 tbsp) into a small plate. Next, take a circle and dip it in it with one side. Then fold in half the sugar side inward and squeeze a little. Dip sugar on one side again and turn inside again. We dip the resulting triangle for the last time in sugar. The same process needs to be done with the rest of the circles.


As you can see, a lot of sugar is used for sprinkling, so you can optionally not add it to the dough.

6. Place the Ears on a baking sheet covered with parchment paper, sugar up. Bake at 180 degrees for 25 minutes until golden brown or golden brown. Before serving, of course, you need to let it cool.


An old recipe for cottage cheese cookies through a meat grinder

Have you ever tried to cook cookies through a meat grinder? I - yes, and I liked it. There is no need to roll out the dough with a rolling pin and you do not need to cut figures out of it with molds. You just need an electric (or manual) meat grinder, through which we will pass the dough and immediately send it for baking. Only 15 minutes and a delicious friable delicacy is ready!


Ingredients:

  • butter - 250 gr.;
  • cottage cheese - 250 gr.;
  • sugar - 4 tbsp;
  • egg - 2 pcs.;
  • flour - 500-600 gr.;
  • vanilla sugar - 2 sachets;
  • baking powder - 1 sachet;
  • a pinch of salt.

Cooking:

1. Put in a large bowl and mix the softened butter, cottage cheese, sugar, a pinch of salt, vanilla sugar, 2 eggs and a baking powder. Next, pour the sifted flour in small portions so that the dough does not become hard. As a result, it should turn out soft and not stick to your hands.


2. In the meantime, you can preheat the oven to 180 degrees and install a grill with large holes in the meat grinder. Divide the curd dough into 4 parts, each of which is rolled into such a “sausage”.


3. Scroll the “sausage” through the meat grinder and cut the outgoing flagella with a knife to the desired length of the product. Here is such a scroll through a meat grinder it should work. Next, put on a baking sheet with parchment paper and sprinkle sugar on top.

And this cookie variant will appeal to those who are on a diet or those who just want to try a light dessert with a low calorie content. We will exclude butter or margarine and eggs from the ingredients, but add ripe apples. And we get not a high-calorie, healthy, but at the same time tasty and sweet dessert.


Ingredients:

  • 250 g of cottage cheese;
  • 100 ml kefir (yogurt);
  • 250 g of flour;
  • 1-2 apples;
  • 5 tbsp Sahara;
  • a pinch of salt;
  • cinnamon;
  • powdered sugar.

Cooking:

1. First, grind the cottage cheese through a blender or by hand to remove large pieces, while adding sugar and salt. Then pour kefir or yogurt and sift the flour. Knead the dough, which in the end should be soft and elastic.


2. Now roll the resulting dough thinly (2-3 mm) and cut into equal 5 * 5 cm squares using a curly wheel.

Therefore, if you do not want to bother with the oven, I propose this method of cooking. And if you want it to be unsweetened, exclude sugar from the ingredients.


Ingredients:

  • 100 g of cottage cheese;
  • 200 g of flour;
  • 100 g butter;
  • 2 tbsp Sahara;
  • 1/2 tsp cinnamon
  • 1/2 tsp baking powder;
  • a pinch of salt.

Cooking:

1. Put sugar, baking powder and salt in a container for kneading dough. Then sift the flour to make the dough more airy. Mix well.


2. Take the butter and grate it on a coarse grater. Then the whole mass should be crushed into crumbs.

The oil must be chilled, so put it in the refrigerator for half an hour before use.


3. In the middle, make a deepening and lay out the curd. Knead the dough until it becomes homogeneous and sticks to your hands. If it is difficult to sculpt, add a tablespoon of water or sour cream.

4. Then give the dough a sausage shape and wrap in cling film to refrigerate for 30-40 minutes. After that, cut the sausage into slices about 1 cm thick.


5. Put these slices in a preheated pan and fry until golden on each side for about 4 minutes without using vegetable oil.

Echpochmak prepare in much the same way as Ears. Thanks to the curd, it turns out to be sweet and tender, although it is not felt. By the way, this name for cookies was borrowed from the Tatar pastries Echpochmak (in translation - a triangle), which has a triangular shape. So, look how to cook this delicacy step by step.


Ingredients:

  • 200 gr. cottage cheese;
  • 4 tbsp Sahara;
  • 150 gr. flour;
  • 100 gr. butter;
  • 5 g. Of baking powder;
  • 5 g vanilla sugar.

Cooking:

1. First, grind the cottage cheese with soft butter until an airy homogeneous mass is obtained. You can use a submersible blender or a sieve.

By the way, if you use home-made cottage cheese, then the cookies will be more airy.


2. Then gradually add the sifted flour and baking powder.

If the cottage cheese is dry, add less flour.

Knead the dough with your hands until it becomes elastic and stops sticking to your hands. And put it in a plastic bag and leave it in the refrigerator for half an hour.


3. Sprinkle the surface of the table with flour and lay out the dough. Divide it in half. Roll one piece of dough into a 3-5 mm thick layer. Using a glass, cut round blanks with a diameter of about 8 cm. Do the same with the other part of the dough.


4. Take a separate plate and pour sugar, as well as some vanilla sugar. Now we dip each circle on one side in this mixture. Then fold in half the sugar side inward. Roll the circle again to get a triangle and dip it in sugar again.


5. Put the finished products in a baking dish, covered with parchment paper, with the sugar side down and send to the necessarily preheated oven. Bake at 200 degrees for 10-15 minutes until they are golden brown.


6. These are so golden they turn out. They are especially tasty when cold, so let them cool in advance and serve with tea or milk.


Cooking puff pastry from cottage cheese and sour cream at home

If you love sour cream and at the same time avoid butter in the diet, then this cookie is for you! Cottage cheese in combination with sour cream acquires a special taste that you can’t confuse with anything. Of course, it will be ideal if these products are rustic, then the pastries will be much tastier and just melt in your mouth. So let's get started!


Ingredients:

  • 200 gr. cottage cheese 9% fat;
  • 100 gr. sour cream;
  • 1 sachet of vanilla sugar;
  • 2 tbsp Sahara;
  • 1/3 tsp salts;
  • 1 tsp baking powder;
  • 200 gr. flour.

Cooking:

1. Cottage cheese, softened butter, sugar, vanilla sugar, salt, baking powder put in a bowl. Mix all these ingredients well. Then begin to gradually introduce the sifted flour and knead the dough. You may need a little less or more flour, depending on the moisture content of the curd.


2. The dough should turn out soft and not stick to your hands. Now divide it into 3 equal parts and from them roll out 3 identical rectangles or squares 2-3 mm thick.

Quick and easy recipe for goose biscuits

And this cookie will definitely not leave anyone indifferent! Goose feet are a delicious and fragrant homemade sweet. By including various additives in its composition, for example cinnamon, coconut flakes or orange zest, you can feel a new taste every time. Treat your household to such pastries - they will love it!


Ingredients:

  • 500 gr. cottage cheese;
  • 250 gr butter;
  • 350 gr flour;
  • 10 gr. vanilla sugar;
  • 1 egg
  • 10 gr. baking powder;
  • zest from 1/2 lemon;
  • 1/3 tsp salts;
  • 200 gr. Sahara;
  • 1/3 tsp cinnamon (optional).

Cooking:

1. Take the cottage cheese and mix it with vanilla sugar, salt, cinnamon, egg, lemon zest.

Cottage cheese can be of any fat content, it will not affect the taste of cookies.

Grind the ingredients with a hand blender into a smooth, non-grainy mass.


2. Put this curd mass aside and now we will take care of the bulk ingredients. Sift flour with baking powder in a separate bowl. There, grate chilled hard butter on a coarse grater and the dough should turn into crumbs.


3. Then mix this dough into crumbs with the curd mass and knead the resulting mass first with a spoon, and then with your hands. This must be done very quickly so that the oil does not have time to melt. Form a ball out of it, it should be moist and not sticky. Which during the baking process will become hard, and greatly spoil the taste of cookies. Ideally, a recipe can be used for this recipe. But I have natural cottage cheese from the market, so I need a blender.

Add flour and baking powder to the creamy-curd mass. Flour is best added in small portions, you may need a little more, or less flour from the specified amount in the recipe.

Knead a cool dough, divide into two parts and send to the refrigerator for 1 hour.

We do this so that the oil in the dough is cooled, the dough becomes elastic and it is easy to work with it.

We take out the dough from the refrigerator, and roll one ball into a thin layer with a thickness of not more than 3 mm. It turns out quite thinly, but we will add it in 4 layers, so it’s quite normal thickness.

Using a glass or cup, cut out the dough pieces. I used a cup with a diameter of 9 cm. A glass of a smaller diameter did not fit: the cookies are too small.

Thanks to this method, cookies will turn out with beautiful smooth edges, and the same thickness.

Pour sugar into a plate (I used a little cane sugar, for greater clarity, because white sugar merges in color with the dough). Dip each circle on one side in sugar.

Then fold the circle in half, with the sugar side inward.

Dip in sugar only one side of the semicircle again.

Fold sugar inward again, dip in sugar on one side only again and gently squeeze the curd cookies with your fingers so that it does not “open” when baking.

We spread our cookies on a baking sheet, covered with parchment paper with sugarless side down.

Regarding sugar: due to such pouring of layers, the cookies seemed to me too sweet. Therefore, you can do the sprinkling at the half-circle stage. For a child, I sprinkled cookies only on top, and this did not affect the quality of the cookies themselves. In the end, we make homemade cookies and decide how much sugar to put.

It should be noted that when the baking sheet is filled with cookies completely, do not rush to fill the second one. If the cottage cheese cookies, sprinkled with sugar, stand for a long time at room temperature, the butter will begin to melt, and sugar will flow after it. In the oven, such cookies “float”, sugar flows onto a baking sheet in the form of caramel, and as a result the cookies turn out to be tasteless.

Therefore, the remaining dough is removed in the refrigerator. And we’ll continue to make cookies when the first batch of curd cookies is on the way.

In the case of cottage cheese cookies, it is very important to observe the temperature regime of the oven. Since we are dealing with one of the types of puff pastry (yes, yes, please do not be alarmed), you need to bake cookies at t at least 210 degrees. At this “shock temperature”, the moisture from the cookies will quickly evaporate, the layers will rise, the dough will bake evenly, and the cookies will turn out with a crispy crust and a soft layered structure inside.

If you make the temperature lower, for example 180 degrees, the moisture from the dough will not have time to evaporate, and you will get cookies with a crispy crust - raw inside.

We’ve been instructed on the temperature of the oven, and it’s time to send our cookies to bake. Preheat the oven to 210 degrees. Turn on both the upper and lower heating. Bake cottage cheese cookies until golden brown 10-15 minutes.

At first it’s convenient to mix with a spatula or spoon in a bowl. Then you can knead with your hands on a table sprinkled with flour.

4. Again, sprinkle the table with flour and roll the dough on the table into a rectangular layer with a thickness of 2-3 mm.

5. Divide it into even squares of approximately 10x10 cm. The size of your “envelope” will depend on what size you make the squares.

6. Put one teaspoon of sugar in each box. Then we begin to form the envelope, fastening each corner to the center.

7. Put all the blanks on a baking sheet covered with parchment paper. Leave the distance between them, as baking cookies will increase in volume. Then preheat the oven to 180 degrees and send the baking sheet into the oven for about 20-30 minutes, until a beautiful ruddy color.

From these ingredients should be 18 beautiful, ruddy and fragrant cookies. On top is a crispy curd, and inside it is very tender, soft, thin dough and melted sugar. Very tasty combination. And most importantly, they are prepared easily and quickly.

If you don’t have time at all, but want something tasty in a hurry, then this recipe is just for you. You will definitely like such a simple and quick dessert preparation.

At work, I like something sweet to eat with tea. This contributes to the functioning of the brain. Therefore, I often prepare such a treat in the evening and take it with me. Well, of course, I do not forget to leave mine.

Ingredients:

  • Flour - 200 gr
  • Butter -100 gr
  • Cottage cheese - 100 gr
  • Sugar - 2 tablespoons
  • Cinnamon - 0.5 teaspoon
  • Baking powder - 0.5 teaspoon
  • Salt - a pinch

1. Add sugar, cinnamon, baking powder and salt to the flour. Mix everything.

2. Roll a stick of cold (!) Butter in flour, and then grate there on a coarse grater, while mixing with flour. It should turn into flour, crushed into crumbs.

3. Then make a deepening and spread the cottage cheese and knead the dough until smooth. Then put on cling film and roll into a sausage shape. Wrap it and put in the refrigerator for 30-40 minutes.

4. After that, take out and cut the sausage into slices about 1 cm thick. And put them in a preheated pan. Fry on each side until golden brown for about 4 minutes.

The delicacy is soft and very tasty. A bit like pancakes, but still there is a difference. If you want it to turn out crispy, hold it in the refrigerator for an hour or two or in the freezer for half an hour. And cut the slices thinner. And I like to do just that, which would be soft.

  • flour - 150 gr
  • sugar - 100 gr
  • butter - 100 gr
  • baking powder - pinch
  • salt to taste.

Cooking method:

For this recipe, we need medium-fat cottage cheese. Spread it in a deep bowl and knead all the large pieces, preferably with a fork.


Melt the butter and add to the cottage cheese, pour the baking powder, salt to taste and one tablespoon of sugar to it.


Gradually introduce the sifted flour, while kneading the dough. The result should be a fairly soft and elastic dough. And if you go too far with flour, then in this case the cookies will turn out to be too dense.


We remove the dough in a plastic bag or wrap it in cling film and put it in the refrigerator for 2-3 hours. Then we pull out and make from one large piece, a lot of small balls, which we roll into cakes.


Pour sugar into a plate and dip the cakes made by us on one side, then fold them in half with the sugar side inward and roll them again.


Turn the cookies again and do the same thing again.


Now we place parchment paper on a baking sheet and already lay out the prepared blanks on it.

  How to make cottage cheese cookies twisted through a meat grinder


Ingredients:

  • Flour - 500 gr
  • butter - 250 gr
  • cottage cheese - 250 gr
  • vanilla sugar - 2 sachets
  • chicken eggs - 2 pcs.
  • sugar - 4 tbsp. l
  • baking powder - 1 sachet
  • salt to taste.

Cooking method:

First of all, we prepare all of these products. Then put the cottage cheese in a deep bowl, preferably melted butter, beat in the chicken eggs, add vanilla and regular sugar, sift the flour, add the baking powder and salt to taste.


We divide the resulting dough into 4-5 parts and roll them into sausages that will go into the opening of the meat grinder.


Now we pass each sausage through a meat grinder and cut the workpieces of such a length that suits you best, and then lay them on a baking sheet lined with parchment paper.


Sprinkle a small amount of sugar on each billet and send to the oven preheated to 180 degrees for 15-20 minutes until a rosy color is obtained.

  Cottage cheese cookies with crumbs


Ingredients:

  • Butter - 30 gr
  • brown sugar - 10 g
  • rice flour - 100 gr
  • egg yolk - 1 pc.
  • water - 3 tbsp. l

For filling:

  • Cottage cheese - 170 gr
  • egg white - 1 pc.
  • sugar - 10 gr.

Cooking method:

In this recipe, the amount of food is indicated per serving, if you want to cook more cookies, just add the amount of ingredients two or three times.

In a deep bowl, put the indicated amount of butter, one egg yolk, pour sugar, rice flour and add three tablespoons of pure water.


Then carefully knead the dough until smooth.


For the filling, combine the above amount of cottage cheese, sugar and protein, which we knead well from large lumps and mix.



On top of the dough, evenly spread the curd filling.


The final layer is rubbed over the entire surface of the remaining piece of dough.
