The variety of second courses is simply limitless, moreover, even the same dish has hundreds of variations of the cooking recipe. Each housewife brings something of her own into it.

What are the second courses? The answer to this question is not so easy. It is possible to divide second courses into types according to hundreds of classification signs. But in general, it is customary to divide the second courses into meat, mushroom, fish, vegetables, cereals, pasta... In addition, you can divide them into those that are prepared in a hurry and those that require colossal time-consuming preparation. And also the second dishes cooked at home can be divided into those that lend themselves and do not lend themselves to heat treatment. Meat

If you have to use frozen meat for the preparation of the second course, then it is important to defrost it correctly. It is best to carry out this process in advance, slowly. It is believed that the best way to defrost is to place the meat in the refrigerator and wait until it is completely thawed. Also, a good defrosting method is to place the meat in a container of ice water. So the process will go faster, besides, the product will retain all its organoleptic properties, and besides, it will remain as useful.

When choosing between chilled and frozen meat for the preparation of the second course, it is better to choose the first option. Frozen water crystals inside the meat break its fibers, which makes it loose and loses its juiciness.

Fish

Fish second courses are most delicious if you use fresh, not frozen, fish to prepare them. If you still have to use a frozen product, then you need to act in accordance with certain rules. Place the frozen fish on the bottom shelf of the refrigerator and leave it there overnight. With this method, the fish will not "creep away". But defrosting fish in water is not recommended categorically.

A delicious second course of fish will turn out only if it is properly cut. You need to gut the fish so that the gallbladder does not burst. Otherwise, you risk getting something very bitter and unpleasant to the taste. You should peel the fish from the skin while it is still frozen or when you cook it. By the way, the latter option is preferable, since the skin will help preserve the juice in the fish. It is best to remove the fins with kitchen scissors, but you need to clean the scales either with a special knife or with a grater.

The stew of the second fish dish will turn out to be more tender, and will not have a pungent smell if you use milk instead of water for stewing. As for frying, this process should not be too long. The second fish dish will turn out to be really tasty only if you do not overdo it. But as for baking, the fish should be removed from the oven a couple of minutes before being cooked. It should be infused and come under the foil or under the lid. When baking such a second dish in foil, it should be borne in mind that salt should be put in it several times more than usual.

A special aroma and taste when baking fish can be achieved exclusively through the addition of spices, herbs, lemon slices.

If you need to boil the fish for the second course, remember to do this by cutting it into portions and placing it in a small container with the minimum allowed water level.
