How to knead dough correctly

Charlotte is a common treat, the taste of which largely depends not only on the filling, but also on the dough, which is kneaded from the simplest ingredients, but not every cook turns it out light and airy.

Ingredients:

  • Sugar – 1 glass.
  • Flour – 1 cup.
  • Eggs – 3 pcs.
  • Vinegar, soda.

  2. Beat the whites thoroughly with a whisk until a thick foam appears. The masses are carefully mixed, vanillin, soda and vinegar, and sifted flour are added. The correct result is a viscous mixture.
  3. To prevent the dessert from burning, place regular parchment on the bottom of the baking dish.
  4. To preserve the splendor, place it in a preheated oven and do not open the door until done.

Some housewives make the dough a little differently. When kneading, they do not separate the eggs and beat the mass with a mixer. Others solve the fluffiness problem with baking powder. The main thing is that the dough rises high. This is the main secret of a delicious pie.

Be sure to sprinkle with powdered sugar before serving. If one charlotte is not enough for a complete tea party, make a sausage from cookies and cocoa.

Apple pie with kefir

Apple charlotte with kefir is another option for delicious pastries. The recipe has several features - the use of warm kefir and sweet fruits. The first factor promotes a rapid reaction with baking powder and has a positive effect on fluffiness, and the second one compensates for the sour taste of the dairy product. Instead of kefir, you can use yogurt, the result will be just as tasty and fluffy.

Ingredients:

  • Kefir – 1 glass.
  • Flour – 2 cups.
  • Eggs – 3 pcs.
  • Sweet apples – 5 pcs.
  • Sugar – 1 glass.
  • Soda – 1 teaspoon.

Preparation:

  1. Rinse the apples with water, peel, core, and cut into thin slices.
  2. Mix sugar with eggs, beat, add soda. Add kefir to the resulting mixture.
  3. Add sifted flour to the dough, mix carefully. Do not stir for a long time or make intense movements, otherwise too much air will escape.
  4. Pour half of the batter into a greased pan and place the filling on top. Sprinkle with cinnamon and sugar if desired. Fill with the remaining dough.
  5. Send the kefir preparation to bake for 45 minutes at 180 degrees. If time is short, use a round mold. It will reduce baking time.

For decoration, use powdered sugar, coconut flakes, fresh berries, sprinkles or whipped cream.

Original version with sour cream

The classic version of charlotte is an airy sponge cake made from eggs, milk and fruit. The disadvantage of the original dessert is that it is only good when served hot. Later it falls off and loses its taste. The modern version has no flaws and contains sour cream.

Ingredients:

  • Sour cream – 200 ml.
  • Sour apples – 5 pcs.
  • Flour – 1 cup.
  • Eggs – 1 pc.
  • Soda – 0.5 teaspoon.

Preparation:

  1. Wash the fruit, peel, core, and cut into slices. If they are too sour, add a little sugar.
  2. Combine sour cream with soda. In a separate container, beat sugar and egg. Mix.
  3. Add sifted flour to the resulting mixture and mix well. The dough should be without lumps.
  4. Place half the apples on the bottom of the greased pan and pour some of the dough on top. Repeat the process. This will make the best apple layer pie.
  5. Bake at 180 degrees for 40 minutes. A toothpick will help make sure it is ready.

Before serving, garnish with powdered sugar and crushed walnuts. Please note that low-fat or too fatty sour cream is not suitable. In the first case, a sour product is obtained, and in the second - porridge. I think 10-20% sour cream is the best option.

Cottage cheese pie

If there are some apples and fresh cottage cheese in the refrigerator, why not make a wonderful dessert? Apple pie with cottage cheese will appeal to both adults and little gourmets.

Ingredients:

  • Cottage cheese – 250 g.
  • Apples – 3 pcs.
  • Eggs – 4 pcs.
  • Flour – 3 tablespoons.
  • Butter – 150 g.
  • Sugar – 300 g.
  • Soda – 0.5 teaspoon.

Preparation:

  1. Cut the butter into small pieces, add 100 grams of sugar. Grind the mixture until the sugar is completely dissolved. Add cottage cheese and another 100 grams of sugar to the butter mass, stir.
  2. Beat the chilled egg whites with 50 grams of sugar with a whisk or mixer. Grind the yolks with the remaining sweet powder. Add the yolks and beaten whites into the curd mass and mix. Add flour, slaked soda, mix.
  3. Peel the fruits, cut into cubes, add to the dough, mix. Place the resulting mass in a pan with a parchment-lined bottom.
  4. Bake for 30 minutes at 180 degrees. Sprinkle the finished charlotte with powdered sugar.

Like the previous options, charlotte with cottage cheese is prepared at home quickly and effortlessly. For those who cannot imagine a diet without cottage cheese dishes, I recommend trying it.

Quick charlotte with milk

I often use the recipe with milk. It's simple, quick and doesn't require fancy ingredients. The taste and incredible tender filling of charlotte bring a lot of joy and lift your spirits.

Ingredients:

  • Egg – 1 pc.
  • Milk – 1 glass.
  • Sugar – 1 glass.
  • Apples – 3 pcs.
  • Flour - 3 cups.
  • Soda – 1 teaspoon.
  • Vegetable oil – 3 tablespoons.

Preparation:

  1. Knead the dough. Beat eggs into a deep bowl, add sugar, beat well. Add slaked soda, pour in milk, stir, gradually add flour and mix again.
  2. Peel the washed fruits, remove the core, and cut into medium pieces.
  3. Place the filling on the bottom of the greased pan and pour the batter on top. Leave the workpiece for 10 minutes.
  4. When the time is up, place in the oven. You need to bake at 180 degrees for 40 minutes.

If the fruit has a soft skin, I advise you not to remove it. It contains many substances that are beneficial for the body and immunity. Use what you like to decorate. Powdered sugar, cream, or other toppings will do.

Diet charlotte without eggs

If you watch your figure and strictly control the number of calories consumed per day, pay attention to the dietary option. Although it does not contain eggs or flour, its taste is not inferior to its more high-calorie counterparts.

Ingredients:

  • Semolina – 1 glass.
  • Kefir – 2 glasses.
  • Sugar – 1.5 cups.
  • Vegetable oil – 4 tablespoons.
  • Apples – 3 pcs.
  • Vanillin, soda, baking powder.

Preparation:

  1. Pour semolina into a deep bowl, add kefir, stir. Add sugar, soda, vanillin, and vegetable oil to the resulting mixture. Stir and set aside for 20 minutes.
  2. Wash the fruit, remove the peel, chop into small pieces. After 20 minutes, mix the filling with the dough.
  3. Pour the resulting mass into a greased pan and bake at 180 degrees until golden brown.

Even a beginner can cope with charlotte. But there are several subtleties and secrets that make cooking more enjoyable, and the result fluffy and aromatic.

  • Ordinary sour apples are ideal for charlotte and Antonovka is beyond competition. The bright aroma, complemented by sourness, sets off the sweet flour base. If there are no sour fruits, add some berries.
  • The secret to fluffiness is beating the eggs correctly. Use only cold whites. To make the foam fluffy, strong and not settle, add a pinch of salt.
  • If you place a charlotte with apples without preheating, the core will not bake and the top will burn. To prevent the dessert from sitting, do not open the door until cooking is complete.
  • Baking welcomes experimentation with spices and herbs. In addition to vanillin and cinnamon, it is recommended to add nutmeg or cardamom. Ground pepper and ginger help in adding spicy notes. The main thing is a sense of proportion.

Use the recipes described, prepare a lush and aromatic pie, delight your family and swim in a sea of gratitude. Have fun in the kitchen!

There are a million charlotte recipes. Many of them are so original that sometimes it’s even scary to cook. RECIPE FOR CLASSIC APPLE CHARLOTTE

NECESSARY:

  • 3 eggs
  • 1 cup flour
  • 1 cup of sugar
  • 1 kg apples
  • 1/2 teaspoon cinnamon
  • 2 tbsp. spoons of cognac or brandy

HOW TO COOK:

Wash the apples, core them, cut into slices. If you like a soft, puree-like filling, then peel the apples. And if you don’t have anything against apple peels, then you don’t need to remove them. ((WIDGET-571))

Sprinkle chopped apples with cinnamon, add 2 tbsp. l. cognac or brandy and leave to stand. It is better to cover the apples with a lid to prevent them from darkening. You can add a little lemon juice, it will help the apples retain their natural color.

Beat eggs with sugar until white and homogeneous airy mass. Gradually add a glass of flour to the egg mixture and mix with a spoon.

    Preheat the oven to 180˚.

Grease a baking dish with sunflower oil. Place the apples in the pan and pour the batter evenly over them.

Bake the charlotte for 35-40 minutes until golden brown. The delicate egg crust can burn very quickly, so you may want to cover the pie pan with foil. To check the readiness of the pie, pierce it with a toothpick - there should be no traces of raw dough left on it.

BY THE WAY: The most convenient way to measure flour, sugar, and indeed anything in the kitchen is with a classic faceted glass, its volume is 250 ml.

Would you like to try the extraordinary tangerine charlotte from the maestro of the confectionery genre Alexander Seleznev? Then watch the video recipe!

It is believed that charlotte was invented by the British. It got its name either from a woman’s name, or from a word denoting a similar dish. But this dish did not contain apples, so the first version, which also has variations, is considered more likely. The name could come from both the queen and the girl with whom the creator of this dish was in love.

Secrets of making charlotte

  • Sift the flour for the dough. In the bag it is compacted, and occasionally small lumps may occur. After sifting, it will be saturated with oxygen, become looser, and the dough will eventually become airy.
  • Beat eggs with sugar. It is recommended to first separate the whites from the yolks.
  • Achieve uniformity. The dough should be runny but homogeneous. Use a blender or mixer for mixing.
  • Add a little baking powder. Traditional charlotte with apples should be made as “airy” as possible.
  • Take sour apples, for example, Antonovka. Sweet or too juicy varieties are not suitable.
  • Lay out in layers. The classic recipe for charlotte with apples requires layering the fruit. This not only changes the taste, but also the appearance, turning an ordinary apple pie into an exquisite dessert.
  • Take care that the pie does not burn. Line the baking dish with special paper or sprinkle semolina on top of the greased bottom so that the cake does not come out too greasy.
  • Do not open the door. Preheat the oven in advance, and after inserting the dessert inside, do not open it until ready. Biscuit dough is “capricious” in terms of temperature, so it can fall.
  • Achieve even baking. For those who want to bake a true masterpiece, it is necessary to take into account that the heating in the oven is not always stable. One edge may bake a little more, the other a little less. The solution to the problem is to place the pie on the middle level and place a baking sheet with coarse salt on the bottom. This way the temperature will be even.

The following two step-by-step recipes differ in that not acetic acid is used to extinguish soda, but other acidic substances - kefir, sour cream, milk. They also extinguish soda, but in themselves they are much more useful.

With sour cream

  1. Place sour cream, eggs, sugar in a deep bowl. Beat well.
  2. Add vanilla and cinnamon, mix.
  3. Mix flour and baking soda in a separate bowl. Sift through a sieve into the previously made mixture.

On kefir

You will need:

  • flour - 150 g;

Cooking in a slow cooker

The classic recipe for apple charlotte in a slow cooker has one pleasant feature - it does not include soda or baking powder, because the charlotte is already airy. However, it is not recommended to prepare this dessert without first whipping it with a mixer. In the slow cooker, the charlotte comes out with a pale top. There are two ways to fix this - make the bottom a top or additionally decorate with cream or ice cream before serving.

You will need:

  • flour - 150 g;
  • sugar - 150 g;
  • eggs - 3 pieces;
  • apples - 4 pieces;
  • butter - 20 g.

Preparation

  1. Melt the butter in the multicooker turned on.
  2. Add a couple of spoons of sugar. Or use powdered sugar to avoid scratching the bottom of the bowl.
  3. Peel the apples and cut into slices. Place on the bottom in an even layer.
  4. Make the dough: mix eggs with sugar, then add sifted flour. Beat with a mixer until creamy.
  5. Fill the apples with the prepared dough.
  6. Cook for 35 minutes in the “Bake” mode. Remember that multicookers are different, so you will often have to choose the optimal temperature yourself.
