Draniki does not have to be prepared only from potato tubers; the bulk can be supplemented with any suitable ingredients. We offer an unusual and more satisfying version of potato cakes - pancakes with minced meat. For minced meat, you can take any type of meat - chicken, beef, pork, and so on. Based on your choice, the taste and calorie content of the final dish will differ.

Such potato pancakes are best served hot, before the potatoes have lost their crisp properties, and the minced meat is still soft and juicy.

  • Potato - 500 g
  • Minced pork - 200 g
  • Garlic - 2 cloves
  • Wheat flour - 2 tbsp. spoons
  • Bulb onion - 1 onion
  • Chicken egg - 1 pc.
  • Refined oil

Wash potato tubers, peel, chop with a metal grater with small holes.

Place the potato mixture in a spacious container, break the egg in the same place, mix intensively, completely combining it with the chopped potatoes. At this stage, you can add a pinch of salt and pepper.

Sift the flour in the required volume in advance, ridding it of impurities, then add to the bulk.

For the meat filling, peel the onion from the husk, turn it into onion puree using a blender or a regular grater, put it in the prepared minced meat, season with salt and pepper.

In a preheated frying pan with oil, put round pieces of grated potatoes of the same size with a spoon. When the potato mass grabs a little, lay the prepared meat mixture on top.

Put the potato mixture on top of the minced meat.

Recipe 2: potato pancakes with minced meat (with photo)

  • meat (fatty pork and beef) - 300 gr.;
  • onion - 1 head;
  • potatoes - 4 pcs.;
  • garlic cloves - 2-3 pcs.;
  • egg - 1 pc.;
  • flour - 3 tablespoons;
  • salt, spices - to taste;
  • vegetable oil for frying.

Cut the meat and half of the onion head into pieces.

We skip the pieces through a meat grinder.

Add salt, pepper and mix.

We take the right amount of the remaining components. Peel and wash potatoes.

In a deep bowl, three potato tubers on a regular coarse grater. If too much liquid forms, drain some, leaving a small amount.

Add chopped garlic and remaining onion.

Add salt and pepper as desired.

We beat the egg.

We add flour.

We mix all the ingredients.

We begin to form potato pancakes, for this we take a tablespoon of a mixture of potatoes.

Put a spoonful of meat filling on top.

Cover with a layer of potatoes.

And today I propose to cook potato pancakes with minced meat - it turns out very tasty and satisfying.

Remember that truly delicious potato pancakes can only be made from good potatoes. It is best to choose root crops with yellowish pulp, which, after heat treatment, boils well. The so-called “soapy”, watery white potatoes are not good - ready-made potato pancakes will not only darken quickly, but also the taste will be so-so.

  • potatoes - 2 kg
  • pork - 700 gr
  • onion - 400 gr
  • chicken eggs - 2 pcs
  • sour cream - 50 gr
  • flour - 50 gr
  • vegetable oil - 150 ml
  • salt - 1 tsp

First of all, we will prepare the minced meat, as the potato shingles darkens quickly. To do this, cut the pork into pieces and pass through a meat grinder. To make the meat scroll faster and easier, first hold it in the freezer for half an hour.

Then we pass peeled onions through a meat grinder (one large onion - half the norm from the indicated ingredients).

Salt and pepper minced pork with onions. Mix with your hands and taste for salt. If needed, add more seasonings.

To make the potato pancake filling juicy and tender, you can additionally beat off the minced meat (a couple of minutes). To do this, simply forcefully throw the minced meat into a bowl or transfer it to a bag and beat it on the table. That is, just throw from a small height. While we put the prepared minced meat in the refrigerator.

Let's do the dough for potato pancakes. To do this, clean the potatoes and onions (the second half of the ingredients). I will say right away that there is definitely not a lot of onion in a shingle. Moreover, onions not only add flavor to ready-made potato pancakes, but also protect grated potatoes from browning longer.

Grind vegetables on the smallest grater-shingles. I have this attachment in my food processor, but I used to use a manual grater.

Add a couple of chicken eggs, sour cream, salt and wheat flour to the potatoes with onions. Take sour cream of any fat content - it does not matter at all. By the way, sometimes I even use kefir instead. The main thing is that it should be a fermented milk product, which will not allow the potatoes to darken and make potato pancakes more tender. Wheat flour is also not necessary to use the highest grade - the first one will do. It is clear that some may say, they say, why all these additives ... Draniki are pure potatoes and onions ... But I cook this way and we like it that way.

We mix everything thoroughly (I do it right by hand, it’s more convenient), we try for salt, if necessary, add it. By the way, do you know what the beauty of hand-stirring is? You can easily feel for pieces of potatoes or onions that could slip through and not be chopped.

Now we will fry potato pancakes with minced meat. Pour some refined vegetable oil into the pan, heat it well and spread it with a tablespoon and level the potato mass so that a rather thin pancake is obtained.

Then we put the minced pork, giving it the shape of a flat cutlet. It is most convenient to make such blanks in advance so that they are already at hand.

We cover the meat filling with potato mass so that the minced meat is not visible. Also smooth with a spoon.

Fry potato pancakes with minced meat over medium heat until the lower part is browned. Then turn them over with a spatula and continue to fry under the lid until cooked. We do the same with the rest of the potato dough and minced meat, adding vegetable oil if necessary.

We spread the finished pancakes on a paper napkin so that excess fat is absorbed into it.

Potato pancakes with minced meat (sorcerers) is a national and traditional dish of Belarusian cuisine, although there are many very similar dishes in other cuisines of the world. These are potato pancakes, tertiki, potato pancakes, terunets, reshti, latkes, ragmunki, plyatski, bramboraki. And this is far from a complete list. Why exactly these potato pancakes are called sorcerers is not known for sure, but, you see, the name itself is quite unusual.

In Transcarpathia, a pancake cake made from green pancakes with spinach and meat filling is also called sorcerers, although these are two completely different dishes. Potato sorcerers with minced meat is an excellent and very tasty version of potato pancakes, with which you can diversify your daily menu.

And even the minced meat itself, which plays the role of the main violin in this recipe, can also be varied. For example, adding to it a small amount of fried champignons, cut into small pieces, ham, bell pepper. We will now consider how to cook potato pancakes with meat.

In my opinion, the most ideal stuffing for potato pancakes is pork. Pepper it and salt it. Mix thoroughly with your hands. You can add some onion or garlic if you like. Put the mince in the refrigerator.

Now you need to prepare potato dough for potato pancakes. Peel the onion. Rub it on a fine grater in mashed potatoes. Peel potatoes. Now it should be grated. I prefer a grater with medium holes, although you can use a fine grater or a large grater, depending on how you want the finished potato pancakes to look. In any case, the potatoes need to be grated quickly enough so that they do not have time to darken.

Put onion puree in a bowl with grated potatoes.

Beat in an egg.

Stir. Add black ground pepper and salt.

Take the amount of these ingredients at your discretion. Add flour.

Mix the potato base for potato pancakes with minced meat.

Heat up a pan with sunflower oil. After the oil becomes hot, scoop up the potato mass with a tablespoon and lay it out in the form of cakes.

First of all, I'll do the stuffing. This time I have it in a store, which I basically do not accept. But, firstly, it turned out to be of surprisingly high quality, and, secondly, this is a quick recipe, so you can deviate a little from the principles and indulge yourself.

Minced pork, but absolutely lean, tender and juicy. I will still add a tablespoon of mayonnaise and mustard to it, so that it becomes even tastier, salt, respectively, and pepper:

You can also squeeze a couple of cloves of garlic through a press for piquancy, but today I'm not in the garlic mood, so at the last minute I changed my mind about adding it.

Now it's time for the potatoes themselves. I will clean the right amount of it and one large onion. I will rub on a coarse grater alternately, one potato, a little onion, etc. Thus, the potatoes will not darken, and the onion will be evenly distributed in it.
