The chocolate cake that we are going to cook today does not contain eggs, sour cream or butter, all the ingredients are simple and understandable - but it turns out so tasty and tender that the cake can take its rightful place on the festive table after the end of the fast. In preparation, everything is simple: mix dry ingredients with liquid ones (you can do this immediately in the form that you will bake).

Who would have thought that such ordinary ingredients would make soft and airy pastries. In addition, the cake does not hit the pocket at all.

Lenten chocolate cake recipe:

dry ingredients

  • Wheat flour - 200 g (about 1.5 cups)
  • Sugar - 200 g (adjust the amount of sugar to taste, you can replace it with honey or maple syrup)
  • Cocoa powder - 4 tbsp. spoons
  • Baking powder - 1.5 tsp
  • Salt - 0.5 tsp
  • Baking soda - 1/4 teaspoon
  • thawed cherries - 3/4 cup

Liquid Ingredients

  • Odorless vegetable oil (corn or sunflower refined) - 0.5 cups
  • Juice from defrosted cherries - 0.5 cups
  • Lightly brewed coffee - 0.5 cup
  • Vinegar essence - 1 teaspoon
  • Vanilla extract - 1 teaspoon

Cooking

Defrost cherries. Remove the bones, if any.

Move the cherry to a sieve and let the excess juice drain (do not throw away the juice, we will need it in the recipe). If you put defrosted cherries in a glass, you should get 3/4 cup. If you want to increase the number of berries in the pie - this can be done, but you should not put more than one glass of cherries.

Sift the flour through a sieve, as well as cocoa powder and other dry ingredients, including sugar, salt, soda.

The preparation of any pastry should begin with sifting flour: this will save it from extra lumps, saturate it with oxygen, making the finished product lush and airy.

If you choose to use honey instead of sugar, add it along with the liquid ingredients.

Mix the sifted ingredients with a spatula for 30 seconds. This will help distribute the baking soda and baking powder evenly with the flour. Pour cherry juice (0.5 cups) into the dry mixture.

Add vegetable oil (0.5 cups). Vinegar - 1 teaspoon - also add to the dough. We send 0.5 cups of weakly brewed coffee to the dough. Thoroughly mix all dry ingredients with liquid ingredients until gluten forms (the dough for the chocolate pie should turn out to be viscous, homogeneous, without lumps. If you add vanilla extract, it's time to do it now (flavors are best revealed by combining with fats).

If the dough is lifted on a spatula, it will fall into pieces. Chocolate dough can be supplemented with pieces of nuts (hazelnuts, walnuts) or dried fruits (raisins, dried apricots, prunes, pre-soak in hot water, dry and chop). Such additives will enrich the taste and make it even more interesting (besides, eating dried fruits and nuts in fasting is very useful).

Cherries are added at the very end, before putting the dough for the chocolate pie into the mold.

The baking dish must be prepared in advance: grease with a piece of butter and sprinkle with flour.

I like to bake pies with a delicate structure in a split form and cover the bottom of the form with a piece of parchment paper.

Preheat the oven to 175 C in advance. Bake a lean pie in the oven for half an hour. If you like the “creamy” center, you can take the cake out of the oven earlier, after 20 minutes from the start of baking.

I bake a lean chocolate cake until a toothpick is dry: when you stick a wooden stick through the middle of the cake, it comes out dry and clean, without lumps of wet dough.

Wait for the cake to cool completely in the oven, and only then take it out. The structure of baking is tender and soft, be careful when cutting. Before removing the cake from the mold, run a sharp knife around the circumference of the mold, separating it from the walls. The cake can be sprinkled with powdered sugar, poured with syrup or chocolate icing, decorated with fresh berries.

The chocolate flavor of this pie goes well with creamy curd cream, which can be used to layer cakes and get a cake. But, of course, such a dessert is no longer for a lean table.

  • 5 g vanilla sugar;
  • 100 g of granulated sugar.

Important! The more cherries, the juicier the pies - I have known this folk wisdom since childhood. So if you still have a few berries left after weighing, feel free to add them to the pie. Just do not try to add a whole kilogram - in this case, it is better to increase the amount of other components of the pie accordingly.

Pour 200 ml of water into a saucepan, add 150 g of cherries, put on fire, bring to a boil, remove from heat, rub the berries through a sieve, add 60 g of sugar to the cherry syrup, put on fire again, bring to a boil and carefully pour semolina , cook over low heat for 15 minutes, stirring all the time. Cool the semolina mixture a little. Beat with a mixer for 10 minutes until the air mass, it will more than double and brighten. Soak agar in 50 ml of water for 5 minutes, put on fire, bring to a boil, boil for a couple of minutes and pour into cherry mousse, mix.

Thawed 100 g of cherries in advance (drain the juice) and add the crumb of the pie to the cherry mousse, mix gently. This must be done before the mousse has frozen, since mousses with agar harden very quickly.
