Carefully divide the eggs into whites and yolks. Try not to get a drop of yolk on the whites, otherwise you won't be able to whip the whites into a fluffy foam in the future. Combine milk, melted butter and chicken yolks in a separate bowl.

Mix milk, butter and yolks thoroughly (you can use a mixer).

Pour the resulting liquid mass into dry ingredients.

And slowly, gently mix the dough. It will become quite thick, but sticky and pulling behind the scapula.

Beat the whites with a mixer until fluffy. Pour the remaining 70 grams of sugar into the dough, whisking continuously with a mixer, pour in a thin stream the remaining 70 grams of sugar, continue beating for 5 minutes at high speed. The mass should increase in volume several times and become thick. Add whipped whites to the resulting mass, gently mix the dough with a silicone spatula.

I found the recipe for these chocolate muffins when I suddenly ran out of food suitable for children in the refrigerator, and the children, of course, immediately demanded food. The dough was kneaded by the whole company. This took exactly five minutes. The result was almost completely eaten up. Anyway, the next day I baked those chocolate muffins again. Butter too, as well as flour. But there is healthy vegetable oil (you can safely take refined olive oil) and a lot of cocoa, in which there is an unimaginable amount of everything useful. It is especially pleasing that it contains a lot of potassium, which is extremely important for the good functioning of children's brains. The cupcakes are light and airy. And to enhance the chocolate flavor, I add a little cinnamon - for some reason, it gives the muffins the taste of purchased ones, from which the children cannot be dragged away and which are not known what they are made of. But, perhaps, cunning manufacturers add cinnamon to them. In general, I am writing a recipe for memory, so as not to rummage forever in a heap of files.

Ingredients:

  • 50 g butter
  • 100 g sugar
  • 3 eggs
  • 3 tbsp. tablespoons of vegetable oil
  • 100 g flour
  • 3 tbsp. cocoa spoons

Cooking method

I did not take step-by-step photos for the recipe, simply because there is absolutely nothing to shoot here. Everything is mixed with a fork and poured into molds. Just in case, for those who still want to have a certain sequence of actions in front of their eyes, I will write everything down in steps.

1. You need to get the butter in advance to soften it.

2. Put butter in a large bowl, add sugar and grind into a homogeneous mass.

3. Break three eggs and shake with a fork until bubbles appear. At this stage, we sometimes use a mixer. Just because the kids love it. But you can do without a mixer.

4. Add everything else: vegetable oil, cocoa, flour, baking powder, cinnamon. We mix.

5. We take the molds. I have a silicone one with six cupcake grooves. Pour so that the dough does not reach 2-3 mm to the edge of the mold.

6. Put in an oven preheated to 150 degrees for 45 minutes.

7. If you have a silicone mold, you can remove the cupcakes while hot. If the form is ordinary, then let them cool slightly so that they grab, otherwise it may come out so that half of the cupcakes will remain inside the form.

And one moment. This dough can be used to bake not only small chocolate cupcakes for children, but also a large cupcake. It can be easily eaten and used for a cake, as it turns out to be very soft, porous and great for impregnation.
