Step by step cooking process at home

  1. Prepare the ingredients.
  2. Start by preparing the marinade. Wash, peel onions and carrots. Cut the onion into medium-sized pieces, chop the carrots on a coarse grater.
  3. Heat the pan, pour in half the norm of sunflower oil. Saute carrots and onions in oil for about 2-3 minutes, stirring occasionally. During this time, the onions will turn white, and the carrots will turn bright orange.
  4. Add peppercorns (5-6 pieces) to onions and carrots. They can also be ground and then added to the marinade. Pour the tomato paste, vinegar, salt, stir into the pan.
  5. Wash and finely chop the dill.
  6. Add the dill to the pan with the marinade and pour in the water. Stir evenly with a spatula. Now let the marinade simmer under the lid until the water boils. During this time, the marinade will cook: onions and carrots will become soft, and salt, vinegar and pepper will soak them. Try what happened. Add salt or vinegar to taste if you feel they are missing. It is a well-prepared marinade that will provide 70% of the success of the dish. In the future, its taste will saturate the fish.
  7. Now let's move on to the fish. You need to do everything as quickly as possible so that the marinade does not have time to cool. If you bought whole fish, gut it and cut into pieces. Roll the fish pieces in salted flour. Then send it to a heated oil (with the remaining vegetable oil) pan. Fry the fish on both sides for 2-3 minutes, and then remove.
  8. Select all the bones from the fish and remove them. Cut the remaining meat into small pieces.
  9. Divide the finished marinade into 2 parts. Cover the bottom of the pan with one, and slide the other to the edge.
  10. Now spread a heap of the remaining marinade on top of the cod pieces. Close the lid and leave to cook for about 14-18 minutes on the lowest heat. Then turn off the gas and do not open the lid. Let the cod under the marinade come warm and better soaked in the taste and smell of the marinade.

Cooking method
