Ingredients

To make Mazurka cookies with walnuts and raisins, you will need:

raisins - 1 glass;
walnut kernels - 1 glass;

sugar - 1 glass;

eggs - 2 pcs.;

flour - 1 glass;

baking powder for dough - 1.5 tsp;

A glass with a volume of 200 ml.

Cooking steps

Pour the raisins completely with hot water and leave for 10-15 minutes, then drain the water. Place the raisins on a towel and dry.

Fry the walnut kernels in a dry frying pan for 5-7 minutes, not forgetting to stir. Then chop with a knife.

Combine eggs and sugar in a bowl, beat them with a mixer. Beat until sugar is completely dissolved. The egg mass should expand and turn white.

Pour sifted flour and baking powder into the beaten egg mass.

Mix gently with a spatula. The dough should be homogeneous, in consistency, like very thick sour cream.

Put the nuts and raisins in the dough, mix again.

Cover a baking sheet with parchment and lay out the dough in a layer 1-1.5 cm thick, level.

Bake the Mazurka cookies for 15-20 minutes (until a beautiful golden color) in the oven preheated to 180 degrees.

  • soft butter - 200 g;
  • sugar - 150 g;
  • chicken eggs (small) - 2 pieces;

Subsequence:

  1. Stir the butter and sugar vigorously, add two eggs one by one.
  2. Fry and grind the nuts. Pour into the dough.

For the test you will need:

  • wheat flour - 750 g;
  • peasant butter (butter) - 150 g;
  • sour cream - 250 g;
  • a pinch of salt.

The specified amount of ingredients makes two full baking sheets of walnut shortbread.

Sugar is better to take finely ground. I take a regular one, put it in a blender and grind it.
The salt is not required in the recipe, but it will brighten the taste of the cookie.
You can take any starch: corn, and if not, then potato. If neither one nor the other was at hand (and this also happens), and the cookies are passion as you want, then you can replace the starch with the same amount of flour.
I had an egg weighing about 57-60 grams.
The butter should be softened before baking, but not completely melted.


Lightly mix the egg with salt. Grind the nuts in a blender.
In a bowl, combine chopped nuts, egg, sugar, vanilla essence (or vanillin), sifted flour with starch.



Mix everything well and quickly. The longer you stir, the more the butter will melt and the harder the cookies will be.

Oatmeal Nut Biscuits

For cooking you need:

  • Oatmeal flakes - about one hundred grams.
  • You need to take the same amount of crushed nuts (any).
  • 75 grams of sugar.
  • Two tablespoons each: honey, vegetable oil, lemon juice.
  • 50 grams of flour.
  • Juice from one orange.

In order for the nuts to be well crushed and a crumbly crumb is obtained, they must first be fried in a dry frying pan for a couple of minutes. Add oatmeal and sugar to the nut crumbs. We mix. Then pour in two tablespoons of vegetable (or olive) oil, lemon juice, honey, orange juice. Add flour. We knead.

  1. Making the nut cookie dough is easy! First, grind the hazelnuts and almonds into flour. The uniformity of our cookies depends on how finely the nuts are ground. So I, of course, do it in a coffee grinder.

  2. Add powdered sugar and cinnamon to the nuts. Stir still one more time.

  3. On the finest grater, rub the top of the skin of one orange. It turns out about 1 tablespoon of zest with a slide.

  4. Mix water and lemon juice in a separate container. Add liquid, zest to the nut-sugar mass and knead the dough for our cookies. The dough will stick to your hands a little - this is normal.

  5. And so we turn into a wizard and begin to create and shape cookies. The dough sticks a little to your hands and to the rolling pin, but it doesn't matter! It is very convenient to roll out a layer of dough directly on a silicone baking mat, form cookies on it and don’t remove them from there again, but bake immediately by transferring the mat to a baking sheet.

    First of all, sprinkle a little flour on the work surface. Roll out a layer of dough the size of our rug. Adjust the thickness of the dough yourself - nut cookies will turn out delicious in any case.

    For ease of rolling, it is better to grease the rolling pin with vegetable oil and then the dough will not stick to it. We cut out cookies of any shape, I made stars.

  6. Carefully remove the rest of the dough between the cookies. It is not for nothing that they say that "the leftovers are sweet", I usually have a part of the dough that does not live up to baking and is eaten just like that - it is also very tasty.

  7. Now you need to let the liver rest and dry for about 4 hours at room temperature. When the cookies are dry, they can be moved much easier by prying them with a spatula and not breaking the shape.

    We put the cookies on the empty spaces on the rug. You can lay it quite tightly, keeping a minimum distance so that the stars simply do not touch each other. When baked, walnut cookies do not increase in size.

  8. We bake cookies for a very short time, about 3-5 minutes in a preheated oven at 250 degrees. There should be such a blush and a small crust, but when hot it will seem soft. After cooling, the cookies will harden, so do not hold them for more than 3-5 minutes, otherwise you will get Christmas crackers. I got about 50 pieces of stars.

  9. While our walnut cookies are cooling, let's do the icing. We mix powdered sugar, cinnamon and lemon juice (or water) in one container. I indicate the number of ingredients for the glaze on the basis of about 50 stars. If you rolled out a thicker layer and you got fewer pieces, then accordingly less glaze will be needed.

    At first glance, it seems that there is a lot of cinnamon - both in the dough, and even in the glaze itself. But believe me, in combination with the sweetness of the powder and the sourness of lemon, you don't feel too much. And if you love the taste and aroma of cloves, you can add a small pinch of ground cloves to the glaze. Only a little is better, otherwise its rich taste will overpower all the other ingredients.

  10. We put the icing on the cooled cookies and let it set well and harden.
