When baking, the casserole will almost double up, and then, when it cools, it will smoothly drop to its original level. It should be so. Therefore, the form must be with a margin of height.
  6. After baking, wait until the casserole has settled to the desired level and cooled down a little. After that, we take it out of the mold and cool it to the end with a crust down on an absolutely smooth surface, then after turning it back it turns out to be very, very even from above. It is ideal to do it at night so that it will stand in the refrigerator until morning.

Curd casserole on kefir is not fatty, but satisfying. Calorie content is easy to control by choosing the minimum fat content of the ingredients. And this is the main advantage of cottage cheese casserole with kefir, and not with sour cream.

About the dish

Cottage cheese casserole is a product known to many from kindergarten or school. It has been known since the 19th century, even if it was called and prepared differently. Cheesecakes and curds are considered relatively related dishes, the only difference is in the size, the addition of some ingredients and the method of preparation. And the basis is the same - cottage cheese and eggs.

But few people know that the result depends on additional ingredients. So, on sour cream you get a denser, fatty dish, on yogurt or other liquid fermented milk product - more airy and soft. If you add more sugar, you get a dessert, and if you add more salt, you get a second course. In addition, they cook either with or without baking powder, which means that the curd product can be more or less lush. One thing almost does not matter - to lay eggs whole or to separate the whites from the yolks. In any case, they are mixed with the curd mass.

All this must be taken into account if you want a "casserole from childhood." Much depends on how it was done then. Most likely, it was a recipe with a minimum of liquid fermented milk products, sugar and eggs. In addition, everything was mixed without the help of a blender, and the curd substance was not so uniform.

To deliciously cook cottage cheese casserole on kefir, they resort to using a baking powder. It is advisable not to use baking soda so that its taste does not mix with the taste of the rest of the ingredients. In addition, you can improve the taste:

  • adding nuts, raisins or candied fruits to the curd mass;
  • by preparing a spicy or salty sauce, if a dessert is not planned;
  • decorating the top with berry or fruit jelly with fresh or canned fruits.

Serving ready meals is preferable with interesting additions. For example, with syrups or gravies, or light salads and meatballs. Without additions, it will not be satisfying enough and slightly bland.
