Heat vegetable oil in a frying pan and fry the mushrooms over medium heat for 8-10 minutes, stirring constantly.

Cut the chicken fillet into small cubes.

Lavash with smoked chicken and cucumber (video)

Bon Appetit!!!

Thin Armenian lavash can form the basis of a wide variety of dishes, including casseroles, hot and cold appetizers. Meeting unexpected guests, many housewives whip up lavash rolls. They are good because a wide variety of products are suitable for them, and almost always there is an opportunity to collect interesting filling from what is in the refrigerator. In addition, the fillings for pita bread are so diverse that you can choose an option for every taste and for every wallet.

Cooking features

When preparing the filling for pita rolls, you can show your imagination by creating your own recipe or modifying one of the long-known and popular ones. However, at the same time, you need to know a few subtleties in order for the dish to turn out delicious and beautiful.

  • As a filling for pita bread, you can use lightly salted or otherwise prepared fish, caviar, vegetables, mushrooms, meat and sausages. But if you do not want the dish to be dry, it will not hurt to add a base sauce to any filling. At the same time, it is important that the sauce is not too liquid, as this can cause the pita bread to get wet and tear. Therefore, the sauce is often replaced with soft cheese or cottage cheese.
  • A pita roll will be tastier if the layers of unleavened dough have time to soak a little with the sauce. For this reason, it is better to start rolls some time before the arrival of guests, about an hour. Please note that if the pita bread is soaked in the sauce for too long, then it can also get wet, so making pita rolls in a day or more is also undesirable.
  • So that, while it is soaked in the filling or cooled (sometimes rolls need to be cooled before serving), the pita bread does not dry out, the roll can be wrapped in foil or cling film. In addition, it will help to shape the rolls into the desired shape.

Lavash rolls can be made small, designed for one portion, or large, so that later you can cut them into small pieces (1–2 cm each), beautifully lay out on a platter and serve to the festive table. The first option is more suitable for a home feast, the second for a buffet table.

Crab stick filling

  • crab sticks - 0.2 kg;
  • chicken egg - 2 pcs.;
  • hard cheese - 150 g;
  • garlic - 2 cloves;
  • mayonnaise - 100 ml;
  • fresh herbs - 100 g.

Cooking method:

  • Crab sticks can be used chilled or frozen. If you opted for the latter option, surimi will need to be thawed at room temperature, so they must be removed from the refrigerator beforehand. It is not recommended to use the microwave to defrost crab sticks, as this may disrupt their structure and make them resemble rubber.
  • Cut the crab sticks into small, free-form pieces.
  • Boil eggs, cool, peel. Grate on a coarse grater.
  • Wash, dry with a napkin and finely chop fresh herbs with a knife.
  • Grind the cheese on a fine grater.
  • Use a hand press to crush the garlic.
  • Combine all ingredients by adding mayonnaise. Stir.

The filling is distributed over the entire surface of the pita bread, after which it must be rolled into a roll and wrapped in cling film. Before serving, the roll is taken out of the refrigerator, freed from the film and cut into pieces of one and a half centimeters. It remains to arrange the rolls on a plate, decorate with parsley sprigs.

Cottage cheese filling with pickled cucumber

  • cottage cheese - 0.2 kg;
  • garlic - 1 clove;
  • pickled cucumbers - 100 g;
  • mayonnaise - 50 ml;
  • fresh herbs - 50 g.

Cooking method:

  • Rub the cottage cheese through a sieve so that it acquires a delicate consistency.
  • Add mayonnaise and garlic passed through a press, beat with a blender.
  • Chop the washed and dried herbs finely.
  • Cut the pickled cucumbers into small pieces, after cutting off the ends. Drain the juice released from the cucumbers - it is not needed.
  • Put greens and chopped cucumbers in the curd sauce, mix well with a spoon.

After the lavash is spread with cream and rolled into a roll, it must be put in the refrigerator for at least an hour. It is better to cut the roll before serving to the table larger. Its fresh scent is unlikely to leave your guests indifferent.

Mushroom and cream cheese filling

  • processed cheese - 0.2 kg;
  • mayonnaise - 20 ml;
  • champignons - 0.2 kg;
  • onions - 100 g;
  • butter - how much will it take;
  • salt, pepper - to taste.

Cooking method:

  • Wash the mushrooms and dry immediately, blotting with a towel. Do not let them stay in water for a long time, otherwise they will swell too much.
  • Cut the mushrooms into small cubes.
  • Remove the husk from the onion. Chop the onion finely.
  • Melt a small piece of butter in a skillet. Add the onion and sauté it over low heat until translucent.
  • Add the mushrooms and fry them with onions until all the juice from the mushrooms has evaporated from the pan.
  • Season with pepper and salt to taste, stir and remove from heat.
  • Grind the processed cheese. It will be easier to do this if you put the cheese in the refrigerator for a short time.
  • Combine the cheese shavings with the mayonnaise.
  • Combine cheese with mushrooms, mix thoroughly.

Spread pita bread with cheese and mushroom paste, form a roll from it. After wrapping it in plastic, leave it for an hour to soak the dough with the sauce. Serve in 1-1.5 cm chunks.

Lightly salted salmon filling

  • cream cheese - 50 g;
  • slightly salted salmon - 0.3 kg;
  • lemon juice - 20 ml;
  • fresh dill to taste.

Cooking method:

  • Cut the salmon into thin slices. Be sure to make sure there are no bones in it. If necessary, remove all seeds - they should not get into the filling in any case.
  • Chop the dill finely.
  • The filling should be spread on pita bread in layers: first it is greased with cheese, sprinkled with dill, then the salmon is laid out, sprinkled with lemon juice.

Filling with Korean carrots and minced meat

  • tomatoes - 0.2 kg;
  • Korean carrots - 150 g;

  • Cut the tomatoes into thin slices.
  • Grease the pita with sour cream, put the minced meat on it.
  • Sprinkle with Korean carrots and spread the tomatoes on top.
  • Roll the pita bread, cut into large portions.

These rolls should be served immediately after they have been prepared. The amount of filling is enough for 2 pita bread. If desired, the rolls can be cut into narrower pieces and served at the buffet table.

Korean stuffing with cheese and carrots

  • Adyghe cheese - 0.2 kg;
  • Korean carrots - 0.2 kg;
  • fresh herbs - 100 g;
  • mayonnaise - how much will it take.

Cooking method:

  • Chop the herbs finely with a knife.
  • Crumble the cheese with your hands or grate.
  • Chop the carrots with a knife.
  • Mix the cheese, carrots and herbs, adding just as much mayonnaise as needed to combine the components into the total mass.

Spread the filling on the pita bread, make a roll. Serve the dish to the table no earlier than an hour later, otherwise the lavash will not have time to soak in the sauce. Cut the roll into thin pieces before serving.

Sausage filling

  • boiled sausage - 0.2 kg;
  • carrots - 100 g;
  • fresh cucumber - 100 g;
  • fresh herbs - 50 g;
  • mayonnaise - 100 ml.

Cooking method:

  • Wash the carrots, peel and grate finely.
  • Cut the cucumber into small cubes. Ideally, you need to clean it before that - then the filling will turn out to be more tender.
  • Cut the sausage into small cubes.
  • Mix the ingredients with chopped herbs and mayonnaise.

Next, a pita roll is prepared in the usual way, that is, the filling is distributed over the pita bread, it rolls into a roll and is cut into not too thin pieces. Instead of sausage, you can use boiled or smoked chicken breast, beef tongue or veal to prepare this dish. In this case, the taste, of course, will change, but not worsen.

Canned fish filling

  • tuna in its own juice (canned food) - 0.2–0.25 kg;
  • chicken egg - 3 pcs.;
  • hard cheese - 100 g;

  • Finely grate the cheese, mix with chopped canned food.
  • Boil the eggs and, after finely grating them, add to the rest of the ingredients, mix.
  • Add chopped greens to the filling and, if necessary, just a little mayonnaise.

Having smeared the pita bread with the resulting pate, roll it into a roll and remove it for at least half an hour in the cold. Serve cut into small pieces.

The rolls look very bright and appetizing, their spicy taste will not disappoint you either. If you like spicy dishes, you can sprinkle the filling with red pepper before rolling the pita bread into a roll.

Chicken liver filling
