It takes a lot of time to prepare the donuts: almost an hour and a half, but it’s worth it.

Ingredients for 12 donuts:

  • Flour – 120 gr.;
  • Butter – 45 g;
  • Water – 180 gr.;
  • Eggs – 3 pcs.;
  • Zest of 1 lemon;
  • Salt – 1 pinch

Ingredients for cream:

  • Milk – 500 gr.;
  • Flour – 60 gr.;
  • Sugar – 100 gr.;
  • Cherries in liqueur – 100 gr.;
  • Vanillin – 1 pack;
  • Lemon juice – 1 tsp;
  • Food coloring – 1 tsp.

How to make choux pastry donuts:

Pour water into a thick-bottomed pan, add oil and a pinch of salt, and bring everything to a boil.

As soon as the water boils, remove from heat, add flour and mix thoroughly.

Place the mixture over the heat and continue stirring until the dough begins to pull away from the sides of the pan.

Add lemon zest to the dough, then eggs one at a time. Before adding a new egg, the previous one should already be well mixed.

The dough is mixed until a uniform consistency is obtained.

Place the choux donut batter in a piping bag fitted with a star tip and on a baking sheet form into a spiral from the center of the base of the donuts.

Bake choux pastry donuts at 200 degrees for 20 minutes. Then reduce the temperature to 160 degrees and bake for another 10-15 minutes.

When the donuts are ready, turn off the oven, open the door and let them cool.

Meanwhile, prepare the classic custard.

Place the flour and sugar in a saucepan and stir the ingredients.

Add vanilla and lemon juice, and then milk, stir everything until there are no lumps.

Place on the fire and simmer over low heat with a pinch of food coloring.

Bring the custard to a boil, making sure to stir it constantly. The custard is ready if it has thickened to the consistency of rich sour cream. Let the cream cool and place it in a piping bag.

Cut the custard donuts in half lengthwise. Pipe the cream onto the bottom half until completely covered. Place the top of the donut and fill the center with cream.

  • 20 g Sugar
  • 5 g Salt
  • 300 g flour

  • 10-15 ml Cognac or Dark Rum
  • 1.5 l Vegetable Oil
  • 50-80 g Powdered Sugar

Cooking method:

Place water, butter, sugar and salt in a deep saucepan. Place on medium heat. Stirring constantly, bring to a boil, but do not let it boil. As soon as bubbles appear, reduce the heat to low and add flour, the whole amount at once. Working intensively with a spatula, knead the dough. It will take just a couple of minutes: the mass will become more homogeneous, dry out a little and absolutely stop sticking to the pan. Remove from heat completely (you can even transfer the mass to another container) and begin adding eggs. You can do this manually, or you can rely on a mixer. In any case, we do this with constant, very fast stirring, adding the eggs one after the other so that they do not cook while adding to the hot dough. Otherwise you'll end up with scrambled eggs and not beignets! As soon as one egg is mixed in, add the next one. The result should be a homogeneous, viscous and tender dough. At the very end, add a little dark rum or cognac - for a more refined aroma, and also to make the beignets crispier!

Heat vegetable oil in a deep bowl. If you have a special thermometer, the temperature can be measured - it should be 175-190 ° C, if not, you can check it with a wooden spatula: lower it into the oil until the day, if bubbles actively run through it, then you can fry. And please be very careful when working with hot oil!

Using two spoons, we form small donuts and carefully place the dough into the oil so that it does not splash and accidentally burn you. Another way: transfer the dough into a cooking bag and, squeezing it out in small portions, cut it off with scissors. This makes it even faster! You can fry several donuts at the same time, but do not overdo it, otherwise there may simply not be enough space for them, since they greatly increase in size during frying. Turning periodically, wait until the donuts become golden brown and appetizing and take them out, placing them on a wire rack lined with a paper towel to absorb excess oil.
