Hello my dears! Today we have a recipe for an original curd casserole at the Culinary Academy of Clever Hostesses. How is it original, you ask? And what is usual, and this ... tadamm is salty😲. Despite the unusual combination, it turns out juicy, tender, tasty. Although why is it unusual 🤔 ? We eat curd cheeses with unsweetened fillings - with the same dill, pickled cucumbers, mushrooms - and nothing, we are not indignant. So I recommend trying the unsweetened cottage cheese casserole as a light, nutritious breakfast or dinner.

Today I will share a recipe for cooking broccoli casseroles with chicken meatballs. More often on our table, we are used to seeing dishes from ordinary white cabbage or cauliflower. Less commonly, we use bright green broccoli. But in fact, it is a storehouse of various vitamins and minerals. For example, there is the same amount of vitamin C in broccoli as in lemon; it has anti-cancer, anti-sclerotic, sedative effects. Ingredients:

for 2 servings:

broccoli cabbage - 250 g
small carrots - 1 pc.
small onion - 1 pc.
boiled chicken fillet (from thighs) - 60 g
wheat bread soaked (in milk or water) - 10 g
egg - 1 pc.
hard cheese - 30 g
sour cream - 2 tablespoons
salt - to taste

Cooking method:

  1. My broccoli and divide into inflorescences, peel the carrots and cut them lengthwise into 2 halves (to cook faster) and lower the vegetables into boiling water. Salt to taste. Cook for 10 minutes under a closed lid. During this time, the broccoli is already cooked, we take it out of the water, and the carrots, if they are still strong, let them cook until soft.
  2. Boil the chicken in advance, pass the meat through a meat grinder or grind it in a blender, add wheat bread, 1/2 egg, salt and mix. We make small meatballs from minced meat.
  3. Finely chop the onion and sauté in vegetable oil until golden brown.
  4. Grease the form with oil (I used 2 small clay molds) and lay out a layer of chopped broccoli, then the carrots in half rings, put the meatballs on top,
  5. on them sautéed onions and again broccoli with carrots.

  6. We make the fill. Mix the second half of the egg, sour cream, grated cheese and pour our dish on top. We put the form in an oven preheated to 180 degrees and bake for 30 minutes.

Ingredients:

  • 1-2 small potatoes;
  • 1 small carrot;
  • 100 g broccoli;
  • 200 g minced pork;
  • salt pepper.

Preparation:

Peel the potatoes and carrots. Cut the potatoes into small cubes, and the carrots into thin half rings. Pour water into a saucepan, add potatoes and carrots and send to the fire.

When the water boils, reduce the heat to a minimum, salt and boil potatoes and carrots for 10-15 minutes.

During this time, we will prepare the rest of the ingredients. Wash broccoli and disassemble into inflorescences.

From the minced meat (do not forget to salt and pepper it) we form meatballs - not very large - about 2 cm in diameter. I usually make meatballs with my hands, but you can also use a spoon. In the latter case, you will have to come to terms with the not quite perfectly round shape of the meatballs.

10-15 minutes after the water with potatoes and carrots boils, add meatballs and broccoli to the soup. Cook everything together for another 5-10 minutes. During this time, the potatoes, carrots and broccoli should be completely cooked. And the meatballs also do not take a lot of time - if you made them small, as I advised, they will cook very quickly.

That's all, a light soup with broccoli and meatballs is ready for us. I'm sure your kid will be very happy with such a dinner!

I usually use frozen broccoli - its season is not long at all, so in the summer I stock up: I put broccoli in small portions in the freezer. This is very convenient: I took out the right amount before cooking, thawed it - and you can cook a delicious and healthy soup.

I make minced meat for meatballs myself - somehow I don't trust shops in this regard. Moreover, it is not difficult at all if you use an electric meat grinder. I do not put onions in the minced meat - it seems to me that it is absolutely unnecessary for the meatballs. And I don't add an egg, unlike most housewives - without it, the meatballs turn out to be more tender (do not be afraid that they will disintegrate - nothing will happen to them, I assure you).

Very tasty meatballs are also obtained from chicken meat.

Meatball and broccoli soup is a great option for lunch or dinner, even if you're on a diet plan. For soup, you can use fresh or frozen cabbage, and you do not need to defrost it first. Minced meat for meatballs can be taken more fatty or fat-free (from chicken breast). Such a soup is also suitable for a children's table, although little fussy people are often wary of broccoli.

Ingredients

  • 200 g broccoli
  • 2 potatoes
  • 1 onion
  • 1 carrot
  • 1 tbsp. l. vegetable oil
  • 200 g minced chicken
  • 1/2 tsp salt
  • 3 pinches of spices
  • 2-3 sprigs of fresh herbs to serve

Preparation

1. Prepare all the food you need to make a delicious soup for lunch. You do not need to cook the broth in advance, since meatballs will already be present in the soup. Although, if desired, you can cook a vegetable broth based on onions, carrots and roots (parsley, parsnips, fennel and celery). Soup vegetables can be peeled and washed beforehand.

2. Cut the potatoes into small cubes. In a saucepan, bring the water to a boil and place the potatoes in it. After boiling again, reduce heat and simmer with the lid loosely closed.

3. Cut the onions into small cubes, also cut or grate the carrots.

4. Heat vegetable oil in a skillet and transfer vegetables to a hot surface. Fry over low heat, stirring occasionally, for 3-4 minutes. Then transfer the frying to a saucepan.

5. Wash the broccoli and divide into small inflorescences. Since it is a tender vegetable and cooks for 7-10 minutes, there is no need to put it in the pot beforehand.
