I prefer the mushroom filling, but you can also use meat, sausage, liver, etc. fillings. Mushrooms-champignons clean, wash and cut, but not very finely. We put the pan to heat up, after pouring vegetable oil into it. As soon as the pan is hot, pour the chopped mushrooms into it. At this point, chop the onion, and add it to the mushrooms, salt, cover and simmer for 10 minutes. The filling is ready.

Step 3: Prepare the Mashed Potato Nests.

Take a baking sheet, line it with parchment paper, and sprinkle it with wheat breadcrumbs on top. Pour hot puree from a pastry bag onto parchment paper. At the same time, we first deposit the bottom of the nest in the form of a solid circle, and then along the circumference we increase the walls of the nest in height. The height of the "nest" is up to you. When the nests are ready, we put the filling in the middle of the “nest”, in this case from fried mushrooms. Place a piece of soft cream cheese on top of the filling. Now we put the baking sheet in the oven at 220 - 240 degrees, so that the puree is covered with a light creamy crust, and the cheese is melted and browned. This will take you 5-10 minutes.

Step 4: Serve the mashed potato nests.

After our “nests” are browned, we take them out of the oven and let them cool, then carefully remove them from the baking sheet and arrange them on a dish. At the same time, you can decorate the dish with salad greens in advance, and you can decorate the top of the nest with greens. You can serve "nests" with vegetable salad. Bon Appetit!

Potato Nests with Mushrooms - Recipe

The preparation of nests with mushrooms begins with the preparation of mashed potatoes, from which the nests will be formed. Wash and clean potato tubers. Cut the potatoes into two to four pieces. Transfer to a saucepan. Fill with cold water. Salt the potatoes after boiling. Boil until done. Cover the pot with potatoes. Drain the water. Add butter. Use a potato masher to crush the potatoes until you get a smooth mashed potato consistency.

To prepare potato nests with mushrooms, you can use both fresh champignons and boiled forest mushrooms. If you will cook the nests with champignons, then they must be washed, and then cut lengthwise into thin slices. Cut the peeled onion into cubes.

Fry the onion, stirring with a spatula in sunflower oil until milky.

Then lay out the mushrooms.

Use a spatula to toss the onion with the mushrooms.
