  • For the preparation of shortbread cookies with kefir, it is advisable to use flour with a low concentration of gluten. This will produce a more tender cookie.

For any shortbread cookie recipe, stir in a small amount of starch into the flour to make your baked goods tender.

  • Shortbreads turn out good if you observe the following proportion (regardless of which recipe is used): the amount of butter (margarine), flour and sugar is equal.
  • When baking cookies in special tins that cannot be covered with paper, you must carefully cover the surface with melted butter and grind with flour or crushed breadcrumbs.
  • Some of the best cookie spice options are a teaspoon of milk and lemon zest, cinnamon and a glass of cognac (rum), lemon juice and vanilla sugar (in a 4: 1 ratio).
  • The finished cookies should be completely cooled and only then removed from the baking sheet, since they are too fragile when hot.
  • Shortbread cookies, rolls and other baked goods will last longer if placed in a closed tin container.
  • For the successful preparation of shortbread cookies on kefir, the temperature regime must be observed in the kitchen: the air temperature is at 18 degrees Celsius, and all the ingredients are chilled. If this condition is violated, the baking structure will be different.
  • Shortbread makes it possible to develop imagination and use almost any fillings: nuts, dried fruits, preserves, jams, chocolate, condensed milk and much more.
  • The friability of shortbread cookies on kefir provides a large amount of fat, so you should not save margarine or butter. These ingredients keep the flour from sticking together, giving the liver the texture it needs.

Shortbread recipes can be varied using a variety of fillings. But the dough always turns out to be tender, crumbly and airy, which delights children and adults.

Hello dear readers site

I decided to devote this Saturday morning to baking. I will do my baby today with photo(but as always). I like this recipe because there is absolutely no egg in it, and this is important for those who are allergic to it. And it turns out itself lush, soft and very tasty.

Irina Garodnya Kefir cookies

Grocery list

  • Kefir - 200 gr.
  • Sugar - 100 gr.
  • Vegetable oil - 1 tbsp. spoon
  • Flour - 300-400 gr.
  • Soda - 1 tsp

Cooking method:

I start to prepare the dough. I mix kefir and sugar in a bowl, beat them well together until the sugar dissolves

I add 1 tablespoon of vegetable oil

I quench the soda with vinegar and add to the dough

I begin to gradually add flour, first knead the dough with a spoon, and then with my hands, until the dough stops sticking to them.

I cover the dough with cellophane and put it in the refrigerator for 10-15 minutes. During this time, I prepare a baking sheet, sprinkle it with flour.

I take out the dough, roll it into a layer 0.5 cm thick and cut out cookies with molds. Of course, this process did not go without the active participation of the friend for whom these cookies are being prepared. You can see the playful little hands in the photo. We also use molds for children, it is very convenient and the child likes such funny cookies more.

I put the cut cookie blanks on a sheet, sprinkle each cookie on top with sugar. Such cookies are baked at a temperature of 180-200 degrees. I put the leaf with cookies in a warm oven, not yet heated to the required 180-200 degrees, thereby giving the dough time to stand warm and rise.

The cookies are baked for about 8 minutes, when it has risen, but has not yet browned, I take out a leaf and coat each cookie on top with milk, and again I return to the oven for 5-7 minutes until that time until it turns golden.

That's all, we take out the finished cookies, remove it from the sheet, let it cool. With us, it begins to disappear from the plate as soon as you can pick it up. This does not dry out for a long time and remains soft and tasty. Maybe because of what is eaten in one day? Somehow I hadn't thought about it before.

BON APPETIT

P.S. I have an electric oven, I turn on the mode where the “top and bottom” heats, the first time I put the leaf in the middle of the oven, the second time higher to the heating elements (so that the cookies brown faster). When I take out the cookies for the first time, they are still really raw, and the second time they need to be put 5-7, well, maybe 10 minutes (it all depends on the oven), but in no case for 30 minutes. If you keep it in the oven for so long, the cookie will become like a “brick”.

That's all for today, I'm going to cook another tasty treat, but I won't tell you what it will be. Today, probably, I will not have time to show it, but wait tomorrow. And today you can see how or

What could be better than homemade cookies?

Especially today, when almost all baked goods from the store contain dyes and other ingredients harmful to the body.
