To do this, seitan, cut into pieces, is fried in a pan in butter with the addition of spices: turmeric, coriander, bay leaf, pepper and soy sauce. First, spices are added to the oil. Followed by soy sauce and then "meat". You need to fry it for 5-7 minutes on all sides.

2. Fish

Vegetarian fish substitute is made from cheese, for example, Adyghe cheese.

Pour the swollen agar-agar into the broth and bring to a boil, stirring occasionally. Cool down. Stir the third part of the broth with chilled sour cream until smooth. Cut vegetables and place them on top of the hardened sour cream. After that, carefully pour the remaining broth on top and wait until the dish hardens.

4. Cheese lasagna

  • Ingredients: packing lasagna sheets, 50 grams of mozzarella, 300 grams of almette cheese, 300 grams of parmesan (or any hard cheese), 250 grams of cream cheese, cream (20% fat), nutmeg and salt.

Cook the lasagna sheets for 3 minutes. Then grease a baking dish with butter and spread the sliced ​​soft cheese on top of it. Next, lay out your ingredients in the following order: lasagna sheets, cream cheese, lasagna sheets, curd cheese and half mozzarella, lasagna sheets, cream cheese, lasagna sheets, mozzarella leftovers, and again lasagna sheets. Top it all with cream and sprinkle with nutmeg and parmesan.

Bake in foil for 30-40 minutes. Temperature - 180 degrees. Then you need to remove the foil and bake for another 10 minutes. And that's it - another delicious dish for your New Year's table is ready!

5. Vegetarian "herring" under a fur coat

This dish is simply classic for our holiday tables. What is included in its vegetarian version?

  • Ingredients: 800 grams of potatoes, beets and carrots, 350 grams of seaweed, 300 grams of Adyghe or processed cheese, 5 walnuts, 250 ml of sour cream and 400 ml of mayonnaise, salt and spices (coriander, nutmeg, cinnamon, black pepper and asafetida).

Cook vegetables in their uniforms. Then peel and grate. Also grate the cheese. And what will replace the herring, you ask? Seaweed, to be finely chopped. Add two tablespoons of sour cream to carrots and beets, and 3-4 tablespoons to potatoes. Then add spices to taste. And pour the crushed walnuts into the beets.

After that, lay out the layers "under the fur coat" in the following order: potatoes, seaweed, cheese, carrots, beets. Grease each layer with mayonnaise and repeat the entire set of layers one more time. The dish is ready!

6. Olivier salad

It is almost impossible to imagine a New Year's layer without Olivier. Actually, the vegetarian version of this salad is distinguished only by the absence of sausage.

  • Ingredients: 1 kilogram of potatoes, half a kilogram of carrots, a can of canned peas, 100-150 grams of cheese, a few cucumbers, a glass of mayonnaise and a glass of sour cream, turmeric, asafoetida, black pepper and salt, olives and seaweed.

Cook vegetables "in their skins", peel and cut into cubes. Chop up the rest of the ingredients. Mix everything and add mayonnaise and spices.

7. Baked potatoes

It is hardly worth talking about the place of potatoes on the New Year's table of Belarusians. But it is not necessary to limit yourself to stewed or boiled potatoes. Its baked version will be much tastier and healthier.

  • Ingredients: a kilogram of potatoes, 400 ml of sour cream, 400 grams of cheese, 50 ml of vegetable oil, salt and spices (turmeric, black pepper and coriander).

Cut the peeled potatoes into slices, mix sour cream with 1 teaspoon of turmeric. Put a third of the potatoes on a greased baking sheet and sprinkle with spices. Put a layer of cheese on top (also a third of the total) and pour over with sour cream and butter. Make two more of the same layers of potatoes, cheese and sour cream.

For 15 minutes, bake in the oven under the lid at a temperature of 250 degrees, then another 40 minutes at 200 degrees. Remove the lid 10 minutes before being ready. This will give a golden brown crust on top of the dish.

8. Shah-pilaf

This dish will stand out on your table and it's safe to say that guests will love it. Shah-pilaf is a traditional Azerbaijani dish that is served on the table only on major holidays.

  • Ingredients: half a kilogram of basmati rice, 150 grams each of raisins, dried apricots and cherry plums (or other sour dried fruit), 250 grams of walnuts, 3 carrots, a pack of butter and a package of thin lavash.

The most important nuance in the preparation of this dish concerns the type of rice. The main thing is that it is long-grain (Basmati is the best variety) and properly cooked. To begin with, rice is soaked for half an hour in cold water. Next, they are thoroughly washed. Cook rice in water with a ratio of 1 to 3 for 3-5 minutes. During cooking, add some salt to taste. As a result, the rice should have a uniform color, but remain slightly undercooked. It is laid out in a shallow colander and poured over with boiling water.

Fry chopped dried fruits in a pan using a third part of the oil. After a few minutes of frying, add 2 tablespoons of sugar and a little salt to the dried fruits. This will cover the fruit with a caramel-like layer of sugar.

Saute diced carrots in vegetable oil. Broken walnuts are also fried in a pan. Cut the lavash into 5-centimeter strips and melt the rest of the butter.

It is necessary to cook pilaf in a deep bowl. It is oiled from the inside and covered with strips of lavash in 2 layers so that they cover the entire surface of the dishes with an "overlap" and so that their ends hang down from the dishes. Next, rice is laid in a layer of 1 centimeter, followed by dried fruits and a layer of ghee. Then again rice, carrots, nuts and oil. Everything ends with the last layer of rice and wrapped with pita "tails", which are once again greased on top with oil.

Shah-pilaf is prepared in the oven at a temperature of 200 degrees for 20-30 minutes. The lavash should be covered with a golden crust.

9. Cake "Bird's milk"

We all know this cake since childhood, but few people cook it at home. But in vain, because the recipe is quite simple.

  • Ingredients: half a liter of heavy cream (33%), 400 grams of 25% sour cream, half a liter of milk, 450 grams of sugar, 4.5 teaspoons of agar-agar.

To prepare the glaze, you need to take separately 100 ml of water, 2 tablespoons of sugar, half a teaspoon of agar-agar, 3 teaspoons of cocoa.

Cream, sour cream, 400 grams of sugar and vanillin must be mixed and stirred with a mixer for 10 minutes until a thick homogeneous state. The container with the resulting mass must be placed in a plate or pan with hot water so that the mixture warms up well.

Next, grease the glass form with vegetable oil. Agar agar must be mixed with milk and the rest of the sugar (50 grams or 3 tablespoons). Bring the resulting mixture to a boil over low heat, stirring constantly. Agar-agar should dissolve, then turn off and let the mass stand for 3 minutes. Then beat the mixture of sour cream and cream with a mixer and in the process add a mixture of milk and agar-agar. We put everything in a glass form, level it and put it in the refrigerator.

Mix the glaze ingredients and bring to a boil. Then, after cooling to 50 degrees, pour them on top of the main mass of the cake and wait until the icing hardens. In an hour, the cake will be ready for slicing and eating.

10. Baklava

There are a huge number of variations of this dish, and each of them is good in its own way. Here is one of the recipes for making baklava at home.

  • Ingredients: a glass of milk, 50 ml sour cream, 60 grams of butter, a quarter spoon of baking soda and four glasses of flour, a little fried walnuts and half a liter of refined butter. For the syrup, you need a pound of sugar and 200 ml of water.

Pour melted butter into milk, add sour cream and soda and knead the dough, adding flour gradually so that it becomes thicker. Leave covered dough for 10 minutes. Divide it into small pieces or balls, which are then rolled out in turn as thin as possible on the table, allowing the resulting sheets to dry on each side for 5-10 minutes. Lay the sheets one by one, roll into a roll and cut at an angle of 45 degrees. The edges of the dough should not stick together.

We take our "boats" out of the water and fill them with ready-made filling, after which we send them to the oven preheated to 200 ° C for 20 minutes, after which we take out the baking sheet, sprinkle the "boats" with mushrooms abundantly with grated cheese and send them to bake 15 more min.

For a feast with a small number of guests, you can get by with the preparation of a pie. Recipes for shortcrust pastry pies, in contrast to yeast dough, allow you to achieve a pleasant taste against the background of the overall lightness of the dish.

  • Italian pie

Ingredients: we need 1 quail egg, 400 g spinach, 350 g ricotta, 4 tbsp. l. grated parmesan, 1 large onion, 5 tbsp. l. olive oil, 7 chicken eggs, 4 sprigs of parsley, also buy a pound of ready-made shortcrust pastry in the store.

Cooking. Prepare the herbs: rinse, remove the bases of the legs, pat dry with a paper towel, chop finely. Finely chop the onion. Prepare a baking dish, grease it with oil, roll out the dough to its size and place on the bottom so that the pie is rimmed all the way to the top of the baking dish. To prepare the filling, fry the onion in olive oil, add the spinach and simmer until the leaves soften, then remove the mixture from the stove to cool. Combine all the filling ingredients except the eggs. Add 3 eggs to the mixture, mix well in a blender. Then put the filling on the bottom of the pie, carefully make 4 depressions in it, pour 1 raw egg into the dimples so as not to damage the yolk. Roll out 1 more layer of dough, cut it to the shape of a baking sheet, cover the filling, wrap the sides inward, placing the edges on the top layer of dough, pinch the edges. Grease the pie with a beaten quail egg and send to the oven preheated to 190C for 45 minutes. After cooking, let it cool completely before removing it from the mold.
