Earlier, we already considered in detail how to make it on our own, and today we will give preference to another version of this popular dish.

Let's introduce additional ingredients - quail eggs and cherry tomatoes, replace poultry meat with seafood and thus prepare a modern Caesar salad with shrimps. For the rest, we will adhere to the standard recipe - we will make the dressing the same as for the classic version of this legendary dish.

Ingredients per 2 servings:

  • raw shrimp - 10 pcs.;
  • lemon juice - 1 teaspoon;
  • liquid honey - ½ tbsp. spoons;
  • olive oil - 1 tbsp. a spoon;
  • salt, pepper - to taste;
  • Parmesan cheese - 30 g;
  • lettuce (romaine or other) - a small bunch;
  • cherry tomatoes - 5-6 pcs.;
  • quail eggs - 5-6 pcs.;
  • - taste.

For croutons (croutons):

  • long loaf or white bread - 3 slices;
  • garlic - 1-2 teeth;
  • olive oil - 2 tbsp. spoons.

Caesar salad with shrimp classic recipe

  1. Defrost the shrimp in advance, rinse, and then clean, leaving the tails if desired. We shift the prepared seafood into a deep bowl, sprinkle with salt and freshly ground pepper, pour over with lemon juice. Add liquid honey and one tablespoon of olive oil. Thoroughly mix the shrimp and leave in the marinade for half an hour.
  2. To prepare croutons in a separate bowl, mix two tablespoons of olive oil with garlic cloves, peeled and passed through a press. Let the garlic-oil mixture brew for 40-60 minutes. If desired, you can speed up the process by sending the mixture to the microwave for 20-40 seconds. When heated, the garlic will quickly give off its aroma to the oil and you do not have to wait a long time.
  3. Pour the garlic-scented oil onto the surface of a clean frying pan (the garlic itself must first be caught, otherwise it will burn). After removing the crusts, cut the bread into small cubes and fry in hot oil until golden brown. Sprinkle the finished hot croutons with salt.
  4. Lettuce leaves are washed, dried, torn with hands and distributed on plates. To enhance the taste, you can first rub the dishes with a clove of garlic cut into 2 halves. Lightly drizzle the leaves with Caesar salad dressing, the recipe for which is detailed.
  5. We spread the marinated shrimp on the hot surface of the pan (if the dishes have a non-stick coating, we do without oil). Fry for literally 2-3 minutes on each side (until the gray shade completely changes to pinkish).
  6. Put cooled croutons and warm shrimps on a layer of lettuce leaves.
  7. We supplement the salad with boiled quail eggs, cut in half lengthwise and bright cherry slices.
  8. Pour the dressing over the dish and sprinkle with small parmesan shavings.

Place frozen shrimp in a small bowl and set aside for a while to come to room temperature.

Immediately after that, we wash the seafood under running water and put it on a cutting board. With the help of a knife, we remove the head and clean it from the intestinal vein and shell. Then we blot the shrimp with kitchen paper towels and put it in a deep plate.

Rinse the lemon under running water and place on a cutting board. Using a knife, cut the citrus in half. Now, using a juicer, squeeze the juice out of the component. For cooking we need 2 teaspoons for the marinade and one for the sauce.

Pour a mixture of peppers into a bowl with shrimp, salt to taste, and also pour liquid honey, 2 teaspoons of freshly squeezed lemon juice and olive oil. Mix everything well with a tablespoon and leave to marinate for 20–30 minutes.

Place the garlic on a cutting board and lightly press down with the tip of a knife. Then, with clean hands, remove the husk. Cut the peeled cloves into pieces and transfer to a clean saucer.

Pour olive or vegetable oil into a deep bowl and pour chopped garlic. Mix everything well with a tablespoon and leave the dressing to infuse for 1-3 hours. Attention: the longer finely chopped cloves remain in the liquid component, the more aromatic the croutons will turn out.

Lay the slices of bread on a cutting board and use a knife to cut into small cubes. Then pour the crushed component into a clean deep plate and wait for the oil and garlic to infuse.

We wash the anchovy fillets well under running water, wipe them with kitchen paper towels and put them on a cutting board. Using a knife, finely chop the component into pieces and move it to a clean saucer. Attention: instead of anchovies, you can use sprats of spicy salting. In this case, it is necessary to clean the fish from the ridge with small bones and only then grind it with a sharp tool.

We spread the black peppercorns in a hand mortar and, using a pestle, crush the ingredient until a powder comes out of it. Attention: Such a seasoning, in comparison with ready-made ones, gives many dishes an unforgettable aroma and taste. But you need to add freshly ground pepper in a small amount, as it goes much sharper.

Attention: we use an egg only at room temperature, so we take it out of the refrigerator in advance and leave it aside. In the meantime, pour ordinary cold water into a small saucepan so that it fills the container halfway, and put it on a large fire. As soon as the liquid boils, add salt to it, mix everything well with improvised equipment and reduce the fire. Scoop the egg into a tablespoon and gently lower it into the boiling water. We cook the component for 2-3 minutes and then immediately turn off the burner. Holding the pan with kitchen gloves, pour boiling water into the sink, and instead pour ordinary cold water. Leave the egg in this position until it cools (it is better to do this as soon as possible).

Then, using a knife, we break the shell of the component in the middle and, using a tablespoon, we take out another liquid yolk with protein. Pour everything into a clean small bowl and immediately proceed to the preparation of the Caesar sauce.

In a bowl with liquid yolk and protein, add mustard and 1 teaspoon of freshly squeezed lemon juice. Using a blender, beat all the ingredients at high speed until a homogeneous mass is formed. Without ceasing to interfere, gradually begin to pour in the olive oil. The sauce should begin to thicken before your eyes, resembling mayonnaise in consistency.
Then add chopped anchovy fillets to it and again beat everything with a blender until smooth.

At the end, add a few drops of Wester sauce to the mixture, as well as freshly ground black pepper and salt to taste. Attention: we add the last ingredient a little bit, trying the sauce “on the tongue”. Otherwise, you can over-salt the salad dressing. We leave the finished Caesar sauce aside for a while, but for now we will continue to prepare the remaining ingredients for the salad.

We spread the lettuce leaves in a colander and rinse thoroughly under running water. Then we move the greens to a large bowl and fill it with ordinary cold liquid from the tap. Leaving the component for 1 hour stand aside. Thanks to this process, the greens will become fresher and crispier.

After the allotted time, drain the water, and blot the lettuce leaves with kitchen paper towels. Now we tear the greens with clean hands and put them in a salad bowl or a special deep container for serving.

Using a medium grater, grate the Parmesan cheese directly on the cutting board. Then pour the component into a clean saucer and leave it aside for a while.

When the shrimp are well marinated, remove them from the liquid mixture and wipe them with kitchen paper towels. Pour a small amount of olive oil into a frying pan and place over medium heat. When the contents of the container warm up well, add the shrimp here. Fry the seafood 2-3 minutes from each side. Important: the component is prepared very quickly, so we carefully monitor its color. As soon as the bottom side, which is closer to the fire, becomes matte and the transparency disappears, immediately turn the shrimp over with a wooden spatula to the other side.

At the end, turn off the burner, and transfer the seafood back to the bowl, which we rinse in advance under running water and wipe with paper towels.
Now turn on the oven and preheat it to the temperature 180 °С. Meanwhile, pour the olive oil in which the garlic was in a clean frying pan. Attention: we try to do this so that the last ingredient does not get into the container, otherwise we can ruin the taste of the salad. We put the pan on medium heat and, when it warms up well, add chopped bread here. Stirring constantly with a wooden spatula, fry the cubes until a soft golden color. Immediately after that, turn off the burner, and pour the croutons onto a baking sheet. Lightly salt them and sprinkle with Provence herbs. Attention: you can also sprinkle fried bread with the remaining garlic oil.
Now put the baking sheet in the oven on the middle level and slightly dry the component for 5–7 minutes. Then turn off the oven, and remove the container from there with the help of kitchen gloves and set aside.

At the end, add a little Caesar sauce to the salad bowl and, using a tablespoon, gently but thoroughly mix it with lettuce leaves. Then we spread the croutons here, sprinkle everything with grated Parmesan, and put the fried shrimp on top. Already before serving, pour the salad with Caesar sauce again and hurry to treat the household and friends until the croutons are filled with moisture.

When the Caesar salad with shrimp is on the dining table, using a tablespoon, gently mix it and arrange it on portioned plates. This dish can be enjoyed just like that without any side dishes. The only perfect addition to this dish will be a cheerful company and a glass of dry white wine.

3. Wash the lettuce leaves and tear them into pieces. Then lay on a towel to get rid of excess liquid.

Take a lemon and squeeze the juice out of it.

4. Grind the parmesan with a grater.


5. Separate egg yolks and whites. You can put the yolks in a water bath if you think they are not safe to eat raw.


6. Grind the garlic with pepper and salt, mix it with mustard, Worcestershire sauce and lemon juice. We grind everything together. Let's start whipping the yolks. Then gradually pour olive oil into the yolk mass, while not interrupting the whipping process.

7. Pour the prepared sauce into the lettuce leaves, mix thoroughly. Put the shrimp and croutons on top, season with the remaining sauce. Sprinkle the top with grated cheese. Halves of cherry tomatoes are suitable as a decoration.

Additional Information:

This salad is best prepared right before serving. This is due to the fact that after a certain period of time croutons tend to soak. They will not crunch, and the gourmet dish will lose its "zest". The ingredients and the sauce can be prepared well in advance of the arrival of the guests, just put them separately in the refrigerator. If the number of guests invited is small, then it is better to lay out the salad individually for each person in a separate bowl.
