  3. Since semolina is a part of the dough, after kneading it should be infused for 12-15 minutes so that the dry ingredient has time to swell and bind all the components.
  4. Spread the dough with a deep spoon in hot vegetable oil. This will prevent the pancakes from sticking to the pan.

  2. It is better to grate potatoes for pancake dough on a grater with miniature cells.
  3. The offal, together with a raw egg, turns into a homogeneous minced meat using a blender. If there is no such device at hand, then the liver is scrolled through a meat grinder, and an egg is already driven into the resulting mass.

  4. Chopped onions with garlic and sautéed in butter.
  5. Flour is diluted with water and poured into a pan for vegetables. After a couple of minutes of cooking over high heat, the mass is salted.
  6. It remains to pour in the cream and after boiling the sauce, put the pancakes in it. The fire turns off, and the dish is infused for about 10 minutes.

The appetizer goes well with pasta.

Beef pancakes with mushrooms

  1. Chopped mushrooms are fried in a pan with oil until soft. Next, a diced onion is sent to them. Together, the ingredients are cooked until the vegetable is transparent.

How to make liver pancakes

Some housewives avoid cooking dishes from the liver, considering it a not very tasty product, difficult to work with. If you know how to properly prepare all the ingredients and follow the sequence of actions, you will get a very healthy and aromatic treat for the whole family. For children, you can make a dietary dish from the liver, and for adults - serve with an interesting sauce and complement with potato garnish, fresh herbs. The basic rule is the same: first you need to cook minced liver in accordance with the recipe from the photo, and then properly fry the pancakes.

How to choose the right liver

Start the process by choosing your main ingredient. When making a choice between pork liver and beef liver, choose beef liver - it is considered the most useful offal due to the large amount of vitamins B, A and K, valuable microelements (magnesium, iron). When buying it, pay attention to the color and consistency of the piece: when you press your finger on the surface, it should quickly return to its original shape. The color of a high-quality liver is dark red, without inclusions, the meat should not have an unpleasant odor.

Food preparation

The consistency of the dough is also important. There are several ways to create minced liver for pancakes, it is prepared using:

  • meat grinder. Such a mass will be homogeneous, elastic, but it is more suitable for pancakes than for cutlets, etc. due to the viscosity of minced meat;
  • with a knife. This method will allow you to cook pancakes with well-felt pieces of the main product. Not suitable for children who are not very fond of the liver;
  • blender. A great way to make pancake dough - this mass turns out to be homogeneous and thick. The downside is that sometimes this dough is still liquid and you will need to add flour or starch for viscosity.

If you have never cooked liver pancakes yet, do it right away! Personally, I do not always manage to fry the liver in pieces so that it turns out soft and juicy, while liver pancakes made from beef liver are a win-win option. Of course, the recipe, as always, is not without secrets, but I will tell you all of them in order.

Every mother knows that feeding a child with liver dishes can be extremely problematic, but I have not yet met children who would not like the delicious and soft liver pancakes made from beef liver.

Juicy, soft, with a sweetish taste of the liver, such liver pancakes from beef liver for a child, fly away with a bang with mashed potatoes, pasta, or cereal porridges, and, of course, with vegetable salad. Besides, it's just a good culinary idea when you don't know what to cook from offal or meat for every day.

For liver pancakes, young veal liver is best suited, it is small in size, so you can easily distinguish it from the beef liver of an adult animal. If you are dealing with beef liver, then it needs to be soaked in milk for a longer time to remove the bitterness and specific taste of the liver. Chicken liver, rabbit liver, and turkey liver are also suitable for this recipe for liver fritters.

The ingredients listed below make a fairly large amount of beef liver fritters and work for about 2 hours. If you haven't changed your mind yet, let me tell you in detail how to cook beef liver pancakes - a recipe to be soft and juicy.

Ingredients:

  • 1 kg beef liver
  • 250 grams (2-3 pcs) potatoes
  • 150 grams (1-2 pcs) onions
  • 500 ml milk
  • 3 eggs
  • 3 tablespoons of rusks
  • vegetable oil for frying

How to make beef liver pancakes:

You need to prepare the liver in advance. It is best to do this in the evening, if you are going to cook beef liver pancakes in the morning. Wash the liver under running cold water, cut out all the white streaks, and cut into small pieces, about 4 * 4 cm.

We send the liver into a deep bowl and fill it with milk. We send the liver to the refrigerator for at least 4 hours.

We take out the liver from the refrigerator, drain the milk, and grind it in a way convenient for you. I twisted the liver in a blender, but you can use a meat grinder.

Peel the potatoes and cut them into small pieces 2 * 2 cm.

We also peel the onions and cut them like potatoes.

Place the potatoes and onions in a blender, add the eggs, and grind into a powder.

If there is no blender, then the potatoes and onions need to be grated on the smallest grater, like on potato pancakes. You do not need to cut the vegetables into pieces beforehand.

In a deep bowl, combine the liver puree with a mixture of potatoes, onions and eggs. Add crackers, salt and pepper. As you may have guessed, we make beef liver pancakes without flour. Instead of flour, the recipe uses bread crumbs, making beef liver pancakes soft and juicy.

Thoroughly mix our dough for beef liver pancakes. It should turn out like thick sour cream, and it should be easy to pick up with a spoon.

If the dough is thin, add another 1 spoonful of breadcrumbs until the dough reaches the desired consistency.

I do not recommend adding flour to liver pancakes instead of crackers, then the pancakes will turn out to be not so airy. If there are no crackers, it is better to add the same amount of semolina. Flour should be added to the dough instead of breadcrumbs if you are going to use this recipe.

We heat a frying pan with vegetable oil on the stove. After the pan has heated up, reduce the heat. Then spread the liver dough with a tablespoon in a skillet.

Even if you do not like liver and rarely cook it, this is not a reason to deprive the whole family of a useful product. After all, you can cook the liver so that it turns out delicious, and all the household will ask for supplements. Today we will learn how to make liver pancakes.
