What to make from overgrown yellow cucumbers. What can be made from overgrown cucumbers

19.11.2020 Lenten dishes

Good day, my dear friends and readers! There is a need for one more heading. In it, I will share those useful tips, recipes that I personally checked and give them my assessment. So I will call the rubric: "Verified personally." This heading will have something in common with the heading "School of needlework", because everything that I will write about will be done by my own hands. And the first article for the new section is about overgrown cucumbers.

Very often, with a good harvest of cucumbers, the housewives do not have time to process them. And they outgrow. The Internet is replete with tips on how to make salads from such cucumbers for the winter. Perhaps someone will need such recipes. I suggest thinking about beauty and yourself. Therefore, my recipes will be about preparations for the winter, but not for food, but for beauty. And you will learn how to use overgrown cucumbers for skin care all year round.

By the way, for such purposes, not only overgrown cucumbers are suitable, but also soft ones that were not used in a timely manner and expect their fate to go to waste. What can be made from overgrown cucumbers?

The simplest is cucumber masks. But how many cucumbers can you use for a mask? One two. And if you do something that you can use in winter?

Overgrown Cucumber Lotion

It is very simple to make such a lotion, and the benefits of it are great.

First: the product will not go to the trash heap, but will go to work. Second, homemade lotion keeps your hands warm. Third: the lotion is a versatile skin care product.

What you need to make lotion

  1. Cucumbers
  2. Vodka
  3. Cutting board
  4. Lotion jar
  5. Strainer
  6. Container for storing lotion, preferably dark or matte.

I prefer to keep everything in glass containers. Unlike plastic, it does not absorb odors and does not give them to the product. My lotion will pour from a can into a dark beer bottle.

How to prepare lotion

Depending on the state of the cucumbers, we make a decision - to use them with or without skin. I do without skin. I like it that way.

  1. My raw material.
  2. We clean from the skin.
  3. Cut into slices 2-3 mm thick.
  4. Fold in layers in a jar, tamping slightly until the jar is completely filled.
  5. Pour vodka under the neck.
  6. We send the jar to a dark place for insisting for two weeks.
  7. After two weeks we filter our lotion into a clean container.

This lotion can be stored at room temperature and used to degrease the skin, treat small wounds, and treat insect bites. Treating the armpit area with this lotion helps to cope with increased sweating.

I have already made my lotion, but have not yet poured it into the bottle.

Overgrown Cucumber Ice Cubes

Making cucumber ice cubes is even easier than making lotion. Overripe and overgrown cucumbers, soft vegetables that have lost their gastronomic appeal, freaks that are not suitable for preservation are used.

What will be needed for making cubes

  1. Cucumbers
  2. Cutting board
  3. Blender or kitchen processor
  4. Ice cube trays
  5. Freeze cellophane bags.

As you can see, we do not need anything supernatural.

How to make ice cubes

  1. My cucumbers.
  2. We clean from the skin. We do not throw away the skins.
  3. Cut out the seeds if they are very rough. Until we throw them away.
  4. Cut the cucumbers into small pieces of any shape.
  5. We send it to a food processor or mixer.
  6. Beat well until smooth.
  7. The resulting cucumber puree is poured into molds for making ice and sent to the freezer.
  8. Shake the frozen cubes into a plastic bag for freezing and send them to the freezer.
  9. We repeat all the freezing steps until the prepared raw material ends.
  10. We use it as needed throughout the year.

You can strain the crushed raw materials and freeze the pure juice. But I'm fine with the pulp option.

These cubes can be used to wipe the face and décolleté. They tone and tighten the skin well.

For easy storage and use, I put the diced bags in plastic containers and put them in the freezer. I take out one container at a time and place it in the fridge freezer so that the cubes are at hand.

After preparing the cubes, cut out coarse seeds with remnants of pulp and cucumber skins remained. Let's put them into action - we will make hydrolyzed water.

Hydrolyzed cucumber water

The process of making hydrolat water is well described in the blog by Irina Lukshits in the article "How to make hydrolat at home."

I did everything as Irina wrote. Only instead of flowers, I used the remnants of cucumbers formed during the manufacture of cubes.

What is needed to prepare hydrolyzed water

  1. Leftover cucumbers. You can also use the cucumbers themselves, by cutting them not very finely.
  2. Cooking container.
  3. Container for collecting hydrolated water.
  4. Sieve or wire rack for steaming.
  5. Lid on which steam will condense.
  6. Water.
  7. Towel.
  8. Frozen food from the freezer.

How to make hydrolyzed water

  1. Place a deep bowl in a saucepan to collect the hydrolyzed water.
  2. Pour water into a saucepan so that it reaches the middle of the cup and does not get into it when boiling.
  3. Place the pot on the stove and bring it to a boil. We make sure that no water gets into the bowl.
  4. Grind the cucumbers or use the leftovers from the cubes. It is not worth grinding too much.
  5. Place the cucumbers on a sieve or wire rack for steaming and place on a saucepan.
  6. Cover with an inverted lid.
  7. On the inverted lid, put a towel soaked in cold water and well wrung out.
  8. As the towel warms up, cool it under water and return it to the lid.
  9. The process continues until the cucumber skins turn the color of pickles.

At first I did as Irina writes and put a bag with chicken hearts on the lid. But they quickly melted away. I replaced them with a damp towel. The process did not go any worse.

I did not wrap the structure in foil. The steaming wire rack fits very tightly into the pot. And the lid is heavy enough to fit flat and well. It was convenient for me to control the process of preparing water. Maybe everything went faster with the foil, but I had nowhere to rush.

I did not take a photo of the steamed cucumbers so that it was clear to what extent the process needed to be continued.

The last photo shows the ready-made hydrolat in a bowl. The yield is about 250 milliliters from three handfuls of waste.

Hydrolyzed water has a mild cucumber odor. It is very soft and very refreshing.

And if I’m talking about money on my blog, then now I’ll make simple calculations.

Economic benefits

  1. They put waste material into action.
  2. We got excellent cosmetics, saving money on buying them in the store.
  3. We got incomparable pleasure from the process of making cosmetics with our own hands at home. And it's worth a lot.

Good luck to all of us!

Http://www.asienda.ru/answers/336/#solution

1.Cut the skin from overgrown cucumbers and grate them on a coarse grater. Skip horseradish into a meat grinder. Mix horseradish and cucumber mass. The ratios are one to three or more. For example, one piece of horseradish is three cucumbers. Add salt to the mixture and let stand for two days. Then close the jars with plastic lids. I cook okroshka from these cucumbers in winter, it's very tasty.

2.To cleanse the body.
Cut the cucumber into cubes, add a tablespoon of honey (sugar is possible) and cover for an hour (I do it for 2-3 hours). Then eat it. Cleans the kidneys, liver, stomach, intestines and blood from salts, excess sugar and cholesterol. Eat 5-6 cucumbers every day.

3.2 kg of cucumbers, 300 g of onion, 1 head of garlic, 1/2 cup of vegetable oil, 2 tablespoons of salt, 3 tablespoons of sugar, herbs (dill, parsley), 5 tablespoons of 9% vinegar.
Cut the cucumbers into slices, the onion into half rings, finely chop the herbs and garlic. Put everything in a saucepan (or basin) and leave for 3 hours (stir occasionally). Boil for 5 minutes and transfer hot to sterilized jars. Roll up. In winter, open ready-made salad.

3.And you make all kinds of cosmetics out of them. For example, masks from the pulp, and in the freezer you can leave the diced ones in the freezer and wipe your face and body, and even now you can use frozen cucumber cubes for the face and body. Think. And also, cucumber pulp combined with honey is an excellent cosmetic for face and body. Cucumber juice can be used as a lotion after washing

4. I use overgrown cucumbers to make Ankle Benz sauce, sweet and sour, if you boil less, then there will be a salad.

5. Make a salad (yield - 5 l cans):
- cucumbers - 4 kg cut across into slices, not too thick (you can use rings)
-100 g vegetable oil
-2 tablespoons of grated garlic (skipped through the garlic press)
-1 tablespoon of ground black pepper
-100 g salt
-200 g sugar
-1 table spoon 70% vinegar essence for 1 liter of boiling water.
Mix everything well and let stand for 2-3 hours, then put in jars and sterilize for 15 minutes.
I do not like sterilization, so I boil it. I bring it to a boil and keep it on low heat for about 15 minutes, then on sterilization banks and roll it up. I put it under the "fur coat", and then in the cellar. It costs and does not deteriorate.
Recipe: 3 kg tomato - scroll, 1 tbsp. sand, 1 tbsp. butter, 2 tablespoons of salt, set to boil, boil - add peeled and diced cucumbers (if the seeds are large, cut out the middle). The tomato should boil down, so we lay the cucumbers not very thickly, about 1/3. We boil for 40 minutes. until one o'clock. Depending on who loves a thick sauce or salad. At the end of cooking, add 2-3 heads of pounded and finely chopped garlic and 100 g of 9% vinegar. We put in ster. Jars and roll up.

6.Cut and freeze, every morning, after washing, take 2 slices and rub your faces along the massage lines until the cucumber is completely thawed, you get a mask and leave it for 15-20 minutes, rinse, the skin shines. I freeze this way every year and it is overripe.

7. During the season, it happens that I can not always harvest on time. Cucumbers grow very quickly!
And it so happens that many overgrown (sometimes just huge) fruits are formed on the lashes, and at the same time - a sufficient number of small cucumbers.
The question is: what to do with big fruits?

In this case, I do this.

All large cucumbers are put into a harvester, on a fine grater. And then, having slightly salted this mass (so that there is more juice), I cook juice from cucumbers.

Further, everything is standard. Small cucumbers along with spices (dill, parsley, horseradish leaves, peppercorns, allspice, slightly unmilled cinnamon), onions, one tablespoon of salt, one tablespoon of sugar without a top - for a 1.5 liter jar.
Cover with cucumber juice. After 3-5 minutes, drain, boil, add 0.5 part of a dessert spoon of 70% acetic acid.
Pour boiled juice, add 1-2 teaspoons of vegetable oil.
Close the jar, cover with something warm for several hours instead of sterilizing.

You get a little juice from cucumbers, but the whole crop is processed. And the taste of cucumbers turns out to be interesting in their own juice!

8. Cucumbers in this salad will go and those that have outgrown.

We take 4 kg of cucumbers and cut them into 2-4 pieces, depending on the size.
Add 200 g of sugar, 100 g of salt, 200 g of vegetable oil, 200 g of 9% vinegar, 2 teaspoons of ground black pepper and 2 tbsp. tablespoons of garlic, squeezed through the garlic. Stir everything with cucumbers and leave for 2-3 hours - the fruits will give juice.
Then put everything in jars and sterilize (15 minutes -0.5 liters of jars).

This cucumber salad is made quickly, it turns out delicious. Whoever tries it praises. I learned this recipe last year, I made a salad myself and gave it to my friends to try. This year they also make a salad like this. Try it too - you won't regret it!

9 overgrown salted cucumbers for pickle

Cucumbers tend to hide in the garden and be found already in that overgrown state when it is not possible to use them for their usual canning purpose. There is an opportunity to prepare such "cucumbers", moreover, so that in winter you can cook pickle with pleasure and without problems

Overgrown cucumbers

For 1 liter of water 70-80 grams of salt

Lemon acid

Horseradish leaves, dill umbrellas, garlic (about 3 heads), black currant and cherry leaves

What do we do:

Put the greens down in a large container. Wash cucumbers, prick in several places and lay as tightly as possible.

Fill with hot brine so that the cucumbers are covered with water. We put oppression. We leave to salt for several days at room temperature, until the cucumbers are completely salted. It is better to oversalt a little than undersalt. The skin of such cucumbers is thick, so the appearance of a characteristic film on the surface of the brine does not mean that the cucumbers are salted inside. Better to cut one up and check.

We take out the finished cucumbers from the brine, peel and seeds and cut into cubes or short strips - cutting depends on how you are used to seeing cucumbers in a pickle.

Put the sliced cucumbers in a colander to drain the water.

We filter the brine in a volume approximately equal to the volume of the resulting cucumbers. We boil it properly, removing all the foam. If you don't like the brine - it smells unpleasant or there is a lot of mucus in it - pour it out and just cook a new one from the same calculation of water and salt.

Throw citric acid into the boiling brine at the rate of less than half a coffee spoon for 2-3 liters of marinade.

After boiling, put the cucumbers, bring to a boil, cook for 7-10 minutes, put in prepared jars and close with lids.

We put the cans upside down, cover with a warm blanket or blanket. Leave it to cool completely. Store at room temperature in a dark place. When preparing pickle, we use our already prepared cucumbers with the required amount of pickle according to the recipe.

10.NON-STANDARD and overgrown fruits can be successfully used in cooking and homemade preparations.
Stuffed cucumber with vegetables and herring

Peel the coarse cucumber and cut it lengthwise into 2 pieces. Remove seeds with a spoon. Fill both halves with minced meat made from finely chopped vegetables, eggs, onions and herring. Season with mayonnaise. Sprinkle with dill herbs on top.

For 4 cucumbers you need: 150 g of herring fillet, 1 egg, 1 onion, half a glass of mayonnaise, dill.
Cucumbers stuffed with mushrooms

Peel large overgrown cucumbers, cut in half. Remove the seeds with a wooden spatula, place them on a sieve and collect the juice. Lightly salt the prepared cucumber halves. Stuff both halves with minced mushroom, tie with threads, put in a pan along with pre-fried (preferably in lard) onions. Simmer in your own juice, adding the collected cucumber juice and some fresh tomato fruits, cut into slices. Sprinkle the finished dish with chopped parsley or dill.

For 4 large cucumbers you need: 1 head of onion, 30 g of lard, 1 glass of cucumber or tomato juice, 2 tablespoons of flour, 1 bunch of parsley or dill, 2-3 tomato fruits, salt to taste.

For minced meat: 200 g of fried mushrooms, 1 head of onion, salt to taste.
Stuffed cucumber with chicken

Peel the cucumbers, cut them lengthwise into 2 parts, remove the seeds, chop finely. Cut the boiled chicken meat and cheese into pieces, pepper. Mix with cucumber pulp and mayonnaise. Fill the cucumbers with the minced meat. Serve the dish with canned green peas.

For 4 cucumbers take: 100 g of boiled chicken, 50 g of hard cheese, 2 tablespoons of mayonnaise, black pepper.

Overgrown cucumbers can be harvested for future use along with other vegetables: paprika, carrots, onions, garlic. To do this, they are peeled from the rough peel, the core is removed and cut into cubes. They are stewed and rolled into jars together with vegetables.

You can pickle and canned young cucumbers with them. Grind pre-peeled yolks, salt at the rate of 700 g of salt per 10 kg of cucumbers. Put spices and small standard cucumbers in a clean jar and pour over the grated pulp. Set the oppression on top and keep it for 3-4 days at room temperature. Then close the lid and take out to the basement, store in a cool place. The lactic acid found in overgrown cucumbers and salt are good preservatives.

Last year, my cucumbers outgrew. What to do? And I found a couple of recipes, decided to try them out - and I was just delighted!

Pickle

For 6-7 half-liter cans I take 3 kg of cucumbers, 1.5 kg of tomatoes, 1 kg of carrots, 0.5 kg of onions, 200 g of dry pearl barley, 4 tbsp. tablespoons of sugar, 2 tbsp. tablespoons of salt and 0.5 liters of water. You will also need 0.5 cups of vegetable oil and the same amount of 9% table vinegar. I cut the cucumbers into slices, I rub the carrots with a combine, and I cut the onions with it. I pass the tomatoes through a meat grinder, I do not remove the peel first - it is still almost invisible. I wash the groats thoroughly.

I put everything in a large saucepan, mix and cook for 20 minutes from the moment it boils. Then I add chopped greens - parsley, dill, cilantro, and pour in vinegar, cook for another 10 minutes and pour it into pre-sterilized jars.

And in winter, it is enough to open the jar, throw it into boiling water - and in 10 minutes the delicious pickle is ready. You can add this dressing to the basics or hodgepodge - where pickles are required.

True, the usual cheap barley is not suitable for the recipe, it is better to take a light one, a little more expensive - it boils down faster.

And you can also make a delicious salad from overgrown cucumbers.

SPICY SNACK OF OVERGROWN CUCUMBERS

All "substandard" (curved, overgrown) cucumbers I cut into rings and half rings 0.5-1 cm thick. In total, 2.5 kg of cucumbers are needed.

I cut 1 kg of onions (any one is also suitable) in half rings. I put the vegetables in a saucepan, add 100 g of sugar and sunflower oil, 2 tbsp. tablespoons of coarse salt, 100 ml of 6% vinegar, crushed garlic, ground coriander, all kinds of chopped greens. I put it on the stove and cook until the cucumbers begin to change color (minutes iu-ib). I immediately put it in jars, tamp it tightly, and roll it up. I cool it under the blanket, traditionally inverted.

Cucumbers are amazingly tasty, sweet-sour, crunchy. Garlic gives a cloudy color to the brine, but it is he who gives a piquant aftertaste. I keep jars in the refrigerator.

Surely every gardener found overgrown large cucumbers with a dense yellowish skin in the beds. Most housewives send such specimens to the trash can - and in vain! "Giants" can become the basis for many original and delicious prepared dishes. So, if the cucumbers are overgrown, what can you cook for the winter?

Overgrown cucumbers are not eagerly consumed fresh, mainly for taste reasons. Large-sized vegetables with large seeds bear little resemblance to their young crunchy "brothers". The coarse consistency of overripe fruits is not suitable for fresh salads. But this does not mean at all that they need to be sent to the trash can. What can you cook with overripe cucumbers? Such vegetables are most suitable for canning, and thanks to their large size, you can make snacks that are very original in terms of "appearance".

This is an original appetizer that will be relevant on holidays and weekdays, when you want something tasty and unusual.

Ingredients:

  • 2 kg of cucumbers;
  • 15-20 cloves of garlic;
  • 1 large bunch of greens (any one that is at hand will do);
  • 2 tbsp. l. coarse salt;
  • 1 liter of water;
  • 100 ml of wine vinegar (can be replaced with apple cider or table vinegar, but in a smaller amount - 70 ml).

Preparation:

  1. First, prepare the marinade: bring the water to a boil, pour the vinegar into it, keep it on the fire for a couple of minutes, remove from the stove and leave to cool.
  2. Prepare the cucumbers: cut off the peel from them (do not spare, remove it in a thick layer), remove the seeds, cut into thin longitudinal slices (about 0.5 cm).
  3. Chop the herbs and garlic finely with a knife.
  4. Put the cucumbers in a wide container in straight plates, sprinkle with salt, herbs and garlic, then pour over with cold marinade.
  5. Put a plate with a load on top and put it in the cold for 24 hours.
  6. After a day, remove the cucumber plates from the marinade and roll them into a roll along with the herbs. After soaking in brine for 24 hours, they will become soft and pliable.
  7. Place the rolls in clean, sterilized jars immediately.
  8. Put the remaining marinade on the burner and bring to a boil, boil for 1 minute and pour the contents of the vessels with it.
  9. Roll up the lids and store in a cool place after your vegetable rolls have cooled completely.

Hardly anyone would think that you can cook from overgrown cucumbers ... stew. Meanwhile, it is a versatile preparation: a salad, an appetizer, and a good companion for stewed vegetables and meat dishes.

Ingredients:

  • 2 kg of cucumbers;
  • 1 kg of tomatoes (it is best to use large fleshy ones);
  • 1 kg of carrots;
  • 3 peppers;
  • 1/2 -1 kg of turnips;
  • 1/2 tsp citric acid;
  • 10 cloves of garlic;
  • 1/2 tsp black ground pepper (if you like hot snacks, add a little and ground chili);
  • 1 tbsp. l. coarse salt;
  • 150 ml of vegetable oil;
  • 1 large bunch of greens.

It is not necessary to use exactly this ratio of ingredients - you can take a different amount of vegetables or only those that are on hand.

Preparation:

  1. Peel and seed the cucumbers, then cut into small cubes. Also chop the tomatoes or grate them. If you don't have enough of the latter, you can supplement the missing volume with ordinary tomato paste (but not ketchup!).
  2. Chop the carrots on a coarse grater, chop the onion and pepper into thin half rings, finely chop the garlic.
  3. Heat the oil in a deep bowl and add the cucumbers. Fry them until transparent and only then add the rest of the vegetables in the following order: carrots, after 10 minutes - tomatoes, after another 5 minutes - onions, garlic and peppers.
  4. Simmer the vegetable mass over low heat, stirring occasionally, for about 10 minutes, add salt, herbs, then simmer for another 10-20 minutes (the vegetables should become soft) and add citric acid.
  5. Stir the vegetable mixture, immediately turn off the burner and put the mixture on sterilized jars, roll up.
  6. Turn hot containers over, cover with something warm and leave until they cool completely.
  7. In the future, the cucumber stew is kept cool.

This is another answer to the question of what can be made from large cucumbers. This salad of them goes well with fried meat and fish. It can also be served as a stand-alone snack - it's delicious!

Ingredients:

  • 5 kg of cucumbers;
  • 1 tbsp. tomato paste;
  • 1/2 tbsp. garlic (chopped);
  • 1 tbsp. Sahara;
  • 150 ml of vegetable oil;
  • 1 tsp citric acid;
  • 3 tbsp. l. coarse salt.

Preparation:

  1. Peel the peel from the cucumbers, get rid of the seeds. Cut them into medium-sized slices.
  2. Pour the oil into a thick-walled vessel (you can use a cauldron). Preheat it and add vegetables, simmer for 5 minutes.
  3. Then pour in the tomato paste, add sugar and salt. Bring the mixture to a boil, stirring occasionally.
  4. Reduce the fire to a minimum and continue extinguishing for another 10-15 minutes.
  5. After this time, add citric acid and garlic and, with constant stirring, keep on fire for another 5 minutes.
  6. Spread the hot mass over the banks, close.

Caviar for the winter

Anyone who thinks that it is impossible to cook something worthwhile from large cucumbers is delusional. For example, such a juicy, satisfying and very aromatic snack is obtained only from overripe vegetables.

Ingredients:

  • 5 cucumbers;
  • 1 medium onion;
  • 4 large tomatoes;
  • 3 carrots;
  • 2 sweet peppers;
  • 50 ml of vegetable oil;
  • 10 g salt;
  • some ground black pepper.

Preparation:

  1. Peel the cucumbers, remove the seeds.
  2. Cut off the stalk of the pepper, also get rid of the seeds.
