Zrazy are similar to large cutlets, as they are also ruddy, round and quite thick. Only here inside them is not pure juicy minced meat, but first potatoes.

Potatoes, however, need to choose the one that is white. This also applies to the peel and the tuber itself inside. Such potatoes are crumbly and perfect for mashed potatoes, as they boil well.

  • Flour - 2 tbsp. l .;
  • Fresh or dried dill to taste;
  • Cheese and garlic - optional.

Preparation:

  1. First, let's put the potatoes to boil. While the water is heating, we clean, wash, cut the potatoes into 4 parts so that they cook faster. Dip in boiled water, salt and cook over medium heat for 10-15 minutes.
  2. At this time, we are engaged in minced meat and mushrooms. Peel, wash, chop onions, carrots, mushrooms. Put the onions and carrots in a preheated pan with a little oil, quickly fry them and put the minced meat. Fry all together for 5 minutes, then add finely chopped mushrooms. For about 5 minutes more, everything is fried. Do not forget to stir in time.
  3. Now add salt, pepper, cover and let simmer for another 10 minutes over low heat.
  4. The potatoes should just be ready. We drain all the water, crush the potatoes and let it cool slightly. Break eggs into warm potatoes and mix thoroughly. Add some salt if you wish, but I don't, since the potatoes have already been salted, the minced meat too, and the gravy will be quite salty.
  5. While we were preparing the base for zraz, minced meat was prepared. We open the pan, if there is liquid left, we evaporate it or, squeezing it out well with a spoon, put the minced meat with mushrooms on a dry plate. Let it cool so that your hands are not hot.
  6. We take a little potato mass, like a dough for pies, knead the cake right on the hand (so as not to stick, we moisten our hands with water). Put the filling there with a teaspoon. We fix the edges (also like pies) and crush.
  7. We spread the potato zrazy with minced meat in a preheated pan with oil and fry over high heat until golden brown on both sides.
  8. When all the zrazy with potatoes and minced meat have been removed from the pan, pour the flour directly into the same oil, fry it and pour out the sour cream, having salted in advance. Leave on low heat, covered for 5 minutes. If there is cheese in the house, I definitely add it. I put 1 chopped clove of garlic in the sour cream, and 1 minute before turning off I rub the cheese on a fine grater (you don't need much so that the gravy doesn't thicken too much, just for taste). Zrazy can be simply fried, but I love to bake them in the oven, in my opinion, this is much healthier.

Ingredients:

  • Potatoes - 1 kg;
  • Flour - half a glass (less or more - adjust according to the thickness of the potato dough);
  • Eggs - 2 pcs.;
  • Vegetable oil - 2 tbsp. l. for frying minced meat + 1 tbsp. l. for greasing a baking sheet;
  • Minced meat - 500 g;
  • Onion - 2 heads;
  • Salt and pepper to taste.

Preparation:

  1. Peel and wash the potatoes and onions. Put the potatoes to boil in a saucepan.
  2. Finely chop the onion.
  3. Pour oil into a frying pan, heat and pour the onion into it, fry it for about 1 minute over high heat, then put the minced meat and, stirring it, fry it over medium heat for 5 minutes. Add salt and pepper. Cover the pan with a lid, reduce the heat to a minimum and let the minced meat stew for another 15 minutes. Then turn it off and let it pause.
  4. At this time, the potatoes were already cooked. It will need to be ceilinged, after draining the water. We also cool a little and add 1 egg, flour and a pinch of salt. We knead well and proceed to the formation of zraz.
  5. In the palm of your hand, knead a ball of dough, put the minced meat filling, pinch the edges (this must be done very carefully so that our creations do not creep in the oven).
  6. We turn on the oven and heat it up to 180 °. While it is warming up, grease the baking sheet with oil, if there is parchment, we line it. We spread the zrazy, grease their top with egg yolk.
  7. We bake potato zrazy with minced meat in the oven for 20-25 minutes.

Such zrazy are good warm and cold, with and without sour cream.

Cooking tips:

  • If the dough is made from potatoes boiled in uniforms, it will hold together better.
  • To prevent the potato dough from sticking to your hands, you need to moisten them with water.
  • It is advisable to minimize the amount of flour in the dough, as its excess will make the grain rough.

Potato zrazy with meat has everything that a hospitable hostess can wish for: inexpensive ingredients, excellent taste and even juicy filling as a "highlight". In fact, these are the same potato cutlets, but with a rich inner content. They are a little more difficult to prepare, but it is worth trying. Especially if a saucepan with yesterday's mashed potatoes is idle in the refrigerator, which, as practice shows, no one will eat, but it's a pity to throw it away. To make a smooth and airy "dough" without potato lumps, use tubers with a high starch content. Such potatoes boil quickly and well. It makes a smooth, fluffy puree, not a viscous mass. The core of such potatoes is usually yellowish and friable. Wash the tubers well. Peel them. Cut into small pieces. Place in a saucepan. Pour in just enough clean, cold water to completely cover the potato slices. Put on fire. After boiling, reduce the heating intensity. Cook the potatoes until cooked through. This usually takes 30-40 minutes.

This time is just enough to prepare the minced meat filling and even rest a little. Peel a medium onion. Cut into small cubes. If you don't like onions, you don't need to put them. But it will make the filler more juicy and tasty.

Together with onions, you can put carrots on the meat. You will get a standard and tasty set. But I, as always, "distinguished myself" and forgot that I ran out of carrots. But champignons "were found". And I decided to put some mushrooms in the potato zrazy. It turned out delicious too. If you have carrots, cut them into strips or grate them on a coarse grater. If mushrooms, chop them into small cubes.

In well-heated oil, save the onion until transparent.

Add mushrooms to it. Fry over medium heat until all liquid has evaporated.

Then add the minced meat. As an avid meat-eater, I believe that there is no better filling for potato spikes - satisfying, tasty and simple. I had a combined mince - pork and beef in equal proportions. You can only take pork. But I do not advise putting minced meat from lean beef or chicken breast into the zrazy - it can turn out a little dry. Stir the contents of the pan. Fry until the meat is tender. When the minced meat becomes grayish, add salt and pepper. You can add one or two minced garlic cloves or a pinch of other spices to taste. Previously, you cannot salt, because the minced meat will take in lumps and become tough. Cool down the filling for the zraz.

When the potatoes are boiled, drain the water completely. Push it up.

Beat in an egg and add a lump of butter. Mash the potatoes into a smooth, uniform puree. If you have a blender with a special attachment, you can use that too.

Season the potato dough with salt and pepper.

Add a few tablespoons of sifted wheat flour. Stir. The potato mass should be moderately dense and not too sticky, so that you can carefully "pack" the minced meat inside.

When forming zraz, you can moisten your hands in cold clean water, then the potatoes will definitely not stick to your palms. Take a small amount of potato "dough". Make an oblong (or round) flat cake. Place some filling in the center. Cover the minced meat with a potato mass and blind with your hands a neat small patch.

Dip the blanks in flour or unsweetened crushed crackers so that a crust appears during frying.

Fry the zrazy until golden brown in sunflower oil. To prevent the tender potato mass from sticking to the bottom of the pan, heat the vegetable fat well before cooking. Fry the zrazy over low heat so that they bake well inside. And to get a delicious golden crust, do not cover the pan with a lid.

Serve the blush warm. Delicate mashed potatoes perfectly complement minced meat. And if you serve your favorite sauce (tomato, sour cream, yogurt-based) with the dish, it will be perfect.
