How to cook:

Fry in melted boiling pork fat (or vegetable oil). It is possible in the duck. Try not to overcook it, and after pulling the brush out onto the platter, be sure to sprinkle it with powdered sugar.

Brushwood on sour cream
Break 3 eggs in a bowl, add 2-3 tablespoons of sour cream and 2 tablespoons of vodka or brandy, mix, beat. Take in parts and roll out thinly - thinly, until transparent, and cut each piece into squares, fold so that they do not stick together. Boil vegetable oil (half an hour over low heat) 1 bottle, and cook the cubes until tender, remove with a colander. Boil 1 glass of honey and 1 glass of sugar. Watch that the honey does not burn. When everything is cooked, pour the brushwood with honey, stir and put on a tray. Glue with wet hands.

Ingredients

However, the ingredients of the Khvorost dough are not the most important thing. For baking brushwood, you need a special mold. Molds (in the form of butterflies, flowers, etc., with a diameter of about 5-7 cm) are screwed onto a long, slightly curved rod from the bottom. First, the mold must be heated in vegetable oil (deep fat), then immersed in 2/3 of the molds in the dough (the mold is already heated in oil and the cold dough just sticks to it) and dipped in boiling oil. Hold until golden brown, remove and slightly pry with a knife so that the "brushwood" separates from the mold.

If you cook "Khvorost" this way, then it will be thin and crispy. It tastes even better if sprinkled with powdered sugar.

- 6 yolks
- beer
- OK. 300 g flour
- vegetable oil for frying

Prepare 2 identical glasses. In one pour all the yolks, and in the second beer in the same volume, which was occupied by the yolks in the first glass. Pour the contents of both glasses into a bowl, add flour and knead into a fairly stiff dough. Divide the dough into 4 - 5 parts. Roll out one part very thinly, until transparent (so that the working surface shines through the dough). Cover the remaining pieces of dough with a towel or polyethylene to prevent them from drying out.
Cut long strips from the rolled dough, approx. 3.5 - 4 cm. Cut them obliquely into shorter strips. Cut each strip in the middle to a length of about 4 cm. Take one end of the strip and thread it into the resulting slot.
Heat vegetable oil in a flat saucepan. Fry brushwood until light, straw color. While the brushwood from the first part of the dough is fried, start forming the next portion. Remember to cover the remaining dough carefully to prevent it from drying out.
Put the finished brushwood on a plate, after covering it with a paper towel, which will absorb the excess oil.
Sprinkle the cooled brushwood with icing sugar.

Ingredients:
- cottage cheese - 300 grams
- egg - one piece.
- wheat flour - 1 glass
- sugar - two tablespoons
- sesame seeds - three tablespoons
- icing sugar - one tablespoon
- vegetable oil - 3 glasses
- salt

Cooking method:
Combine cottage cheese with egg, salt, sugar, flour and sesame seeds, knead the dough. Leave for 30 minutes, roll out the dough into a layer 3 mm thick, cut into strips, form brushwood. Fry it in oil until golden brown and dry on a napkin, put the brushwood on a dish, sprinkle with powdered sugar and serve with fruit tea.

5. Roll out the dough to a thickness of about 5 mm.

6. Cut the dough layer into rectangles 4 * 7 cm.

7. In the center of each we make a cut and turn it out several times.

8. Heat the vegetable oil in a deep fat fryer or an ordinary deep saucepan of small diameter.

9. Begin to fry on both sides for a minute until an appetizing golden brown.

HOW TO COOK

We knead the dough from eggs, cottage cheese, flour, baking powder, vanillin, salt, sugar.

Sprinkle the table with flour, and roll out a thin layer, divide it into strips, make a cut in each strip, now turn the brushwood into the cut. You can not turn it out, but simply cut it into ribbons. We also make brushwood from the scraps, it turns out 25-30 pcs. Pour vegetable oil into a saucepan so that the brushwood floats in the oil. As the oil warms up well, lower the brushwood and fry until golden brown on both sides for about 1 minute.

And we will fry with you. I bought cottage cheese in the store in packs. It is fine-grained and easily diverges in the dough without lumps. If you have cottage cheese with large grains, then you will need to rub it through a sieve.

For me personally, this recipe makes a large bowl with top. It's good if it's enough for a couple of days, or even just one. And what a delicious one, with a peculiar taste, probably because of cottage cheese and maybe kefir. I highly recommend everyone to cook and taste this airy and soft brushwood. I'm just sure you all will like it.

To prepare soft brushwood, you will need:

  • 1 pack of cottage cheese;
  • Egg;
  • Sugar to taste;
  • Kefir 0.5l;
  • Soda 1h. l;
  • About 5 glasses of flour;
  • Vanillin;
  • Vegetable oil 0.5l;
  • Powdered sugar.

How to cook soft brushwood on kefir

Get a larger bowl. Beat in an egg, put in cottage cheese, add sugar (I put 3 tablespoons), vanillin, you can have a pinch of salt, but I didn't put salt.

Pound well and stir.

Pour in kefir, add soda. Stir. Within a minute, bubbles will appear on the surface and the mass of cottage cheese and kefir will begin to increase in volume. This is the process of extinguishing soda. Let it be extinguished for a minute.

Now add flour gradually in a glass. Stir well every time.

Add 3 cups of the coda, put the dough on the table sprinkled with flour and knead it, adding a little of the remaining flour if necessary. The dough should not be too tight. It can stick a little to your hands and table, so that this does not happen - sprinkle with flour lightly. But 5 glasses is the limit. Form a ball.

Cut off about a quarter from it, and put the rest in a separate plate or bowl and cover so that it does not weather. Roll out the dough into a 4mm pancake. Cut with a sharp knife into long strips 4 cm wide. Then separately each strip 6-7 cm long across. Make small cuts in the middle.

Well, now it's a matter of technology. You need to form these blanks. To do this, take the cut piece and pass one edge through a small hole, stretch slightly to shape. Etc.

Pour enough oil into the skillet and heat it well. The brushwood is fried very quickly, about a little more than over medium heat. Spread out a portion of the blanks, but not very tightly, because they grow very large. Fry on one side.

Flip on the other as well. Fry everything, add oil periodically.

Ready soft brushwood on kefir with cottage cheese it remains only to sprinkle a little with powdered sugar. All, serve.
