Products:

1. Pearl barley - 1.5 cups

2. Beef - 400 gr

3. Champignons - 200 gr

4. Green peas - 100 gr

5. Onions - 1 pc.

6. Carrots - 1 pc.

7. Salt, pepper, spices - to taste

8. Vegetable oil - for frying

How to cook barley porridge with meat, mushrooms and vegetables:

1. Rinse the pearl barley and soak in plenty of water overnight. In the morning, drain the water, rinse again and boil the barley until cooked in salted water. When the barley is ready, drain the water and wrap the pan with a blanket - then it will open all over and will be very soft and beautiful.

2. Cut the meat into portions and fry until golden brown in vegetable oil. Season with salt and pepper, add spices to taste. Add water and simmer until tender (about 40 minutes).

3. Rinse the mushrooms, cut into 4 pieces and add to the meat. Simmer for 10-15 minutes.

4. Cut carrots into strips, onions - into cubes. Add vegetables to meat and mushrooms, simmer for 10 minutes under a closed lid.

5. When the vegetables are tender, add the peas (after defrosting them) and cook for no more than 2 minutes.

6. Add vegetables and mushrooms to the pearl barley. Stir gently, keep on fire for 1-2 minutes and serve.

The composition of the products is very inaccurate, excuse me, except for cereals and water.

  • 2 cups pearl barley

  • 2 medium carrots (I have frozen, about 200 grams)
  • 3 onions
  • vegetable oil for frying
  • a piece of butter (I have a tablespoon of ghee)
  • salt, pepper, bay leaf

Cooking procedure:

Soak the groats overnight

In the morning we light up the stove and do our porridge.

Cut the meat into cubes, salt, pepper and fry in a little oil until golden brown. Fry the onion, too, lightly, until soft, in a separate pan. Or you can go with meat.

Then add mushrooms and carrots to the meat. We fry for a few minutes.

Salt water from the soaked cereals and mix it with the contents of the frying pans.

Now we put everything that happened in a cast-iron pan, fill it with three

glasses of chicken broth (you can just water), add bay leaves, a spoonful of ghee.

Cover with a lid and put in the oven. And if in the oven, then first set the temperature to about 200 degrees, so that everything boils. After half an hour, reduce to 150 degrees and simmer the porridge for 1.5 hours.

It took me three hours. We take out.

Cooking method

Before cooking barley, it must be calcined in a dry, hot frying pan and immediately immersed in cold water.

Rinse the meat, cut into small pieces, fry in a hot pan until golden brown in sunflower oil. Salt and pepper a little, add spices to your taste. Pour water and simmer over medium heat until the meat is completely cooked.

Cut the champignons into slices and add to the meat in the pan. Put out another 20 minutes.

Wash the carrots, peel and coarsely grate, and finely chop the onion. Also add vegetables to meat. Cover and simmer for 12 minutes. Put green peas with meat and mushrooms with vegetables a couple of minutes before the end of cooking.

Boil the barley separately. The proportion is as follows: for one part of pearl barley, two parts of liquid. Once the pearl barley has boiled, reduce heat to low and cook until all the water has boiled away. The pearl barley will become soft and tasty.

Combine the finished barley with stew, vegetables and mushrooms. Mix well and leave on fire for a couple of minutes.

Serve on the table hot, so the porridge is more aromatic and tastier. If you wish, you can decorate the top with chopped herbs. Make your loved ones happy. Enjoy your meal.

Preparation:
On the eve of cooking, in the evening,
pearl barley should be washed well
and soak in water overnight
(At least 8 hours. I had 12 hours).
Pour water with a margin - the barley will take some of it.

Boil the beef until tender
and scroll through the meat grinder
(or chop very finely).
Grate the carrots on a coarse grater.
Cut the onion into small cubes.
Cut the mushrooms into medium slices.

Fry the onions for a couple of minutes in vegetable oil,
add carrots
fry for a couple more minutes.

Add mushrooms to carrots with onions, fry for 5 minutes,
then add the beef and fry for another 4-5 minutes,
until the liquid evaporates. After that, we remove from the fire.

Rinse the cereals soaked the day before,
put in a dish for the oven (brazier, cauldron,
heat-resistant saucepan, deep pan),
pour hot water 2 cm above the level of porridge,
cover and set for 40 minutes. into the oven,
warmed up to 180 C.

After 40 minutes, remove the barley from the oven,
add mushrooms with meat, salt, spices, mix,
cover and put back in the oven
for another 40 minutes, reducing the temperature to 150C.

Serve very well with fresh juicy vegetables.
