Pickled champignons

We need: exit 2 jars of 350 ml

  • 500 g of mushrooms
  • 120 ml vegetable oil
  • 60 ml 9% vinegar

  • 1 tsp salt
  • 3 cloves of garlic
  • 3 pcs bay leaves
  • 15 pieces of peppercorns

Preparation:

1.Wash the mushrooms, peel and cut into 4 parts. Chop the garlic and combine with the mushrooms.

2. Pour vegetable oil, vinegar into a saucepan, add sugar, salt, bay leaf and peppercorns. We put on fire and bring to a boil.

3. A mixture of mushrooms with garlic, put into a saucepan and boil, from the moment of boiling, for 5 - 7 minutes.


We transfer to jars while still hot, cool and put in the refrigerator, they are ready for consumption in 4 hours.


Can also be stored for 2 to 3 months in a cool place.

Pickled oyster mushrooms

We need:

  • 500 - 700 g oyster mushrooms
For the marinade for 1 liter of water:
  • 100 g vinegar 9% table
  • 1 tbsp salt
  • 1 tbsp Sahara
  • 5 pcs of cloves
  • 1 bay leaf

Preparation:

1. Put all the ingredients for the marinade in a saucepan and put on the fire, bring them to a boil.

2. My oyster mushrooms, cut from the bush, cut large mushrooms into pieces and throw into the boiling marinade. Turn off the heat, cover and let cool completely. After that, strain, season with chopped onions and vegetable oil. You can eat.

HERRING IN TOMATO SAUCE


We need:

  • 2 pcs fresh frozen herring
  • 4 tablespoons tomato paste or ketchup
  • 100 ml vegetable oil
  • 0.5 tsp chili peppers
  • 1 tbsp salt
  • 3 tbsp 9% vinegar
  • 1 s.l. Sahara
  • 3 pieces of onions

Preparation:

1. Put tomato or ketchup, vegetable oil, chili pepper, salt, sugar in a saucepan, mix everything and put on fire, bring to a boil. Cool down.

2. Dismantle the herring into fillets and cut into portions.

3. Cut the onion into thin rings.

4. Put in bowls with balls: onion + herring + sauce and so on until the food runs out.


We put in the refrigerator for 3 hours and can be consumed.

LAST SNACK "MANDARINKI"


We need:

  • 3 carrots, medium
  • 150 g rice (2/3 tablespoons)
  • 500 g of mushrooms (oyster mushrooms or champignons)
  • 2 onions, medium
  • 5 cloves of garlic
  • 3 g salt
  • 1/2 tsp each favorite spices

Preparation:

1. Wash the rice well and boil it in salted water. After cooking, rinse the rice with cold water.

2. Wash and boil carrots. Salt the water. Then peel and grate on the finest grater.

3. Finely chop the mushrooms and onion and fry, until the liquid evaporates, salt and season with spices.

4. Add mushrooms, finely chopped garlic to the rice, season with salt and spices, to taste, mix. The filling is ready.


5. Form small balls from the filling, press them a little to make them elastic.

Then, with the carrots, we sculpt a cake on our hand, put a ball with the filling in the center and wrap it with carrots.

We form a tangerine in the shape, put on a dish, decorate with basil or parsley leaves, you can make tails from carnations.

SALAD "TWO JARS"


We need:

  • 1 can of canned beans
  • 1 can of pitted olives
  • 20 g walnuts
  • 1 onion
  • 1 clove of garlic
  • 1 tsp Sahara
  • 1 tbsp apple cider vinegar
  • 100 ml of water
  • 1 bunch of parsley
  • olive oil
  • salt, to taste

Preparation:

1.Sliced ​​onion in half rings, pickle. For the marinade, take water, sugar, vinegar and pour onions with them, let stand for 20 minutes.

2. Fry the nuts a little and chop with a knife.

3. Finely chop the parsley.

4. Strain beans, olives, onions from the marinade.

5. All ingredients for the salad, mix in a bowl, if necessary - salt, season with olive oil.

Fasting Olive and Fasting Mayonnaise


LEAN OLIVIER

We need:

  • 3 pcs potatoes
  • 2 carrots
  • 1 bunch of green onions
  • 300 g of pickled champignons (any)
  • 250 g pickled green peas
  • 3 pieces of pickles
  • 1 pc of fresh cucumber
  • 200 ml lean mayonnaise
  • salt, pepper, to taste

Preparation:

1. Boil vegetables and cut into small cubes.

2. Chop pickled and fresh cucumbers, pickled mushrooms into cubes. Chives - finely chop.

3. Mix all ingredients and season with lean mayonnaise.

FAST MAYONESIS


Options for making homemade lean mayonnaise can be viewed

We need:

  • 1/2 tbsp. vegetable oil
  • 1/2 tbsp. vegetable broth (you can use green pea liquid)
  • 1 tsp Sahara
  • 1.5 tsp apple cider vinegar
  • 1/4 tsp salt
  • 1 tsp mustard
  • 1.5 tbsp any starch

Preparation:

1. Dilute starch with vegetable broth and put on fire, brew, without boiling, stir constantly, as it thickens, remove immediately (3 minutes)


2. Transfer the starch to a container, add salt, sugar, mustard, mix and pour in vegetable oil. Beat the mixture with an immersion blender, with progressive (up-down) movements.

At the end of whipping, add apple cider vinegar and stir.

FAST SALAD WITH RED FISH


We need:

  • 100 -150 g lightly salted red fish (trout, salmon)
  • lettuce leaves
  • 50 g pine nuts or sesame seeds
  • 1 pc lemon, use juice
  • pitted olives, optional

Preparation:

1. Cut the fish into small strips.

2. Wash and dry lettuce leaves on a paper towel.

3. Lightly fry nuts or sesame seeds.

4. Squeeze the juice from the lemon. Cut the olives into rings.

5. Tear the salad with our hands into small pieces and put on a dish. We put pieces of fish, olives on it, crush with pine nuts and pour with lemon juice. Can be garnished with cherry tomatoes.

CRUSTY SALAD


We need:

  • 250 g crab sticks
  • 2 cucumbers, fresh
  • 1 bunch of green onions
  • 200 g canned corn
  • 200 g croutons
  • 120 g lean mayonnaise

Preparation:

1.Crab sticks cut obliquely.

2. Chop fresh cucumbers into strips. Chives - finely chop.

3. Mix all ingredients, add corn and croutons, season with lean mayonnaise.


Herring in a new coat


We need:

  • 1 pc herring fillet
  • 2 large onions
  • 1 pc of carrots
  • 300 g champignons
  • 1 bunch of green onions
  • spices to taste
  • vegetable oil for frying
  • 1 bunch of dill

Preparation:

1. Cut the champignons into large pieces. Fry in a pan until the liquid evaporates and add 1 chopped onion. Fry for 3-4 minutes, season with spices, remove from the pan and refrigerate.

2. Fry grated carrots and chopped onions in the same pan until soft.

3. Chop the herring fillet into cubes, finely chop the green onion.

4. Put the herring on a dish, level it over the surface, grind it on top with green onions.


5. On a layer of herring, spread on the 1st half - fried mushrooms,


and on the 2nd half - carrots.


6. Decorate the edges with chopped dill.

3. Hot dishes

COLUMNS WITH FRESH CABBAGE


We need:

  • 1 head of fresh cabbage (white or Peking cabbage)
  • 500 g champignons
  • 150 g rice
  • 1 pc of grated carrots
  • 2 pieces of onions
  • 600 ml tomato juice (2 tablespoons tomato paste)
  • 400 ml cabbage broth (vegetable broth)
  • ground black pepper, salt, to taste
  • vegetable oil

Preparation:

1. Boil the rice until half cooked.

2. Finely chop the mushrooms and onions. We send mushrooms to a dry frying pan to fry, 5-7 minutes, and then add the onion, simmer for another 3-4 minutes, season with salt and pepper and turn off the heat. Let them cool slightly and mix with rice.


Tip: Fresh mushrooms can be replaced with dry ones, then you just need to steam them, and use the water as a vegetable broth, remembering to strain it.

3. Separate the leaves from the cabbage head, put them in boiling water and boil for a couple of minutes. Remove from boiling water and let the leaves cool. Cut off thick veins. We use water as a vegetable broth.

Methods for preparing cabbage leaves for stuffing are possible.

4. In a baking dish (this can be a saucepan with a thick bottom, glass form), put cabbage trimmings on the bottom.

5. Form cabbage rolls and lightly fry them in a pan, and then put them in a bowl.


6. Prepare the filling: fry chopped onions with carrots in a pan, fill them with tomato juice, put pepper, salt and simmer for 7-8 minutes.

Fill the cabbage rolls with filling and add the vegetable broth.


We cover with a lid, send to the oven preheated to 180 degrees, for 1 hour.

RICE WITH VEGETABLES


We need: we use pots or molds 5 cm high, 11 cm in diameter.

  • 150 g rice
  • 300 g frozen vegetables
  • 2 tbsp vegetable oil
  • 1 piece of onion
  • herbal sea salt, to taste
  • 2 tsp curry

Preparation:

1.Pour boiling water over the rice and leave to steam for 15 minutes.

2. In a frying pan with vegetable oil, fry the chopped onion until transparent. Then add frozen vegetables, salt, curry and simmer for 5 minutes.


3. Put rice in portion pots, then vegetables, again rice and vegetables.


Pour all this with boiling water, cover with foil and put in the oven.


At a temperature of 200 degrees, bake for 15 minutes, after that, add more boiling water and continue to bake for another 15 minutes. We serve the dish hot.

POTATO NEST WITH MUSHROOMS AND BEANS


We need:

  • 1-1.5 kg potatoes
  • 500 g of mushrooms
  • 2-3 onions + 2 for beans
  • vegetable oil
  • 200 g green beans
  • salt, pepper, to taste

Preparation:

1.Peel the potatoes, wash and cook. Mash the finished potatoes in mashed potatoes.

2. Finely chop two onions and fry until golden brown and mix with mashed potatoes. Salt and pepper to taste.

3. Cut mushrooms into small cubes, fry with chopped onions and beans.

4. Grease the baking sheet with vegetable oil.

5. Put the mashed potatoes in a tight plastic bag, cut off one end (we get a pastry bag) and squeeze it onto a baking sheet, thus forming nests.


Inside the nests, put the filling with mushrooms and beans.


We bake in the oven for 15 minutes, at a temperature of 180 degrees. Serve hot.
