After that, the mixture is poured into wide pans, where it must undergo a primary fermentation for 10 days. The pan is covered with gauze. The apple mixture should be stirred occasionally.

After 10 days, the composition should be filtered and a new portion of honey added to it (at the rate of 100 g of honey per 1 liter). Then stir thoroughly until the honey is completely dissolved.

Further fermentation of the mixture should take place in bottles, into which it is poured without corking, but only covered with gauze. Bottles should be stored in a warm place.

The readiness of vinegar is judged by whether the fermentation processes have stopped. This period can last 4-6 weeks. In this case, the liquid is clarified, a precipitate is observed, which is carefully separated by draining the finished vinegar with a hose. After that, it is filtered again with 3 layers of gauze, bottled, sealed with corks, which are filled with wax, and stored in a refrigerator or other cool place.

After a few months, reddish flakes may appear in the bottles - a precipitate that is absolutely harmless.
